本发明属于人类生活需要食品烹饪类,涉及一种田螺的烹饪方法。
背景技术
田螺含蛋白质、脂肪、碳水化合物、钙、磷、铁、硫胺素、核黄素、尼克酸、维生素A;具有利水消肿作用。两广人特喜爱吃。星级饭店甚至四星级饭店田螺都煮无味,因为他们不活田螺,更懒得剪掉田螺笃,或不炒掉田螺厣,不入味,有泥腥味,当然不好吃。一般饭店及大排档煮田螺,也不活田螺,或不炒掉田螺厣,有泥腥味,又不放瓜蒌叶、紫苏叶,缺少特有香味,故不好吃。
发明内容
为了克服星级饭店甚至四星级饭店田螺都煮无味,因为他们不活田螺,更懒得剪掉田螺笃,或不炒掉田螺厣,不入味,有泥腥味,当然不好吃;一般饭店及大排档煮田螺,也不活田螺,或不炒掉田螺厣,又不放瓜蒌叶、紫苏叶,缺少特有植物香味,不入味,有泥腥味,故不好吃缺点;本发明提供多一种田螺的烹饪方法、且具有特色植物香滚和田螺香鲜味的烹饪方法。
本发明采取的技术方案是:
1、活螺,把市场买回或捡回的田螺放在桶里用净水活养两天,放一把铁刀或其它铁器入桶水中,促田螺吐出污泥物,每天换水并清洗田螺3-5次。
2、剪螺笃,剪掉或砍掉或敲掉田螺笃,清洗干净,利于烹饪入味。
3、配料,设定一公斤田螺需:6-1O片瓜蒌叶、10-13张紫苏叶、姜30克、蒜头3-4瓣、香葱头2个、辣椒(吃得辣的用)2-3个,以上六料切碎,米双酒30克,鸡脚、鸭脚各2-3个,盐、油适量
4、炒螺脱厣,把田螺放进锅,加盐,中火炒至田螺脱厣,利于烹饪入味。
5、烹煮田螺,加油、姜、蒜头、香葱头、辣椒(吃得辣才放)、酒、鸡爪、鸭爪进脱厣后田螺大火爆炒30秒,加水过田螺面,再放瓜蒌叶、紫苏叶捞匀,盖上锅盖,急火煮沸,用文火(维持沸状态)煮25-30分钟,至剩下四分之一至五分之一水时,田螺特色香味四漂,极品田螺烹饪成,若孙悟空再世,肯定不偷仙桃,而抢田螺嘬。
6、先嘬后吸,田螺吃法,趁热嘬田螺笃,一股香液进嘴,美味无比,再稍用力吸田螺口,鲜、嫩、脆的田螺肉滚和特色植物香味进嘴,让你一世回味不忘。

1.一种田螺的烹饪方法,是由活螺,剪螺笃,配料,炒螺脱厣,烹煮田螺,先嘬后吸组成。
2.根据权利要求1所述一种田螺的烹饪方法,其特征是所述活螺,把市场买回或捡回的田螺放在桶里用净水活养两天,放一把铁刀或其它铁器入水中,促田螺吐出污泥物,每天换水并清洗田螺3-5次。
3.根据权利要求1所述一种田螺的烹饪方法,其特征是所述剪螺笃,剪掉或砍掉或敲掉田螺笃,清洗干净,利于烹饪入味。
4.根据权利要求1所述一种田螺的烹饪方法,其特征是所述配料,设定一公斤田螺需:6-1O片瓜蒌叶、10-13张紫苏叶、姜30克、蒜头3-4瓣、香葱头2个、辣椒(吃得辣的用)2-3个,以上六料切碎,米双酒30克,鸡爪、鸭爪各2-3个,盐、油适量。
