本发明属于一种风味食品的制作方法,特别涉及一种一种五香口味的茄子罐头生产工艺。
背景技术
    随着社会发展与物质文明的提高,人们对食品的品种与质量要求也越来越高,特别是工作与生活节奏的加快,人们对方便食品的要求也越来越高,.方便食品已经成为人们生活中的必需品,方便面,方便大米粥,方便米饭等各类方便主食均已诞生,它对人们快节奏的生活和旅游需要起了相当大的作用。但目前做为快捷主食已经有多样,而做为风味化的方便菜肴目前尚不多见。常见的蛋、肉等罐头几乎千篇一律的口味,使入已觉厌烦,而做为蔬菜类方便食品几乎千篇一律地清水蒸煮,毫无引入入胜之处,所以,开发方便食品、特别是方便菜肴罐头乃是百姓餐桌上的要求。茄子,作为最常见百姓喜爱的蔬菜,目前还没有开发成风味方便罐头菜肴实现即开即食,这实在是市场上的一大缺憾。
发明内容
    本发明的目的在于提供一种五香口味的茄子罐头生产工艺,使其成为罐头类的方便菜肴,以独特的五香、清爽、味感醇厚而成为人们佐餐的一个新品种。
    本发明所说的五香茄子罐头,具体可以采取以下步骤制作:
1、  选取新鲜的茄子,旋去茄梗,洗净;
2、  将洗净的茄子连刀法切成片状,保持茄形不能散离成单片;
3、  放入油中炸透;
4、  加酱油浸透烹调;
5、  装瓶、密封、消毒后制成罐头成品。
    下面根据每道工序的操作方式和加工注意事项进一步说明本发明设计的五香茄子的加工方法是如何实现的。

    图l是采用直切平行连刀法切的茄子示意图;
    图2是采用斜刀片刀法切的茄子示意图;
    图3是采用旋切刀法切的茄子;
    图4是采取成90°转角上下各半直刀平行刀法切的茄子。
    所切开的茄子成分散片状,薄厚均匀,但由于采取连刀切法,所以茄子的外形整体不散架,直至油炸后仍保持基本茄形,茄片的厚度基本上掌握在1—3毫米之间。
具体实施方式
    将切成片状的茄子整个按入油中炸透,所使用的油事先可加入花椒、大料、生姜,炸焦后捞出残渣,苒将茄子按进,使油浸透每片茄子后炸透。
    酱油浸渍烹制这到工序中,酱油可选取“生抽”类上好酱油,可以采取冷浸淹制,也可以直接蒸煮烹制,将酱油的味道浸透油炸茄子即可。酱油可事先加入葱姜蒜煮15-20分钟后再捞出,也可和茄子一起炖、蒸,然后去除葱姜蒜。
    为形成不同口味的五香茄子,在采用酱油烹调前或后均可以分别加入辣椒、鸡汁、虾酱等调味品,从而制成辣味五香茄子、鸡汁五香茄子、虾味茄子等不同风味的五香茄子罐头。
    在加工中也可以将酱油浸渍和密封后高温消毒合成一道工序完成,也可以烹调后再装瓶密封、消毒,也可以冷浸渍酱油后采取冷消毒工序,例如钴60消毒,这样可以保持冷渍加工的特殊风味。利用以上提供的方法所制作的五香茄子关头,鲜香可口,清爽宜人,具有独特的中国菜风格,制作工艺简单,价格便宜,深受人们欢迎。

1.五香茄子罐头的制作方法,其特征在于采取以下步骤制作:
1)选取新鲜的茄子,旋去茄梗,洗净;
2)将洗净的茄子连刀法切成片状,保持茄形不能散离成单片;
3)放入油中炸透;
4)加酱油浸透烹调;
5)装瓶、密封、消毒后制成罐头成品。
