随着现代社会的越来越工业化,环境也变得越来越差,空气污染无处不在,加上现代人过度吸烟、饮酒等诱发因素的刺激,季节气候的转变,往往导致人们会经常出现咽部发痒、喉咙痛、咽喉发炎、多痰咳嗽、声音嘶哑和容易感冒等症状,因此具有润肺止咳保健功效的保健食品正成为家庭日常保健必备的选择。
布丁是深受广大家庭和消费者喜爱的一种乳制品甜点,传统的布丁是采用新鲜鸡蛋和牛奶为原料制成,是一种半凝固状的冷冻的甜品,其口感清爽细腻有弹性,有浓郁的奶香味。布丁具有营养价值高、风味独特、口感顺滑和形态饱满等特点,逐渐成为一种高档的乳制品之一。目前市场上的布丁产品主要以传统牛奶布丁和水果布丁为主,该类布丁存在着无特殊保健功能、添加糖份高、添加有水果香精和色素等不利于人体健康的元素,且目前市场上还未出现具有润肺止咳保健功效的布丁,不能满足不同市场和人群的需求。

为了弥补现有技术的缺陷,本发明提供一种具有润肺止咳保健功效的布丁及其制备方法,具有糖份低、无添加香精色素、食用方便和保健功效明确等特点,适合广大的家庭和消费者做为日常保健品食用,填补了市场上该类产品的空白,能满足不同市场和人群的需求。
本发明的技术方案如下;
本发明的润肺止咳布丁,包括以下原料和重量份数:芒果叶5-10份,量天尺花8-15份,龙珠果3-7份,水牛奶100-150份,增稠剂2-8份,木糖醇15-40份。
以上所述的增稠剂为果胶、瓜尔胶、卡拉胶、明胶、海藻脂、角叉胶、糊精、羧甲基纤维素钠、藻酸丙二醇酯、瓜尔豆胶和刺槐豆胶的一种或几种的组合。
以上所述的润肺止咳布丁的原料中还包括2-5份的果蔬颗粒。
以上所述的的芒果叶,芒果,拉丁名:Mangifera indica L.为漆树科属,热带常绿大乔木,芒果分布很广,世界上有七十多个国家生产芒果,我国的台湾、广东、广西、海南、福建和云南都有芒果种植,资源非常丰富,芒果植物的果实、果核、树皮及及树叶都可供药用且都具有独特的药理活性,现代药理学研究表明,芒果叶提取物具有平喘、止咳、祛痰、抗炎、镇痛、抗菌、抗病毒、抗肿瘤和降血糖等作用。临床应用表明,芒果叶提取物对呼吸道炎症及感冒咳嗽有良好的疗效。芒果叶的化学成分前人已有报道,1982年陆仲毅等报道芒果叶中含芒果苷、高芒果苷、异芒果苷、槲皮素等八个酚类化合物。芒果叶性味:性平、味微酸,用清水煎服,具有消积滞、疏风止咳的功效。
以上所述的量天尺花,别名:霸王花、剑花、韦陀花、天尺花、龙骨花、七星剑花,拉丁名:Hylerereus undatus(Haw.)Rose。属仙人掌科。多年生攀援植物,为外来种,原产墨西哥至已西诸国,在中国广东、海南、广西等地区可栽培于庭园或村落附近,常攀援于树干、废墙或岩石上;其他地区多栽培于温室。其茎常作各种仙人球的嫁接砧木,花瓣纯白色,直立;雄蕊多数,乳白色,与花柱等长或较短;花柱粗壮,柱头裂片乳白色。浆果长圆形,长约10cm,红色,肉质,具鳞片,熟时近平滑。种子小,黑色。花期5-8月,果期8-10月。量天尺花的营养价值很高,通过对仙人掌类可食植物剑花的部分营养成分进行分析,结果表明,每100 g剑花的干制品营养成分的含量:水分9.570 g,蛋白质1.812 g,粗纤维2.785 g,灰分1.547 g,钙961.27 mg,磷328.45 mg。特别是经过测试分析表明剑花至少含有13种氨基酸,其中苏氨酸、亮氨酸、异亮氨酸、苯丙酸和赖氨酸为人体必需的氨基酸。此外,还含有对人体具有重要作用的Cu、N、Cr、Cd、Ca、Zn等元素。因此,量天尺花具有较高的食用价值。量天尺花:气微,味稍甜,以朵大、色鲜明、味甜者为佳,归经:肺经,性味:甘,性微寒,经中医记载具有:清热润肺,止咳化痰,肺热咳嗽,肺痨,解毒消肿等功效,用法:内服:煎汤。在广东和广西两地多数家庭和酒店日常生活中经常使用量天尺花用于烹饪制作老火靓汤,具有清心润肺、清暑解热、除痰止咳的作用。其次,量天尺花煲汤对辅助治疗脑动脉硬化、心血管疾病、肺结核、支气管炎、颈淋巴结核、腮腺炎等有明显疗效以及滋补养颜的功能。而且,量天尺花制汤后,其味清香、汤甜滑,深为“煲汤一族”的广东人所喜爱,是极佳的清补汤料。
以上所述的龙珠果,又名龙吞珠、龙须果、风雨花、神仙果、番瓜子、山木、大种毛葫芦等,拉丁名:Passiflora foetida Linn.,属西番莲属,多年生草质藤本。我国分布于云南、广西、广东、海南、香港、台湾和福建等地,其味甘;酸;性平,具有清热解毒;清肺止咳等功效,功能主治:肺热咳嗽;小便混浊;痈疮肿毒;外伤性眼角膜炎;淋巴结炎等症状。
以上所述的水牛奶,是由水牛产出的奶,水牛奶是地方特色产品,在中国,只有广东、江西、广西等五个省份有水牛,广西是中国目前最大的水牛奶产量地区,水牛奶营养价值高,其干物质含量高达18.4%,比普通黑白花牛高近50%;乳脂率含量为7.9%,而普通牛奶一般是3%-3.5%,水牛奶中所含蛋白质、氨基酸,乳脂、维生素、微量元素等均高于黑白花牛奶,据国家有关科研部门测定,水牛奶质十分优良,可称得上是奶中极品,其价值相当于黑白花牛奶的二倍,最适宜儿童生长发育和抗衰老的锌、铁、钙含量特别高,氨基酸、维生素含量非常丰富,是老幼皆宜的营养食品,据专家研究,水牛奶的干物质含量是18.9%,分别比黑白花牛奶及人乳高19%和27%;蛋白质和脂肪含量分别是黑白花牛奶和人乳的1.5倍到3倍,水牛奶乳化特性好,100kg的水牛奶可生产25kg奶酪,而相同量的黑白花牛奶只能生产12.5kg奶酪,此外,水牛奶矿物质含量和维生素含量也都优于黑白花奶牛和人乳,铁和维生素A的含量分别是黑白花牛奶的约80倍和40倍,并被认为是最好的补钙、补磷食品之一,水牛奶乳汁香醇浓厚,无膻味,直接饮用香浓可口,水牛奶的胆固醇低,维生素、微量元素丰富,尤其是酪蛋白含量高,能进行高质量乳制品的深加工,作为商业上极有价值的成分,水牛奶的脂肪、蛋白质、乳糖的含量是黑白花牛奶的数倍,矿物质和维生素含量也是黑白花牛奶和人乳的数十倍,水牛奶除了普通牛奶所含的营养物质之外还含有许多功能物质,例如酪蛋白磷酸肽,可防止人体内磷酸钙结晶的形成或不溶性磷酸钙沉淀的生成,并促进肠绒膜对钙、铁、硒等矿物质的吸收,类吗啡活性肽具有镇痛、调节人体情绪、呼吸、脉搏、体温、消化系统及内分泌等功能,抗高血压肽和抗血栓肽可抑制血管紧张素的产生,对血压进行调节,起到抗高血压的作用,免疫调节肽可以预防和治疗肠道微生物的干扰,近年研究出在抗衰老、抗过敏和抗炎症方面也有显著疗效,水牛奶是一种营养丰富、全面,消化吸收率高的一种优质奶,因此水牛奶被认为是世界上最具竞争力的乳产品之一,目前,世界上水牛奶系列产品的开发主要定位于高附加值的奶制品,如奶酪等,同时也被开发成市场容量大、高质量的灭菌乳、酸乳等纯乳产品或含乳饮料作为一类高级营养食品,水牛奶制品日渐成人们消费的“新宠”。
以上所述的木糖醇,又名戊五醇,原产于芬兰,是从白桦树、橡树、玉米芯、甘蔗渣等植物中提取出来的一种天然植物甜味剂。其常温下甜度与蔗糖相当,低温下甜度达到蔗糖的1.2倍,与蔗糖相比,具有热量低的优势,因而被应用于各种减肥食品中作为高热量白糖的代用品,同时能为人体提供能量,合成糖元,减少脂肪和肝组织中的蛋白质消耗,使肝脏受到保护和修复,减少人体内有害酮体的产生,不会因食用而为发胖忧虑。木糖醇在体内新陈代谢不需要胰岛素参与,使血糖值不升高,可消除糖尿病人三多(多饮、多尿、多食),因此是糖尿病人安全的甜味剂、营养补充剂和辅助治疗剂,同时木糖醇能促进肝糖元合成,服用后血糖不会上升,对肝病患者有改善肝功能和抗脂肪肝的作用,治疗乙型迁延性肝炎,乙型慢性肝炎及肝硬化有明显疗效,是肝炎并发症病人的理想辅助药物。经现代科学研究证明,木糖醇具有甜味剂、减肥、防龋齿和改善肝功能的功效。
本发明的润肺止咳布丁,其具体制备过程如下:
1)将芒果叶、量天尺花和龙珠果用清水清洗干净,加入其重量5-8倍的水煎煮3-5次,每次50-120分钟,合并煎煮液,经200-300目滤网过滤,得到滤液,备用;
2)将步骤1)所得的滤液放入浓缩设备进行浓缩处理,得到浓缩液,备用;
3)将增稠剂放入其重量2-5倍的水中进行溶解,得到增稠剂溶液,备用;
4)将以上所得的浓缩液、增稠剂溶液加入水牛奶和木糖醇放入搅拌机中混合搅拌均匀,得到料液,备用;
5)将以上所得的料液放入均质机中均质,得到物料,备用;
6)将蔬果颗粒加入物料中混合均匀,得到混合物料,备用;
7)将混合物料进行90-120℃高温灭菌15秒-5分钟,冷却后灌装,再对灌装物进行巴氏杀菌,得到产品。
本发明突出的实质性特点和显著的进步是:
1.保健效果好。本发明采用提取芒果叶、量天尺花和龙珠果等天然中草药植物成分组合制成,无毒副作用,适合各类人群日常预防保健食用,有良好的预防和保健效果,并且具有清热解毒、消肿止痛、清咽润肺、止咳化痰、清肠通便等功效。
2.功效多样。本发明含有芒果叶、量天尺花、龙珠果、水牛奶和木糖醇等天然动植物的有效成份,除了具有生津止渴、清热解毒、祛痰止咳、清咽润肺的功效,还具有滋补养颜、润肠通便、补脾益气、预防感冒、调节机体免疫功能和抗心律失常等预防保健效果,不只局限于祛痰止咳、清咽润肺的功效,从而更适合日常家庭生活作为预防保健品食用,进一步满足市场对于此类产品的需求。
3.安全可靠。本发明是采用天然植物原料经现代工艺提取制成,为原生态纯天然植物组方,其中有药食同源植物,配伍简单,原材料易得,含有多种人体所需的维生素、微量元素、蛋白质、氨基酸和纤维素等有效成份,效果明确,对人体有益。
4.口感好。本发明采用木糖醇替代了传统的白砂糖做为甜味剂,且含有果蔬颗粒,带有天然果蔬植物特有的清甜口味,能调和中草药带有的苦涩口感,达到色泽好、口味好、保健佳的效果。

具体实施方式
实施例1:
本发明的润肺止咳布丁,包括以下原料和重量份数:芒果叶5份,量天尺花8份,龙珠果3份,水牛奶100份,明胶3份,木糖醇15份,芒果果粒3份。
其具体制备过程如下:
1)将芒果叶、量天尺花和龙珠果用清水清洗干净,加入其重量5倍的水煎煮3次,每次60分钟,合并煎煮液,经200目滤网过滤,得到滤液,备用;
2)将步骤1)所得的滤液放入浓缩设备进行浓缩处理,得到浓缩液,备用;
3)将明胶放入其重量2倍的水中进行溶解,得到明胶溶液,备用;
4)将以上所得的浓缩液、明胶溶液加入水牛奶和木糖醇放入搅拌机中混合搅拌均匀,得到料液,备用;
5)将以上所得的料液放入均质机中均质,得到物料,备用;
6)将芒果果粒加入物料中混合均匀,得到混合物料,备用;
7)将混合物料进行100℃高温灭菌30秒,冷却后灌装,再对灌装物进行巴氏杀菌,得到产品。
实施例2:
本发明的润肺止咳布丁,包括以下原料和重量份数:芒果叶7份,量天尺花10份,龙珠果4份,水牛奶120份,卡拉胶4份,木糖醇20份,葡萄果粒4份。
其具体制备过程如下:
1)将芒果叶、量天尺花和龙珠果用清水清洗干净,加入其重量6倍的水煎煮4次,每次90分钟,合并煎煮液,经250目滤网过滤,得到滤液,备用;
2)将步骤1)所得的滤液放入浓缩设备进行浓缩处理,得到浓缩液,备用;
3)将卡拉胶放入其重量3倍的水中进行溶解,得到卡拉胶溶液,备用;
4)将以上所得的浓缩液、卡拉胶溶液加入水牛奶和木糖醇放入搅拌机中混合搅拌均匀,得到料液,备用;
5)将以上所得的料液放入均质机中均质,得到物料,备用;
6)将葡萄果粒加入物料中混合均匀,得到混合物料,备用;
7)将混合物料进行110℃高温灭菌2分钟,冷却后灌装,再对灌装物进行巴氏杀菌,得到产品。
实施例3:
本发明的润肺止咳布丁,包括以下原料和重量份数:芒果叶9份,量天尺花13份,龙珠果5份,水牛奶150份,果胶6份,木糖醇25份,桑葚果粒5份。
其具体制备过程如下:
1)将芒果叶、量天尺花和龙珠果用清水清洗干净,加入其重量7倍的水煎煮5次,每次120分钟,合并煎煮液,经300目滤网过滤,得到滤液,备用;
2)将步骤1)所得的滤液放入浓缩设备进行浓缩处理,得到浓缩液,备用;
3)将果胶放入其重量4倍的水中进行溶解,得到果胶溶液,备用;
4)将以上所得的浓缩液、果胶溶液加入水牛奶和木糖醇放入搅拌机中混合搅拌均匀,得到料液,备用;
5)将以上所得的料液放入均质机中均质,得到物料,备用;
6)将桑葚颗粒加入物料中混合均匀,得到混合物料,备用;
7)将混合物料进行120℃高温灭菌3分钟,冷却后灌装,再对灌装物进行巴氏杀菌,得到产品。
Claims (5)
1.一种润肺止咳布丁,其特征在于,包括以下原料:芒果叶、量天尺花、龙珠果、水牛奶、增稠剂和木糖醇。
2.根据权利要求1所述的润肺止咳布丁,其特征在于,所述的芒果叶、量天尺花、龙珠果、牛奶、增稠剂和木糖醇的重量份数为:芒果叶5-10份,量天尺花8-15份,龙珠果3-7份,水牛奶100-150份,增稠剂2-8份,木糖醇15-40份。
3.根据权利要求1或2所述的润肺止咳布丁,其特征在于,所述的增稠剂为果胶、瓜尔胶、卡拉胶、明胶、海藻脂、角叉胶、糊精、羧甲基纤维素钠、藻酸丙二醇酯、瓜尔豆胶和刺槐豆胶的一种或几种的组合。
4.根据权利要求1或2所述的润肺止咳布丁,其特征在于,所述的润肺止咳布丁的原料中还包括2-5份的果蔬颗粒。
5.根据权利要求1所述的润肺止咳布丁及其制备方法,其特征在于,具体制备方法如下:
1)将芒果叶、量天尺花和龙珠果用清水清洗干净,加入其重量5-8倍的水煎煮3-5次,每次50-120分钟,合并煎煮液,经200-300目滤网过滤,得到滤液,备用;
2)将步骤1)所得的滤液放入浓缩设备进行浓缩处理,得到浓缩液,备用;
3)将增稠剂放入其重量2-5倍的水中进行溶解,得到增稠剂溶液,备用;
4)将以上所得的浓缩液、增稠剂溶液加入水牛奶和木糖醇放入搅拌机中混合搅拌均匀,得到料液,备用;
5)将以上所得的料液放入均质机中均质,得到物料,备用;
6)将蔬果颗粒加入物料中混合均匀,得到混合物料,备用;
7)将混合物料进行90-120℃高温灭菌15秒-5分钟,冷却后灌装,再对灌装物进行巴氏杀菌,得到产品。
