本发明属于农产品生产和加工领域,具体涉及一种虫草菌酵素产品及其生产方法。
背景技术
酵素含有多种天然维生素、矿物质和微量元素等。酵素进入人体后,能迅速被人体吸收和利用,增进人体免疫功能及活化细胞,既能增加体质,又能预防各种疾病发生。酵素在体内不积存,可长期服用。属于营养补充品,人体内酵素存量愈多则免疫力愈强,身体自然就愈健康。有许多先天代谢疾病就是因为酵素缺乏所引起的。而酵素在疾病上的反应,就是新陈代谢的速率,如发烧、急性发炎疾病、肺炎、盲肠炎、肺结核等患者的尿液及粪便中的淀粉值会升高;当发烧时体温升高,酵素的消耗愈多,酵素的工作量愈加重。酵素愈缺乏,人就愈易老化;反之酵素贮存愈多,人就愈健康。
开发酵素食品,有利于人体的健康,具有很好的发展前景。目前报道的酵素产品很多,有水果酵素,活菌酵素,天然食品酵素的饮料,食用菌活菌酵素和纳豆菌酵素等等。
辣木树是近年来在欧美新兴的一种保健植物(食品),号称高钙、高蛋白质、高纤维、低脂质,并且具有增强体力、治疗贫血、抑制病菌、驱除寄生虫等功效。辣木树嫩技条可做凉拌菜,技条熬肉汤,味追鲜美。小米的营养价值很高,含蛋白质9.2%-14.7%,脂肪3.0%-4.6%及丰富的维生素B1、胡罗素,淀粉含量高(约70%),是一种能量食物。小米熬粥营养价值丰富,有“代参汤”之美称。谷粉由稻谷粉碎而成,含碳水化合物、蛋白质、脂肪、纤维素、矿物质和维生素。虫草是著名的滋补强壮药,调节免疫系统功能,直接抗肿瘤作用,提高细胞能量、抗疲劳,调节心脏、肝脏、呼吸系统、肾脏、造血、血脂等功能。本发明的创新点在于开发利用保健植物辣木树和营养丰富的五谷小米、稻谷为原料,培育虫草菌丝体制成酵素产品,营养丰富,食用方便,有益身体健康。产品具有实用性和产业上利用性,目前未见市面上有相同产品的出现和报道。
发明内容
本发明的目的在于提供一种虫草菌酵素产品及其生产方法。
为实现上述目的,本发明采用的技术方案如下:
本发明首先提供了一种虫草菌酵素产品的生产方法,包括以下步骤:
1)利用辣木树木屑粉、小米、水稻谷粉为主要原料,添加葡萄糖和蛋白胨作为虫草菌培养基质,培养虫草菌丝体;
2)将产生的虫草菌丝体连同基质捣碎,与冰糖、蜂蜜、曲霉菌液、柠檬混合,装瓶密封,酿造产生虫草菌酵素原液;或者将虫草菌酵素原液和糊精混合,风干,进一步制成酵素含片。
步骤(1)所述虫草菌培养基质的配方:辣木树木屑粉45~50%,小米20~25%,水稻谷粉20~25%,葡萄糖1~2%,蛋白胨0.1~0.2%,原料混合拌均,调节含水量55~60%,PH值5.5~6.5,装瓶,高压灭菌,接入虫草液体菌种,在25℃条件下暗培养15~20天,光照培养5~10天,光照强度800lx,每天光照12小时,待基质长满虫草菌丝体,颜色由白变黄,备用。
步骤(2)所述虫草菌酵素原液的生产配方:虫草菌丝体45%,冰糖36%,蜂蜜8%,曲霉菌液10%,柠檬1%;先将虫草菌丝体捣碎,装瓶时先铺一层虫草菌丝体,然后放入冰糖、蜂蜜、柠檬、曲霉菌液一层,再铺一层虫草菌丝体,如此重复操作,装至瓶高的80%,密封瓶口,在25℃条件下发酵30~40天,酿造产生虫草菌酵素原液。
所述辣木木屑粉制备方法:取辣木树干,树枝切片,烘干粉碎(过50目筛)成辣木木屑粉。
虫草菌选用冬虫夏草或蛹虫草。
所述曲霉菌液为白曲霉菌液。曲霉菌液的液体培养基配方:米糠100g,红糖20g,水1000ml,采用食品级安全菌株白曲霉。
步骤(1)所述虫草菌培养基质中的小米用水浸泡24~36小时后使用。
所述酵素含片的具体制法为:将虫草菌酵素原液和糊精按1:1的重量比例混合后,采用风干机,吹干水份,制成酵素粉,再用压片机制成虫草菌酵素的含片。
本发明还保护了由上述生产方法酿造的虫草菌酵素原液。
本发明另外保护了由上述生产方法制成的虫草菌酵素含片。
为了生产酵素食品,在上述生产过程中应保证原料的卫生标准符合食用级别。
本发明采用辣木树木屑、谷粉和小米培育虫草菌丝体,把植物的营养和虫草菌的营养地融合一起,通过发酵过程,酿造产生食用酵素原液,制成酵素含片食品。这些酵素能改善饮食、睡眠,使人精力充沛,产品含有人体必需的蛋白质,氨基酸、维生素,微量元素等,并有效积累了其功能性活性成分如虫草素,虫草酸,虫草多糖,SOD等,有效提高酵素的各种保健功效。
具体实施方式
实施例1
本发明采用的技术方案如下:
1.辣木虫草菌丝体的培养。培养基配方:50目的辣木木屑粉(取辣木树干,树枝切片,烘干粉碎,过50目筛成辣木木屑粉)5000g,小米(2500g,谷粉2500g,葡萄糖200g,蛋白胨20g。制作方法,小米用清水浸泡24小时,然后和辣木木屑粉混合,葡萄糖,蛋白胨溶于水中加入,调节含水量58%,PH值6,然后装瓶,经高压灭菌(121℃,60分钟)、冷却至25℃时,接入虫草菌种培养,在25度条件下暗培养15~20天,光培养5~10天,光照强度800lx,每天光照12小时,基质长满虫草菌丝体,颜色由白色变为桔黄色,备用。
2.辣木虫草菌食用酵素原液制作。生产配方:辣木虫草菌丝体4500g,冰糖3600g,蜂蜜800g,白曲霉菌液1000ml,柠檬100g。制作方法,先将辣木虫草菌丝体捣碎,装瓶时先铺瓶底一层辣木虫草菌丝体,然后铺一层冰糖、蜂蜜、白曲霉菌液、柠檬(切片),再铺辣木虫草菌丝体,如此重复操作,装至瓶高的80%,密封瓶口,在25度条件下培养,在培养过程中要搅拌,使发酵均匀,培养30~40天。酿造产生辣木虫草菌食用酵素原液。
3.辣木虫草菌酵素的含片制作。取辣木虫草菌食用酵素原液10000mlg和糊精10000g混合,一层糊精一层原液,让糊精吸收原液水份,再用风干机,吹干水份打碎成酵素粉,最后用制片机制成酵素含片。食用本产品一周后,有明显改善饮食,睡眠,精力充沛,工作效率高。

1)利用辣木树木屑粉、小米、水稻谷粉为主要原料,添加葡萄糖和蛋白胨作为虫草菌培养基质,培养虫草菌丝体;
2)将产生的虫草菌丝体连同基质捣碎,与冰糖、蜂蜜、曲霉菌液、柠檬混合,装瓶密封,酿造产生虫草菌酵素原液;或者将虫草菌酵素原液和糊精混合,风干,进一步制成酵素含片;
步骤(1)所述虫草菌培养基质的配方:辣木树木屑粉45~50%,小米20~25%,水稻谷粉20~25%,葡萄糖1~2%,蛋白胨0.1~0.2%,以上原料百分比总和为100%,原料混合拌均,调节含水量55~60%,PH值5.5~6.5,装瓶,高压灭菌,接入虫草液体菌种,在25℃条件下暗培养15~20天,光照培养5~10天,光照强度800lx,每天光照12小时,待基质长满虫草菌丝体,颜色由白变黄,备用;
步骤(2)所述虫草菌酵素原液的生产配方:虫草菌丝体45%,冰糖36%,蜂蜜8%,曲霉菌液10%,柠檬1%;先将虫草菌丝体捣碎,装瓶时先铺一层虫草菌丝体,然后放入冰糖、蜂蜜、柠檬、曲霉菌液一层,再铺一层虫草菌丝体,如此重复操作,装至瓶高的80%,密封瓶口,在25℃条件下发酵30~40天,酿造产生虫草菌酵素原液。
2.根据权利要求1所述的虫草菌酵素产品,其特征在于:所述曲霉菌液为白曲霉菌液。
3.根据权利要求1所述的虫草菌酵素产品,其特征在于:步骤(1)所述虫草菌培养基质中的小米用水浸泡24~36小时后使用。
4.根据权利要求1所述的虫草菌酵素产品的生产方法,其特征在于:所述酵素含片的具体制法为:将虫草菌酵素原液和糊精按1:1的重量比例混合后,采用风干机,吹干水份,制成酵素粉,再用压片机制成虫草菌酵素的含片。
