技术领域
本发明涉及一种铁皮石斛健脾开胃挂面及其制备方法,属于石斛加工技术领域。
背景技术
石斛(学名:Dendrobium nobile Lindl),又名万丈须、吊兰、林兰、金钗华等。茎直立,肉质状肥厚,稍扁的圆柱形,长10-60厘米,粗达1.3厘米,是珍贵的中药材。石斛分为铁皮、金钗、环草、马鞭、黄草、霍山等六种。明代李时珍的《本草纲目》中记载:石斛除痹下气、补内脏虚劳赢瘦,强阴益精。久服,厚肠胃,补内绝不足。来胃气,长肌肉,益智除惊,轻身延年。道教医学经典《道藏》中,铁皮石斛名列中华“九大仙草”之首。目前市场上多以简单的石斛鲜草、干草原材料进行销售,石斛深加工产品种类比较单一且数量少,多以保健医药产品为主,严重制约了石斛的附加价值和经济效益。
发明内容
本发明的目的在于提供一种铁皮石斛健脾开胃挂面及其制备方法,为石斛的深加工开辟了一个新的途径,提高石斛的附加价值和经济效益。
为实现上述目的,本发明采用的技术方案如下:
一种铁皮石斛健脾开胃挂面,由以下重量份的原料制成:小麦粉60-80、荞麦粉20-30、魔芋粉15-20、马蹄粉5-10、猴头菌粉8-14、胡萝卜籽粉 5-10、铁皮石斛35-45、紫芦笋10-15、香椿叶6-12、革命菜4-8、白术 3-5、金橘根 2-4、白梅花 1.5-2.5、茯苓2-3、樱桃叶4-6、桔梗2.5-4.5、食盐 2-3、纯碱 0.2-0.3、水适量。
本发明铁皮石斛健脾开胃挂面的制备方法,包括以下步骤:
(1)将新鲜的铁皮石斛、紫芦笋、香椿叶、革命菜洗净,然后将铁皮石斛、紫芦笋切成长短均匀的小段,将革命菜去皮,切成长短均匀的小块,待用;
(2)将上述处理后的铁皮石斛、紫芦笋、香椿叶、革命菜一起放入榨汁机内,加入适量的水,榨汁,然后加入相当于汁液重量的0.1-0.2%的中性纤维素酶和0.1-0.2%的中性果胶酶,在40-50℃温度下酶解1-2h,灭酶,过滤,待用;
(3)取白术、金橘根、白梅花 、茯苓、樱桃叶、桔梗混合均匀,加水煎煮提取2次,第一次加8-12倍量水,第二次加5-10倍量水,合并煎煮液,过滤,与步骤(2)制得的酶解液混合均匀,离心分离,取上清液浓度至浸膏状,冷冻干燥粉末,待用;
(4)将步骤(3)制得的粉末与余下原料混合均匀,然后放入和面机内,按物料总量的30-40%加入水进行和面,将和好的面团放入熟化机熟化10-15min,熟化温度为25-30℃,熟化机转速为5-10r/min;
(5)将熟化后的面团送压合片、切条、干燥、切断、灭菌、包装即得成品。

具体实施方式
一种铁皮石斛健脾开胃挂面,由以下重量份的原料制成:小麦粉70、荞麦粉25、魔芋粉15、马蹄粉10、猴头菌粉12、胡萝卜籽粉 8、铁皮石斛40、紫芦笋10香椿叶8、革命菜6、白术 4、金橘根3、白梅花 2、茯苓2.5、樱桃叶5、桔梗3.5、食盐 2.5、纯碱 0.2、水适量。
铁皮石斛健脾开胃挂面的制备方法,包括以下步骤:
(1)将新鲜的铁皮石斛、紫芦笋、香椿叶、革命菜洗净,然后将铁皮石斛、紫芦笋切成长短均匀的小段,将革命菜去皮,切成长短均匀的小块,待用;
(2)将上述处理后的铁皮石斛、紫芦笋、香椿叶、革命菜一起放入榨汁机内,加入适量的水,榨汁,然后加入相当于汁液重量的0.15%的中性纤维素酶和0.1%的中性果胶酶,在50℃温度下酶解1h,灭酶,过滤,待用;
(3)取白术、金橘根、白梅花 、茯苓、樱桃叶、桔梗混合均匀,加水煎煮提取2次,第一次加10倍量水,第二次加8倍量水,合并煎煮液,过滤,与步骤(2)制得的酶解液混合均匀,离心分离,取上清液浓度至浸膏状,冷冻干燥粉末,待用;
(4)将步骤(3)制得的粉末与余下原料混合均匀,然后放入和面机内,按物料总量的35%加入水进行和面,将和好的面团放入熟化机熟化15min,熟化温度为25℃,熟化机转速为8r/min;
(5)将熟化后的面团送压合片、切条、干燥、切断、灭菌、包装即得成品。

1.一种铁皮石斛健脾开胃挂面,其特征在于,由以下重量份的原料制成:小麦粉60-80、荞麦粉20-30、魔芋粉15-20、马蹄粉5-10、猴头菌粉8-14、胡萝卜籽粉 5-10、铁皮石斛35-45、紫芦笋10-15、香椿叶6-12、革命菜4-8、白术 3-5、金橘根 2-4、白梅花 1.5-2.5、茯苓2-3、樱桃叶4-6、桔梗2.5-4.5、食盐 2-3、纯碱 0.2-0.3、水适量。
2.如权利要求1所述的铁皮石斛健脾开胃挂面的制备方法,其特征在于包括以下步骤:
(1)将新鲜的铁皮石斛、紫芦笋、香椿叶、革命菜洗净,然后将铁皮石斛、紫芦笋切成长短均匀的小段,将革命菜、香椿叶切碎,待用;
(2)将上述处理后的铁皮石斛、紫芦笋、香椿叶、革命菜一起放入榨汁机内,加入适量的水,榨汁,然后加入相当于汁液重量的0.1-0.2%的中性纤维素酶和0.1-0.2%的中性果胶酶,在40-50℃温度下酶解1-2h,灭酶,过滤,待用;
(3)取白术、金橘根、白梅花 、茯苓、樱桃叶、桔梗混合均匀,加水煎煮提取2次,第一次加8-12倍量水,第二次加5-10倍量水,合并煎煮液,过滤,与步骤(2)制得的酶解液混合均匀,离心分离,取上清液浓度至浸膏状,冷冻干燥粉末,待用;
