肉松,又称肉绒、肉酥,是中国著名的汉族美食,具有营养丰富、美味可口、携带方便等特点,深受人们的喜爱。肉松是用猪的瘦肉或鱼肉、鸡肉除去水分后而制成的,扩充了即食肉肉食品的范围,但由单一的肉食品加工制得的肉松,限制了其口感及营养保健功能,随着人们生活水平的提高,对食品的品种要求更丰富,特别注重食品的保健作用,所以市场急需一种营养丰富均衡兼具保健功能,口感好且风味独特的肉松食品。
发明内容
本发明的目的在于提供一种营养丰富均衡兼具保健功能、口感好且风味独特的蓝莓百合肉松及其制备方法,迎合更多消费者的需要。
为实现上述目的,本发明采用的技术方案如下:
一种蓝莓百合肉松,是由以下重量份的原料组成:
瘦肉150-200、蓝莓20-30、桃金娘15-20、老山芹10-15、柏子仁10-20、百合6-10、远志2-3、香蕉皮2-3、石榴籽2-3、丹参1-2、合欢皮1-2、山奈0.5-1、大料0.5-1、食盐3-6、酱油8-12、葡萄酒适量、营养添加剂2-5;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至40-80目混合,加入混合物5-10倍米酒,在5-10℃密封静置2-4个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的蓝莓百合肉松的制备方法,包括以下步骤:
(1)、将老山芹除杂处理,焯水1-3分钟,捞出沥干,粉碎研磨成浆,冷冻干燥成粉,得老山芹粉;
(2)、将瘦肉除去筋腱、杂质,切块洗净入锅,加入清水煮制沸腾,撇去浮沫,加入酱油、山奈、大料,文火焖煮至熟烂,捞出肉块沥干脱水,得干肉块;
(3)、将蓝莓、桃金娘除杂处理得到果肉混合,与洗净百合一并打制成浆,与0.5-1.5倍的葡萄酒搅拌均匀,加入干肉块,揉拌均匀,覆膜静置1-2小时,再蒸制熟香,将肉块做成肉丝;
(4)、将远志、香蕉皮、石榴籽、丹参、合欢皮破碎至20-40目合并,装入净纱布袋内封口,与柏子仁一并入锅,加水煮制稠状,捞出纱布袋,剩余物磨制成浆,喷雾干燥,得营养粉;
(5)、将肉丝、营养粉、老山芹粉混合,入锅文火翻炒,同时添加其他剩余原料,至肉丝蓬松即可。
上述的老山芹,学名东北牛防风,又叫土当归、山芹菜等,是假茵芹属伞形科多年生草本植物,除含蛋白质、脂肪、糖等物质外,还富含Vc,是一般蔬菜的几十倍,可以帮助胃肠蠕动,清理肠道垃圾还可以降血脂、降血压、降血糖,能够扶正固本,强壮身体具有抗疲劳、抗辐射、减肥益智等功能;桃金娘为桃金娘科属双子叶植物纲蔷薇亚纲的一科的果实,具有养血止血、涩肠固精的功效。

具体实施方式
实施例1
一种蓝莓百合肉松,是由以下重量(斤)的原料组成:
瘦肉200、蓝莓30、桃金娘15、老山芹12、柏子仁20、百合8、远志2、香蕉皮3、石榴籽3、丹参1、合欢皮1、山奈0.5、大料0.5、食盐4、酱油12、葡萄酒适量、营养添加剂3;
所述的营养添加剂由下述重量(斤)的原料制成:海参冻干粉2、紫锥菊3、刺五加3、玉竹3、槐花蜜6、米酒适量;
所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至40目混合,加入混合物10倍米酒,在6℃密封静置4个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的蓝莓百合肉松的制备方法,包括以下步骤:
(1)、将老山芹除杂处理,焯水2分钟,捞出沥干,粉碎研磨成浆,冷冻干燥成粉,得老山芹粉;
(2)、将瘦肉除去筋腱、杂质,切块洗净入锅,加入清水煮制沸腾,撇去浮沫,加入酱油、山奈、大料,文火焖煮至熟烂,捞出肉块沥干脱水,得干肉块;
(3)、将蓝莓、桃金娘除杂处理得到果肉混合,与洗净百合一并打制成浆,与1倍的葡萄酒搅拌均匀,加入干肉块,揉拌均匀,覆膜静置1小时,再蒸制熟香,将肉块做成肉丝;
(4)、将远志、香蕉皮、石榴籽、丹参、合欢皮破碎至40目合并,装入净纱布袋内封口,与柏子仁一并入锅,加水煮制稠状,捞出纱布袋,剩余物磨制成浆,喷雾干燥,得营养粉;
(5)、将肉丝、营养粉、老山芹粉混合,入锅文火翻炒,同时添加其他剩余原料,至肉丝蓬松即可。

瘦肉150-200、蓝莓20-30、桃金娘15-20、老山芹10-15、柏子仁10-20、百合6-10、远志2-3、香蕉皮2-3、石榴籽2-3、丹参1-2、合欢皮1-2、山奈0.5-1、大料0.5-1、食盐3-6、酱油8-12、葡萄酒适量、营养添加剂2-5;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
