肉松,又称肉绒、肉酥,是中国著名的汉族美食,具有营养丰富、美味可口、携带方便等特点,深受人们的喜爱。肉松是用猪的瘦肉或鱼肉、鸡肉除去水分后而制成的,扩充了即食肉肉食品的范围,但由单一的肉食品加工制得的肉松,限制了其口感及营养保健功能,随着人们生活水平的提高,对食品的品种要求更丰富,特别注重食品的保健作用,所以市场急需一种营养丰富均衡兼具保健功能,口感好且风味独特的肉松食品。
发明内容
本发明的目的在于提供一种营养丰富均衡兼具保健功能、口感好且风味独特的果仁香浓养生肉松及其制备方法,迎合更多消费者的需要。
为实现上述目的,本发明采用的技术方案如下:
一种果仁香浓养生肉松,是由以下重量份的原料组成:
瘦肉150-200、板栗仁10-15、葵花籽仁10-14、核桃仁8-12、沙茶酱6-8、枇杷叶2-3、甜叶菊1-2、川麦冬2-3、苦瓜藤1-2、白菊花1-3、蜀葵花1-2、钙果叶1-2、姜粉4-6、食盐3-5、沙棘油适量、营养添加剂3-6;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
    所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至40-80目混合,加入混合物5-10倍米酒,在5-10℃密封静置2-4个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的果仁香浓养生肉松的制备方法,包括以下步骤:
(1)、将枇杷叶、甜叶菊、蜀葵花、钙果叶等中药原料加5-10倍水煎煮2-3小时,过滤去渣,得中药液;
(2)、除去瘦肉的筋腱、杂质,切块洗净,加水煮沸,加入沙茶酱搅拌均匀,文火继续焖煮至肉块熟烂,捞出肉块晾凉沥干,用拉丝机拉成肉丝,待用 ;
(3)、将板栗仁、葵花籽仁、核桃仁混合,加入中药液搅拌均匀,浸泡1-2小时,文火熬煮至熟透,研磨成浆,喷雾干燥,得果仁粉;
(4)、将肉丝、果仁粉、姜粉混合,放入含有适量沙棘油锅内,文火翻炒至微香,再加入其他剩余原料,继续文火翻炒至肉丝蓬松即可。
上述的蜀葵花为锦葵科植物蜀葵的花朵,具有和血润澡、通利二便的功效;钙果叶为蔷薇科樱桃属落叶灌木的叶子,富含钙、钾、铁、硒等微量元素,可清除人体自由基,能延年益寿。

瘦肉150、板栗仁10、葵花籽仁10、核桃仁8、沙茶酱6、枇杷叶2、甜叶菊1、川麦冬2、苦瓜藤2、白菊花2、蜀葵花1、钙果叶1、姜粉4、食盐3、沙棘油适量、营养添加剂5;
所述的营养添加剂由下述重量(斤)的原料制成:海参冻干粉1.5、紫锥菊2、刺五加3、玉竹2、槐花蜜6、米酒适量;
    所述的的营养添加剂的的制备方法为:将紫锥菊、刺五加、玉竹分别除杂洗净烘干,破碎至60目混合,加入混合物10倍米酒,在8℃密封静置2个月,离心过滤,滤液与其他剩余混合均匀,即得。
所述的果仁香浓养生肉松的制备方法,包括以下步骤:
(1)、将枇杷叶、甜叶菊、蜀葵花、钙果叶等中药原料加6倍水煎煮2小时,过滤去渣,得中药液;
(2)、除去瘦肉的筋腱、杂质,切块洗净,加水煮沸,加入沙茶酱搅拌均匀,文火继续焖煮至肉块熟烂,捞出肉块晾凉沥干,用拉丝机拉成肉丝,待用 ;
(3)、将板栗仁、葵花籽仁、核桃仁混合,加入中药液搅拌均匀,浸泡1小时,文火熬煮至熟透,研磨成浆,喷雾干燥,得果仁粉;
(4)、将肉丝、果仁粉、姜粉混合,放入含有适量沙棘油锅内,文火翻炒至微香,再加入其他剩余原料,继续文火翻炒至肉丝蓬松即可。

瘦肉150-200、板栗仁10-15、葵花籽仁10-14、核桃仁8-12、沙茶酱6-8、枇杷叶2-3、甜叶菊1-2、川麦冬2-3、苦瓜藤1-2、白菊花1-3、蜀葵花1-2、钙果叶1-2、姜粉4-6、食盐3-5、沙棘油适量、营养添加剂3-6;
所述的营养添加剂由下述重量份的原料制成:海参冻干粉0.5-2、紫锥菊2-4、刺五加2-3、玉竹2-3、槐花蜜4-6、米酒适量;
