Abstract
本发明公开了一种膳食纤维饮料的制备方法,将白砂糖、结晶果糖和果胶混合均匀,加入水中,搅拌加热使其充分溶解,无不溶颗粒,然后过滤,将聚葡萄糖、液态低聚果糖加入水中,加热溶解然后过滤,将柠檬酸用大约50L、60℃纯净水稀释,缓慢加入至料液中,搅拌均匀制备。本发明饮料不含色素、香精、甜味剂、防腐剂等对人体有害的食品添加剂,多种水溶性膳食纤维协同作用,取长补短,更好的发挥保健功效,水溶性膳食纤维含量高,保健作用更明显。

技术领域
本发明涉及饮料制备技术领域,具体属于一种膳食纤维饮料的制备方法。
背景技术
膳食纤维是一种不能被人体消化的碳水化合物,是健康饮食不可缺少的第七大营养素,它在保持人体消化系统的健康上扮演着重要的角色。膳食纤维可以清洁消化壁,增强消化功能,同时可稀释食物中的致癌物质和有毒物质,加速食物中的致癌物质和有毒物质的移除,保护脆弱的消化道和预防结肠癌,还可以减缓消化速度和最快速地排泄胆固醇,所以可让血液中的血糖和胆固醇控制在最理想的水平。因此,膳食纤维在预防便秘、调节肠内菌群和辅助抑制肿瘤、调节血糖和血脂、控制肥胖方面具有一定效果。摄取足够的膳食纤维可以预防心血管疾病、癌症、糖尿病以及其它疾病。
发明内容
本发明的目的是提供了一种膳食纤维饮料的制备方法,该饮料不含色素、香精、甜味剂、防腐剂等对人体有害的食品添加剂,多种水溶性膳食纤维协同作用,取长补短,更好的发挥保健功效,水溶性膳食纤维含量高,保健作用更明显。
本发明采用的技术方案如下:
一种膳食纤维饮料的制备方法,(1)溶胶:将白砂糖、结晶果糖和果胶混合均匀,加入80℃纯净水中,搅拌加热使其充分溶解,无不溶颗粒,然后过滤;
(2)溶糖:将聚葡萄糖、液态低聚果糖加入纯净水,加热溶解然后过滤;
(3)酸化:将柠檬酸用60℃纯净水稀释,缓慢加入至料液中,搅拌均匀;
(4)均质:将料液用60℃纯净水定容,然后调香均质,均质条件为60℃、20MPa,灌装封口;
(5)杀菌:采用巴氏杀菌,85~90℃/15~20min;
(6)冷却:将杀菌好的样品放入冷水水浴中冷却至常温,成品。
所述的上述步骤中用水必须是软化水,生产用水的电导率(25℃±1℃)小于10μS/cm。
与已有技术相比,本发明的有益效果如下:
本发明制备的饮料不含色素、香精、甜味剂、防腐剂等对人体有害的食品添加剂,多种水溶性膳食纤维协同作用,取长补短,更好的发挥保健功效,水溶性膳食纤维含量高,保健作用更明显,采用冷灌装加工工艺,更好的保留饮品中的营养成份和纯正口感。

具体实施方式
参见附图,一种膳食纤维饮料的制备方法,以生产饮料总量为1000L计算制备,1.溶胶:将白砂糖、结晶果糖和果胶混合均匀,加入300mL、80℃纯净水中,搅拌加热使其充分溶解,无不溶颗粒,然后过滤。
2.溶糖:将聚葡萄糖、液态低聚果糖加入大约300L纯净水,加热溶解然后过滤。
3.酸化:将柠檬酸用大约50L、60℃纯净水稀释,缓慢加入至料液中,搅拌均匀。
4.均质:将料液用60℃纯净水定容至1000L,然后调香均质,均质条件为60℃、20MPa,灌装封口。
5.杀菌:采用巴氏杀菌,85~90℃/15~20min。
6.冷却:将杀菌好的样品放入冷水水浴中冷却至常温,成品。

1.一种膳食纤维饮料的制备方法,其特征在于:(1)溶胶:将白砂糖、结晶果糖和果胶混合均匀,加入80℃纯净水中,搅拌加热使其充分溶解,无不溶颗粒,然后过滤;
(2)溶糖:将聚葡萄糖、液态低聚果糖加入纯净水,加热溶解然后过滤;
(3)酸化:将柠檬酸用60℃纯净水稀释,缓慢加入至料液中,搅拌均匀;
(4)均质:将料液用60℃纯净水定容,然后调香均质,均质条件为60℃、20MPa,灌装封口;
(5)杀菌:采用巴氏杀菌,85~90℃/15~20min;
(6)冷却:将杀菌好的样品放入冷水水浴中冷却至常温,成品。
