本发明公开了一种甜玉米保健饮料,它是由甜玉米果粒、水、环状糊精、卡拉胶、黄原胶、柠檬酸、苹果酸、蔗糖、阿斯巴甜制备而成的。本发明采用了球磨仪和超声波细胞破碎仪微细化甜玉米渣技术,甜玉米粒的利用率达到100%,与没有球磨仪和超声波细胞破碎仪微细化的产品相比,甜玉米果粒的利用率提高了30-40%,玉米黄色素和膳食纤维等功能活性成分含量分别提高20-40%和30-60%。本发明制得的甜玉米保健饮料稳定性好,玉米渣悬浮在饮料中不易沉淀,产品有效期可达一年以上。

技术领域
本发明涉及一种饮料,尤其是一种甜玉米保健饮料。
背景技术
甜玉米有极高的营养价值,其赖氨酸含量是普通玉米的2倍,籽粒中蛋白质、多种氨基酸、脂肪都高于普通玉米,并含多种维生素、矿物质、亚油酸和纤维素等,具有降低血液中胆固醇和软化血管、防治冠心病的作用。甜玉米生产周期短,复种指数高,种植效益好,并具有优质可口、风味独特、营养丰富、消费方式时尚多样等优点,我国甜玉米种植面积逐年递增。
现有技术中已有利用甜玉米制作饮料的报道:如专利号为CN200910305049.7的中国发明专利公开了一种甜玉米饮料及其生产方法,该饮料由甜玉米粒、白砂糖、增稠剂、乙基麦芽酚、护色剂、酸度调节剂、甜玉米香精、淀粉酶、食用色素制成。专利号为CN200910305023.2的中国发明专利申请公开了一种甜玉米饮料及其制备方法,该饮料由甜玉米粒、木糖醇、增稠剂、乙基麦芽酚、护色剂、酸度调节剂、甜玉米香精、淀粉酶、食用色素制成。专利号为CN200910062075.1的中国发明专利公开了一种用甜玉米加工玉米浆饮料的方法,它将玉米原浆与将甜味剂、稳定剂、风味调节剂、着色剂以及抗氧剂与水乳化溶解得到的混合液混合后,再在密封的保温罐加热至72-75℃糊化处理,将调配液在负0.03-0.05MPa的环境下进行真空脱气,经训色调香调味处理加水定容后,在75℃-80℃温度下以20-30MPa的压力均质后,在65-80℃温度下灌装封口,之后高温灭菌得到玉米浆饮料。
现有技术的缺陷是:由于甜玉米渣的不溶性,一般在制备甜玉米饮料时甜玉米渣是被过滤除去,这样既浪费原材料,同时,甜玉米渣中富含的玉米黄色素和膳食纤维等多种活性成分不能充分利用。
发明内容
本发明的目的在于克服现有技术的缺陷,提供一种浪费少,甜玉米利用率高的保健饮料。
上述目的是通过以下技术方案实现的:
一种甜玉米保健饮料,它是由下述重量份数计的原料制备而成的:
一种制备权利要求1所述甜玉米保健饮料的方法,包括以下步骤:
1)取甜玉米果粒,磨浆、过滤,滤渣通过球磨仪和超声波细胞破碎仪微细化,微细化后的滤渣与滤液合并,得到甜玉米浆;
2)将环状糊精、卡拉胶、黄原胶、柠檬酸、苹果酸、蔗糖和阿斯巴甜混合,并用水溶解制成混合液;
3)将步骤1)得到的甜玉米浆、步骤2)得到的混合液混匀后,通过均质、脱气、灌装、杀菌制成甜玉米保健饮料。
优选地,步骤1)中微细化后的滤渣,其粒径为10-100μm。
本发明的有益效果是:
1)本发明采用了特定的球磨仪和超声波细胞破碎仪微细化甜玉米渣技术,甜玉米粒的利用率达到100%,与没有球磨仪和超声波细胞破碎仪微细化的产品相比,甜玉米果粒的利用率提高了30-40%,玉米黄色素和膳食纤维等功能活性成分含量分别提高20-40%和30-60%。
2)本发明制得的甜玉米保健饮料稳定性好,玉米渣悬浮在饮料中不易沉淀,产品有效期可达一年以上。
3)本发明制得的甜玉米保健饮料口感、色泽好,营养丰富,老少咸宜。
具体实施方式
下面结合实施例对本发明进行详细说明。
实施例1
取鲜甜玉米棒去掉包衣和须等杂质,洗净后拔出玉米粒,称新鲜甜玉米果粒100kg,磨碎后过滤,将滤渣在球磨仪(2L型双行星式球磨仪/连云港市春龙实验仪器有限公司)转速为200转/分钟下磨10-60分钟,然后在超声波细胞破碎仪(FDL-120型超声波细胞破碎仪/南京凡帝朗信息科技有限公司)中破碎5-20分钟(功率600-1000W,频率为60kHz),使甜玉米渣微细化(粒径为10-100μm),微细化后的滤渣与原滤液合并,得到甜玉米浆;称0.2kg环状糊精、0.2kg卡拉胶、0.2kg黄原胶、0.1kg柠檬酸、0.1kg苹果酸、1kg蔗糖和0.01kg阿斯巴甜混合均匀,用50kg水溶解制成混合液;将混合液与甜玉米浆混合均匀,通过均质、脱气、灌装、杀菌(90-121℃,10-30分钟)制成甜玉米保健饮料。
经试验,本品有效期为1.2年,在有效期内产品色泽均匀,有少量沉淀,但轻摇易散。
实施例2
制备方法与实施例相同,所用的原料是:甜玉米果粒100kg、环状糊精2kg、卡拉胶2kg、黄原胶2kg、柠檬酸0.5kg、苹果酸0.5kg、蔗糖5kg、阿斯巴甜0.07kg、水100kg。
经试验,本品有效期为1.5年,在有效期内产品色泽均匀,没有沉淀。
实施例3
制备方法与实施例相同,所用的原料是:甜玉米果粒100kg、环状糊精1.1kg、卡拉胶1.1kg、黄原胶1.1kg、柠檬酸0.3kg、苹果酸0.3kg、蔗糖3kg、阿斯巴甜0.04kg、水75kg。
经试验,本品有效期为1.4年,在有效期内产品色泽均匀,没有沉淀。

1.一种甜玉米保健饮料的制备方法,其特征在于:它是由下述重量份数计的原料制备而成的:
制备方法包括以下步骤:
1)取甜玉米果粒,磨浆、过滤,滤渣通过球磨仪和超声波细胞破碎仪微细化成粒径为10-100μm的滤渣,微细化后的滤渣与滤液合并,得到甜玉米浆;
2)将环状糊精、卡拉胶、黄原胶、柠檬酸、苹果酸、蔗糖和阿斯巴甜混合,并用水溶解制成混合液;
3)将步骤1)得到的甜玉米浆、步骤2)得到的混合液混匀后,通过均质、脱气、灌装、杀菌制成甜玉米保健饮料。
