本发明公开了一种海带快餐食品生产方法,其特征是将加工的海带粉和玉米粉、大豆粉、牛奶混合调制面团,采用方便面生产定型设备制成水分≤3%的盒装面食,其组分的重量百分比为:海带粉40-70%、玉米粉20-30%、大豆粉10-30%、牛奶2-5%。本发明提供一种食用方便、味道可口、营养丰富、饱腹好、具有保健效果、其保质期长、便于携带、便于加热、便于快餐店开设、可打开即食的海带食品的生产方法。

本发明涉及食品技术领域,是一种海带食品,特别是一种盒装海带快餐方便食品生产方法。
背景技术
海带素有“天然微量元素宝库”之称,一个成人每天只要摄取0.1克海带即可满足对碘的需要,食用50克海带可满足对钙的需要,对促进生长发育尤其是神经系统发育具有举足轻重的作用,海带等海藻类食品可以防止肥胖、胆结石、便秘、肠胃病等代谢性疾病,并具有防癌抗癌、降低血压、降低血糖、预防动脉硬化和血栓形成等功效。我国古医籍中就有“海带多食瘦人”的记载,这是关于海洋减肥食品最早的记载。因而开发海带食品的意义重大,研究和开发海带快餐方便食品具有实实在在的社会和经济意义,随着时代的发展和生活节奏的加快,快餐越来越受到人们的欢迎,特别是儿童、学生对快餐更是偏爱有加。
发明内容
本发明的目的在于解决上述已有的技术的不足,提供一种以海带为主要原料生产的快餐方便食品,提供一种食用方便、味道可口、营养好、饱腹好、具有保健效果、其保质期长、便于携带、便于加热、便于快餐店开设、可打开即食的海带食品的生产方法。
为了达到上述目的,本发明是这样实现的:
一种海带快餐食品生产方法,其特征是将加工的海带粉和玉米粉、大豆粉、牛奶混合调制面团,采用方便面生产定型设备制成水分≤3%的盒装面食,其组分的重量百分比为:海带粉40-70%、玉米粉20-30%、大豆粉10-30%、牛奶2-5%。
所述的海带粉是以鲜海带为原料经清洗、切丝、着味处理后微波干燥至水分7-10%,再粉碎至80-100目制得。
所述的着味处理是用酱油、醋、花生油、食盐、芝麻酱调成汁液,然后浇在切丝的海带上拌匀,再进行烹炒的工艺步骤,该着味处理的组分重量百分比为:切丝的海带85-97%、酱油2-5%、醋0.5-2%、花生油1-3%、食盐0.5-2%、芝麻酱1-5%。
本发明的优点和效果:
本发明组分配制科学,组分中海带含有丰富的碘和其他微量元素,可以调节人体的新陈代谢和促进生长发育,但其中的蛋白质、脂肪、碳水化合物含量不多,且藻类多糖难为人体所消化,产热量少,而组分中大豆则含有丰富的蛋白质和脂肪,其碘等微量元素含量相对不丰富,将两者配合取长补短,进行互补,提高了其营养价值,组分中玉米可提供大量的碳水化合物、粗纤维、B族维生素、胡萝卜素和热量,组分中又有牛奶的乳、酪蛋白,异麦芽低聚糖的双岐促进因子的组合,使各组分之间达到互为补充、相互强化。
本发明产品易于消化吸收,食用方便、营养丰富、饱腹好,用包装盒包装便于直接加热,便于快餐店开设,便于携带,打开即食,特别是在人们普遍关注营养健康的今天更深受人们喜爱。
本发明产品采用的烹炒等着味处理方法和微波干燥工艺,使其易于后续加工、易于入味、产品口感好,由于采用方便面生产定型设备制成水分≤3%的盒装面食,因而使其保质期长,且无添加防腐剂。
本发明原料易得,加工容易,将海带与日常快餐有机的结合,又可大大改变传统快餐食品的多种弊端。
具体实施方式
实施例1:
采收称取鲜海带95公斤,清洗干净后将其切成丝,备用。
称取酱油2公斤、醋0.5公斤、花生油1公斤、食盐0.5公斤、芝麻酱1公斤,将其调成汁液,然后浇在上述切丝的95公斤海带上拌匀,再进行烹炒处理后送入干燥设备内干燥至水分10%,再将其粉碎至100目制成海带粉,备用。
称取部分上述制得的海带粉60公斤计,再加入20公斤的玉米粉、15公斤的大豆粉、5公斤的牛奶,将其混合调制成面团,送入方便面生产定型设备制成水分3%的盒装面食,即制成本发明盒装海带快餐食品。
实施例2:
采收称取鲜海带93公斤,清洗干净后将其切成丝,备用。
称取酱油2公斤、醋1公斤、花生油1公斤、食盐1公斤、芝麻酱2公斤,将其调成汁液,然后浇在上述切丝的93公斤海带上拌匀,再进行烹炒处理后送入干燥设备内干燥至水分7%,再将其粉碎至90目制成海带粉,备用。
称取部分上述制得的海带粉61公斤计,再加入20公斤的玉米粉、15公斤的大豆粉、4公斤的牛奶,将其混合调制成面团,送入方便面生产定型设备制成水分1%的盒装面食,即制成本发明盒装海带快餐食品。
实施例3:
采收称取鲜海带94公斤,清洗干净后将其切成丝,备用。
称取酱油2.5公斤、醋0.5公斤、花生油1.5公斤、食盐0.5公斤、芝麻酱1公斤,将其调成汁液,然后浇在上述切丝的94公斤海带上拌匀,再进行烹炒处理后送入干燥设备内干燥至水分9%,再将其粉碎至80目制成海带粉,备用。
称取部分上述制得的海带粉60公斤计,再加入15公斤的玉米粉、22公斤的大豆粉、3公斤的牛奶,将其混合调制成面团,送入方便面生产定型设备制成水分2%的盒装面食,即制成本发明盒装海带快餐食品。
