背景技术
水芹,又称水英、药芹菜、楚葵等,伞芹科水芹菜属。现代仪器分析,每100g中水芹含蛋白质1.4g、脂肪0.2g、膳食纤维0.9g、碳水化合物1.3g、胡萝卜素380μg、视黄醇当量63μg、硫胺素0.01mg、核黄素0.19mg、尼克酸1mg、维生素C5mg、维生素E0.32mg、钾212mg、钠40.9mg、钙38mg、镁16mg、铁6.9mg、锰0.79mg、锌0.38mg、铜0.1mg、磷38mg、硒0.81μg。水芹味甘辛、性凉、入肺、胃经,具有清热解毒、养精益气、清洁血液、降低血压、宣肺利湿等功效,还可治小便淋痛、大便出血、黄疸、风火牙痛、痄腮等病症。水芹含水量高,不易储存,产地多集中在浙江、江苏、安徽、江西等地,产地水分大的其后也不易于水芹的保存,将水芹加工成营养丰富、美味可口的饮料,既解决了水芹的保存问题,也为水芹的深加工提供一种新的方法。
发明内容
本发明所要解决的技术问题是将水芹作原料,经过打浆、酶处理、调配、均质等步骤加工成的水芹饮料,提供一种营养丰富、味道可口、饮用方便的水芹饮料的加工方法。
本发明解决其技术问题所采取的技术方案是:一种水芹饮料的加工方法,按如下步骤进行:
A、原料预处理:取无病虫害、成熟的水芹,去除水芹根部,将剩余部分切割成4-6cm长的小段,备用;
B、打浆:向水芹段中加入其重量2-3倍的水,进行打浆,加工成水芹浆;
C、酶处理:向水芹浆中加入其重量0.4-0.6%的果胶酶、0.8-1%的纤维素酶,温度控制为40-50℃,时间为2-4h,通过酶解处理,可以析出水芹内更多的营养物质;
D、过滤:将酶处理后的水芹浆用180-200目的筛网过滤,制得水芹汁,使水芹汁组织均一;
E、调配:取水芹汁25-35重量份、木糖醇8-12重量份、食用酸0.6-0.8重量份、香精0.1-0.3重量份、明胶0.1-0.2重量份,增稠剂0.06-0.08重量份,加水至100重量份,搅拌均匀,制成混合液,木糖醇作为甜味剂,不会提高饮用者血糖含量,适宜糖尿病患者饮用,饮用范围广;
F、均质:将搅拌均匀的混合粉均质处理,温度为70-80℃,压力为20-30Mpa,使其组织达到均一、细嫩,避免产生分层沉淀;
G、杀菌:杀菌:采用瞬间杀菌法,温度90-95℃,时间15-20s,制得水芹饮料;
H、罐装:将杀菌后的水芹饮料冷却至30-40℃,真空无菌环境下罐装;
I、检验、贮藏:检验罐装是否合格,常温下贮藏。

实施例1:一种水芹饮料的加工方法,按如下步骤进行:

C、酶处理:向30kg的水芹浆中加入0.12kg的果胶酶、0.24kg的纤维素酶,温度控制为40℃,时间为4h,通过酶解处理,可以析出水芹内更多的营养物质;
D、过滤:将酶处理后的水芹浆用180目的筛网过滤,制得水芹汁,使水芹汁组织均一;
E、调配:取水芹汁25kg、木糖醇8kg、食用酸0.6kg、香精0.1kg、明胶0.1kg,增稠剂0.06kg,加水至100kg,搅拌均匀,制成混合液,木糖醇作为甜味剂,不会提高饮用者血糖含量,适宜糖尿病患者饮用,饮用范围广;
F、均质:将搅拌均匀的混合粉均质处理,温度为70℃,压力为30Mpa,使其组织达到均一、细嫩,避免产生分层沉淀;
G、杀菌:杀菌:采用瞬间杀菌法,温度90℃,时间25s,制得水芹饮料;
H、罐装:将杀菌后的水芹饮料冷却至30℃,真空无菌环境下罐装;
I、检验、贮藏:检验罐装是否合格,常温下贮藏。
实施例2:一种水芹饮料的加工方法,按如下步骤进行:
A、原料预处理:取无病虫害、成熟的水芹,去除水芹根部,将剩余部分切割成2cm长的小丁,备用,切丁使水芹的营养物质更容易析出;
B、打浆:取10kg的水芹丁,加入25kg的水,进行打浆,加工成水芹浆
C、酶处理:向30kg的水芹浆中加入0.16kg的果胶酶、0.28kg的纤维素酶,温度控制为45℃,时间为3h,通过酶解处理,可以析出水芹内更多的营养物质;
D、过滤:将酶处理后的水芹浆用190目的筛网过滤,制得水芹汁,使水芹汁组织均一;
E、调配:取水芹汁30kg、木糖醇10kg、莲藕汁5kg、食用酸0.7kg、香精0.2kg、明胶0.15kg,增稠剂0.07kg,加水至100kg,搅拌均匀,制成混合液,木糖醇作为甜味剂,不会提高饮用者血糖含量,适宜糖尿病患者饮用,饮用范围广;
F、均质:将搅拌均匀的混合粉均质处理,温度为75℃,压力为25Mpa,使其组织达到均一、细嫩,避免产生分层沉淀;
G、杀菌:杀菌:采用瞬间杀菌法,温度93℃,时间18s,制得水芹饮料;
H、罐装:将杀菌后的水芹饮料冷却至35℃,真空无菌环境下罐装;
I、检验、贮藏:检验罐装是否合格,常温下贮藏。
实施例3:一种水芹饮料的加工方法,按如下步骤进行:
A、原料预处理:取无病虫害、成熟的水芹,去除水芹根部,将剩余部分切割成碎粒,备用,切成碎粒便于打浆;
B、打浆:取10kg的水芹碎粒,加入30kg的水,进行打浆,加工成水芹浆
C、酶处理:向40kg的水芹浆中加入0.24kg的果胶酶、0.4kg的纤维素酶,温度控制为50℃,时间为2h,通过酶解处理,可以析出水芹内更多的营养物质;
D、过滤:将酶处理后的水芹浆用200目的筛网过滤,制得水芹汁,使水芹汁组织均一;
E、调配:取水芹汁35kg、果葡糖浆12kg、山楂汁6kg、食用酸0.8kg、香精0.3kg、明胶0.2kg,增稠剂0.08kg,加水至100kg,搅拌均匀,制成混合液,添加果葡糖浆,使水芹饮料味道可口、回味悠长;
F、均质:将搅拌均匀的混合粉均质处理,温度为80℃,压力为20Mpa,使其组织达到均一、细嫩,避免产生分层沉淀;
G、杀菌:杀菌:采用瞬间杀菌法,温度95℃,时间15s,制得水芹饮料;
H、罐装:将杀菌后的水芹饮料冷却至40℃,真空无菌环境下罐装;
I、检验、贮藏:检验罐装是否合格,常温下贮藏。

Claims (1)
1.一种水芹饮料的加工方法,其特征在于:采用以下步骤:
A、原料预处理:取无病虫害、成熟的水芹,去除水芹根部,将剩余部分切割成4-6cm长的小段,备用;
B、打浆:向水芹段中加入其重量2-3倍的水,进行打浆,加工成水芹浆;
C、酶处理:向水芹浆中加入其重量0.4-0.6%的果胶酶、0.8-1%的纤维素酶,温度控制为40-50℃,时间为2-4h;
D、过滤:将酶处理后的水芹浆用180-200目的筛网过滤,制得水芹汁;
E、调配:取水芹汁25-35重量份、木糖醇8-12重量份、食用酸0.6-0.8重量份、香精0.1-0.3重量份、明胶0.1-0.2重量份,增稠剂0.06-0.08重量份,加水至100重量份,搅拌均匀,制成混合液;
F、均质:将搅拌均匀的混合粉均质处理,温度为70-80℃,压力为20-30Mpa;
G、杀菌:杀菌:采用瞬间杀菌法,温度90-95℃,时间15-20s,制得水芹饮料;
H、罐装:将杀菌后的水芹饮料冷却至30-40℃,真空无菌环境下罐装;
I、检验、贮藏:检验罐装是否合格,常温下贮藏。
