本发明公开了一种葛根无糖饮料及其制备方法,属于饮料生产领域。葛根无糖饮料,由水、葛根汁、柠檬酸配制而成,主要制备步骤是:葛根破碎,离心去淀粉及粗纤维等,离心后的葛根汁用柠檬酸调节PH,加热煮沸,静置澄清(必要时采用果胶酶及蛋白酶处理后进一步澄清),上清液过滤得滤液。将滤液调配、分装、灭菌。本发明公开的一种葛根无糖饮料不含任何代糖、人工甜味剂的葛根无糖饮料。该饮料采用药食同源的葛根为主要原料,具有清热解毒、生津止渴、补肾健脾、益胃安神、滋补养颜,延缓衰老、清心明目及醒酒等功能,尤其适合于对糖类摄取有特殊要求的人群。

技术领域
本发明涉及一种葛根无糖饮料。
背景技术
目前随着生活水平的提高和食品工业的发展,目前市场上销售的饮料品种很多,这些饮料普遍糖含量很高,饮用后容易发胖,特别是高血压和糖尿病人不能饮用。葛根做为药食同源的植物,富含异黄酮类物质。具有清热解毒、生津止渴、补肾健脾、益胃安神、滋补养颜,延缓衰老、清心明目及醒酒等功能。因此迎合了当今消费者对健康饮品的追求,更是特别能够满足对中老年及糖尿病、高血糖、高血脂等消费者的饮料需求。
发明内容
发明的目的是葛根无糖饮料及其制备方法,该饮料富含异黄酮,不含蔗糖,适合大众饮用,特别适用于中老年及糖尿病、高血糖、高血脂等消费者的饮料需求。
本发明技术方案如下:
一种葛根无糖饮料,其包括饮用水、葛根汁、柠檬酸。
按重量比,饮用水5500-6500份,葛根汁5500-6500份,柠檬酸1.5-3.5份。
所述葛根汁制备方法包括如下步骤:每取1800份新鲜葛根,洗净后直接粉碎,加6000份饮用水搅拌,离心除去淀粉及残渣得葛根汁。
所述饮用水为纯净水,所述离心采用卧螺离心机离心。
所述葛根无糖饮料的制备方法,包括如下步骤:(1)按重量份每取1800份新鲜葛根,洗净后直接粉碎,加6000份饮用水搅拌,离心除去淀粉及残渣得葛根汁;(2)将葛根汁加入柠檬酸2份调节PH至5.3±0.2,搅拌,同时加热至90-95℃保温30分钟,静置澄清60分钟;(3)排放静置后的底层沉淀物,上清用硅藻土或超滤膜过滤得滤液;(4)将滤液入调配罐,加6000份纯净水调配,然后经过超高温灭菌机140℃灭菌30s,80-85℃灌装、封盖,121℃,20分钟杀菌后既得成品饮料。
为了达到更好的技术效果步骤(2)与步骤(3)之间还有如下步骤:排放静置后的底层沉淀物,将静置澄清后的上清液冷却至55℃至60℃,加入1份果胶酶,搅拌30分钟;之后加入蛋白酶1份,搅拌;30分钟;停止搅拌,保温静置澄清120min;
本发明的有益效果:
葛根是药食两用植物,葛根具有丰富的营养成分,如淀粉、蛋白质,脂肪及铁、碘、锰、锌、硒等十多种微量元素,以及人体必需的八种氨基酸。同时含有多种葛根异黄酮(葛根素、葛根素木糖甙、大豆甙、大豆甙元等)。现代医学研究表明葛根中的异黄酮类化合物葛根素对高血压、高血脂、高血糖和心血管疾病有一定疗效。按照本发明的生产工艺生产的葛根汁无糖饮料,有效的去除了葛根中淀粉、粗纤维等多糖类物质,并完全保留了葛根中的异黄酮类物质及微量元素。产品配方健康,尤其适合对糖类摄取有特殊需要的人群。
同时,本发明饮料口味清新爽口,具有天然植物芳香。同时具有澄清度好,质量稳定,不易出现沉淀物,产品卖相好。工艺简单,保质期长,便于大规模加工生产。
具体实施方式
以下以通过优选实施例对本发明工艺做进一步的详细说明,但本发明的保护范围并不局限于此。
实施例1
按重量份,取鲜葛根1800份,经清洗、粉碎、加6000份常温纯净水搅拌稀释。
以卧螺离心机离心去除淀粉及粗纤维等,得葛根汁。
将葛根汁以柠檬酸2份调节PH至5.3±0.2,搅拌,同时加热至
90-95℃保温30分钟,静置澄清60分钟。排放静置后的底层沉淀物,将静置澄清后的上清液,用硅藻土或超滤膜过滤得滤液。
将滤液输入调配罐,加6000份纯净水调配,然后经过超高温灭菌机140℃灭菌,由无菌灌装设备灌装。121℃,20分钟杀菌后既得成品饮料。
实施例2
按重量份,取鲜葛根1800份,经清洗、粉碎、加6000份常温纯净水稀释。
以卧螺离心机离心去除淀粉及葛渣,得葛根汁。
将葛根汁以柠檬酸2份调节PH至5.3±0.2,搅拌,同时加热至
90-95℃保温30分钟,静置澄清60分钟。排放静置后的底层沉淀物,将静置澄清后的上清液冷却至55℃至60℃,加入1份果胶酶,搅拌酶解30分钟。之后加入蛋白酶1份,搅拌酶解30分钟。停止搅拌,保温静置澄清120min。排放静置后的底层沉淀物,用硅藻土或超滤膜过滤得滤液。
将滤液入调配罐,加6000份纯净水调配,然后经过超高温灭菌机140℃灭菌30s,80-85℃灌装、封盖,121℃,20分钟杀菌后既得成品饮料。

Claims (2)

1.一种葛根无糖饮料,其特征在于包括饮用水、葛根汁、柠檬酸;
其制备方法包括如下步骤:(1)按重量份每取1800份新鲜葛根,洗净后直接粉碎,加6000份饮用水搅拌,离心除去淀粉及残渣得葛根汁;(2)将葛根汁加入柠檬酸调节pH至5.3±0.2,搅拌,同时加热至90-95℃保温30分钟,静置澄清60分钟;(3)排放静置后的底层沉淀物,上清用硅藻土或超滤膜过滤得滤液;(4)将滤液加6000份纯净水调配,然后经过超高温灭菌机140℃灭菌30s,80-85℃灌装、封盖,121℃,20分钟杀菌后既得成品饮料;
步骤(2)与步骤(3)之间还有如下步骤:排放静置后的底层沉淀物,将静置澄清后的上清液冷却至55℃至60℃,加入1份果胶酶,搅拌30分钟;之后加入蛋白酶1份,搅拌30分钟;停止搅拌,保温静置澄清120min。
