本发明涉及一种保健年糕,尤其涉及一种补气健脾米酒年糕及其制备方法。
背景技术
年糕是一种传统美食,是用黏性大的米或米粉蒸熟制成,其主要成分为淀粉和水,过于单一,并且不易消化,保健功能不显著,为此本发明提供一种多口味、富有口感、营养均衡、保健功能突出的年糕食品。
发明内容
本发明克服了现有技术不足,提供了一种补气健脾米酒年糕及其制备方法。
本发明是通过以下技术方案实现的:
一种补气健脾米酒年糕,是由下述重量份的原料制成:
紫米150-180、红曲米30-40、薏米20-30、榴莲8-12、黄皮果10-15、乌枣6-8、沙参1-2、白术2-3、羊乳1-2、无花果3-4、化橘红2-3、土木香1-2、榆钱2-3、银耳粉10-12、乳清粉15-20、营养液3-4、甜米酒适量;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:3-4。
一种补气健脾米酒年糕制备方法,包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制10-15分钟,取出与去核的乌梅混合,加入1-2倍新鲜椰肉磨成浆,得到营养液;
(2)将紫米、红曲米、薏米拣杂淘洗干净,用甜米酒浸泡6-7小时后磨浆,压滤脱酒,得到混合米粉;
(3)将榴莲剖开取肉,黄皮果去皮去核,乌枣洗净去核,沙参洗净,全部混合打成浆,加入上述压滤脱酒得到的米酒,小火慢炖60-80分钟,冷冻干燥,得到冻干粉;
(4)将白术、羊乳、无花果、化橘红、土木香、榆钱混合粉碎,加入7-8倍清水,文火煎煮40-50分钟,过滤,滤液喷雾干燥,得到中药粉;
(5)将上述营养液、混合米粉、冻干粉、中药粉与剩余全部原料混合均匀,送入蒸锅,大火蒸熟,取出送入年糕成型机中挤压成型,灭菌包装,得到成品。
与现有技术相比,本发明的优点是:
本发明将紫米、红曲米、薏米用甜米酒浸泡后再加工制成年糕,使其酒香浓郁、风味独特、富有口感,添加榴莲、黄皮果能够促进食欲、健胃消食、健脾补气,成品年糕质地细腻、香甜糯软、营养美味、色香味俱佳。

下面结合实施例对本发明作进一步详细描述:
实施例:
一种补气健脾米酒年糕,是由下述重量(斤)的原料制成:
紫米180、红曲米40、薏米30、榴莲12、黄皮果15、乌枣8、沙参2、白术3、羊乳2、无花果4、化橘红3、土木香2、榆钱3、银耳粉12、乳清粉20、营养液4、甜米酒适量;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:4。
一种补气健脾米酒年糕制备方法,包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制15分钟,取出与去核的乌梅混合,加入1倍新鲜椰肉磨成浆,得到营养液;
(2)将紫米、红曲米、薏米拣杂淘洗干净,用甜米酒浸泡7小时后磨浆,压滤脱酒,得到混合米粉;
(3)将榴莲剖开取肉,黄皮果去皮去核,乌枣洗净去核,沙参洗净,全部混合打成浆,加入上述压滤脱酒得到的米酒,小火慢炖80分钟,冷冻干燥,得到冻干粉;
(4)将白术、羊乳、无花果、化橘红、土木香、榆钱混合粉碎,加入8倍清水,文火煎煮50分钟,过滤,滤液喷雾干燥,得到中药粉;
(5)将上述营养液、混合米粉、冻干粉、中药粉与剩余全部原料混合均匀,送入蒸锅,大火蒸熟,取出送入年糕成型机中挤压成型,灭菌包装,得到成品。

Claims (2)

1.一种补气健脾米酒年糕,其特征在于是由下述重量份的原料制成:
紫米150-180、红曲米30-40、薏米20-30、榴莲8-12、黄皮果10-15、乌枣6-8、沙参1-2、白术2-3、羊乳1-2、无花果3-4、化橘红2-3、土木香1-2、榆钱2-3、银耳粉10-12、乳清粉15-20、营养液3-4、甜米酒适量;
所述营养液是由下述重量比的原料制成:三七花:制首乌:乌梅=1:1:3-4。
2.一种如权利要求1所述的补气健脾米酒年糕制备方法,其特征在于包括以下步骤:
(1)将三七花、制首乌清洗干净,送入蒸锅,文火蒸制10-15分钟,取出与去核的乌梅混合,加入1-2倍新鲜椰肉磨成浆,得到营养液;
(2)将紫米、红曲米、薏米拣杂淘洗干净,用甜米酒浸泡6-7小时后磨浆,压滤脱酒,得到混合米粉;
(3)将榴莲剖开取肉,黄皮果去皮去核,乌枣洗净去核,沙参洗净,全部混合打成浆,加入上述压滤脱酒得到的米酒,小火慢炖60-80分钟,冷冻干燥,得到冻干粉;
(4)将白术、羊乳、无花果、化橘红、土木香、榆钱混合粉碎,加入7-8倍清水,文火煎煮40-50分钟,过滤,滤液喷雾干燥,得到中药粉;
