Abstract
本发明公开了一种盐乐运动饮料及其制备工艺,有下述重量百分比含量的成分制成:冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、二氧化碳5~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%、维生素C5~9%和维生素A5~9%,上述各组分之和为100%。能够稳定运动时人体的血清钾、镁的浓度;能够降低血清肌酸激酶和尿素氮,对减轻训练造成的肌肉微结构的损伤程度和促进休息后的恢复具有一定的效果;对受试人群体内的SOD水平有增强作用,具有一定抗氧化作用;改善受试人群运动后身体的疲劳感。

技术领域
本发明属于一种运动饮料及其制备工艺。
背景技术
运动饮料是继汽水、碳酸饮料、乳酸饮料、果汁饮料之后的第五代饮料。它具有前四代饮料所不具备的特殊功用,能供给人体对热能、水分和电解质和维生素的需求,防止运动中因失水和电解质缺乏引起的血液浓缩、口渴、循环系统负担加重和神经系统、肌肉功能失调(如抽筋)等症状。运动饮料各种成分及剂量配比都有特殊的科学依据和要求,必须符合人体运动时的机体代谢的特殊状况,补充运动中的消耗,能够消除运动疲劳,提高体力能力,保证运动中人群始终处在一个极好的体能状态。中国于1994年就颁布了运动饮料的国家标准(2000年修订),标准中将运动饮料定义为:营养素的组分和含量能适应运动员或参加体育锻炼、体力劳动人群的生理特点、特殊营养需要的软饮料。
近年来对运动饮料的研究受到关注,如CN1489943A专利申请报道了以海藻糖、大豆多肽、二十八醇、碱性电解质、维生素为主要成分的液体饮料。海藻糖是一种非还原性双糖,性质稳定,在体内降解缓慢,适于制作耐力型运动饮料。二十八醇作为一种长链脂肪族正构一元伯醇,安全无毒,能够增强体力和耐力,但其不溶于水,易溶于乙酸乙酯、丙酮、甲醇等有机溶剂,对于配制以水为溶剂的饮料来说,对其制备工艺要求很高。
所以,仍需要研发配方更加合理、更易于工艺生产的运动饮料,以适应不同类型运动者的需求。
发明内容
本发明的目的是提供一种盐乐运动饮料及其制备工艺。
本发明的目的是这样实现的,所述的一种盐乐运动饮料,有下述重量百分比含量的成分制成:
冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、二氧化碳5~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%、维生素C 5~9%和维生素A 5~9%,上述各组分之和为100%。本发明的配方优选冰糖16%、柠檬7%、葡萄糖9%、麦芽糖5%、果葡萄糖浆6%、食盐6%、玉米低聚肽粉8%、柠檬酸5%、安赛蜜5%、甜菊糖苷5%、食用香精7%、苯甲酸钠3%、维生素C 6%、维生素A 6%和二氧化碳6%。
1)上述的冰糖味甘、性平,入肺、脾经;有补中益气,和胃润肺的功效;冰糖养阴生津,润肺止咳,对肺燥咳嗽、干咳无痰、咯痰带血都有很好的辅助治疗作用;用于肺燥、肺虚、风寒劳累所致的咳喘、小儿疟疾、噤口痢、口疮、风火牙痛;2)果葡萄糖浆:组成:主要成分为果糖和葡萄糖。性状:无色无臭黏稠液体,是高甜度的淀粉酶。吸湿保湿性能好;3)玉米低聚肽粉,玉米低聚肽粉,其是以玉米蛋白粉为原料,经调浆、蛋白酶酶解、分离、过滤、喷雾干燥等工艺生产而成的。是一种新资源产品,可应用于降血压、醒酒护肝、增强免疫及增强运动能力;可采用北京中食海氏生物技术有限公司生产的产品;4)甜菊糖苷(Stevia)又称作甜菊糖(Stevia sugar),甜叶菊叶子提取物,不含糖分和热量;色泽白色至微黄色,口感适宜、无异味,是发展前景广阔的新糖源。甜菊糖苷是目前世界已发现并经我国卫生部批准使用的甜味剂,其天然低热值并且非常接近蔗糖口味。是继甘蔗、甜菜糖之外第三种有开发价值和健康推崇的天然甜味剂,被国际上誉为“世界第三糖源”5)二氧化碳,使饮料碳酸化,作为一种天然的防菌物质、用于延长饮料的保藏时间,保证饮料的口味和品质。
本发明的冰糖养阴生津,对运,以及葡萄糖、麦芽糖、果葡萄糖浆都具有胰岛素反应低的优势,吸收充分的同时可快速补充血糖,持续补充血糖,稳定血糖水平。麦芽糖是一种来源于优质玉米淀粉,经过生物转化得到的由3—10个葡萄糖分子通过糖苷键连接起来的碳水化合物,它可以在体内酶系的作用下降解为葡萄糖,为机体提供能量。大豆低聚肽在肠道吸收快,具有抗氧化活性,还能够促进运动人群瘦体重的增加,提高运动人群血清睾酮,降低运动人群主观疲劳等级,降低运动人群运动后血清肌酸激酶水平,保护细胞膜。
适量的食盐是根据运动者运动时机体的丢失量而设计的,对保持体液平衡、维持血液中细胞活力、防止肌肉疲劳、保证神经冲动的传导有着重要的作用,并且可以中和运动代谢中产生的乳酸等酸性代谢产物。
在本发明的运动饮料中,还可以加入维生素A、维生素C。其中,1)补充人体的维生素A能使运动人员维持正常视觉功能,维护上皮组织细胞的健康和促进免疫球蛋白的合成;2)维生素C则用以清除自由基,提高免疫功能,减少其对机体的伤害,延缓疲劳的发生。
本发明的运动饮料渗透压为等渗或偏低渗透,其渗透压为200~320毫渗/千克,可以保证水分、糖、电解质和维生素被机体快速吸收。
本发明的运动饮料,是将配比为:冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%、维生素C 5~9%和维生素A 5~9%的各组分混合后溶于纯净水,滤去不溶物,灌装,加压添加二氧化碳5~9%,灭菌即可。
本发明的运动饮料的具体制备方法是:将冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%各组分在60-80℃下加热搅拌直至溶解,冷却过滤除杂质后加入维生素C 5~9%和维生素A 5~9%混合,搅拌均匀直至溶解,灌装后加压充入二氧化碳5~9%、分装成小瓶,然后灭菌出品即可饮用。
本发明的运动饮料通过改变各成分的配比,以适用不同类型运动者的需求。
通过人体实验我们发现:本发明的运动饮料使人体在1~2小时的长时间不间断有氧运动中,维持血糖在80mg/dL的较高的水平,且不引起血液浓缩;稳定运动过程中血液中乳酸水平,乳酸水平保持在2mmol/L以下;有利于运动后心率的恢复;能够稳定运动时人体的血清钾、镁的浓度;能够降低血清肌酸激酶和尿素氮,对减轻训练造成的肌肉微结构的损伤程度和促进休息后的恢复具有一定的效果;对受试人群体内的SOD水平有增强作用,具有一定抗氧化作用;改善受试人群运动后身体的疲劳感,体力精力更加充沛。

下面结合实施例对本发明进行详细描述:
实施例1
将冰糖16%、柠檬7%、葡萄糖9%、麦芽糖5%、果葡萄糖浆6%、食盐6%、玉米低聚肽粉8%、柠檬酸5%、安赛蜜5%、甜菊糖苷5%、食用香精7%、苯甲酸钠3%各组分在70℃下加热搅拌直至溶解,冷却过滤除杂质后加入维生素C 6%和维生素A 6%混合,搅拌均匀直至溶解,灌装后加压充入二氧化碳6%、分装成小瓶,然后灭菌出品即可饮用。
实施例2
将冰糖13%、柠檬6%、葡萄糖8%、麦芽糖6%、果葡萄糖浆7%、食盐5%、玉米低聚肽粉7%、柠檬酸6%、安赛蜜6%、甜菊糖苷6%、食用香精7%、苯甲酸钠4%各组分在60-80℃下加热搅拌直至溶解,冷却过滤除杂质后加入维生素C 7%和维生素A 5%混合,搅拌均匀直至溶解,灌装后加压充入二氧化碳7%、分装成小瓶,然后灭菌出品即可饮用。
Claims (3)
1.一种盐乐运动饮料,有下述重量百分比含量的成分制成:冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、二氧化碳5~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%、维生素C 5~9%和维生素A 5~9%,上述各组分之和为100%。
2.根据权利要求1所述的盐乐运动饮料,其特征在于冰糖16%、柠檬7%、葡萄糖9%、麦芽糖5%、果葡萄糖浆6%、食盐6%、玉米低聚肽粉8%、柠檬酸5%、安赛蜜5%、甜菊糖苷5%、食用香精7%、苯甲酸钠3%、维生素C 6%、维生素A 6%和二氧化碳6%。
3.一种盐乐运动饮料的制备工艺,其特征在于将冰糖13~20%、柠檬5~9%、葡萄糖7~10%、麦芽糖5~9%、果葡萄糖浆5~9%、食盐4~8%、玉米低聚肽粉6~9%、柠檬酸5~9%、安赛蜜5~9%、甜菊糖苷5~9%、食用香精6~9%、苯甲酸钠3~8%各组分在60-80℃下加热搅拌直至溶解,冷却过滤除杂质后加入维生素C 5~9%和维生素A 5~9%混合,搅拌均匀直至溶解,灌装后加压充入二氧化碳5~9%、分装成小瓶,然后灭菌出品即可饮用。
