背景技术
随着我国经济的发展,人民生活水平得到了提高但健康问题却日益突出。目前我国肥胖、超重,微生态失衡的人群比例显著上升,非传染性疾病糖尿病、心脏病、高血脂、高血压和癌症已成为我国公共健康的重大挑战。人们迫切需要营养健康的功能性饮料以补充身体所需,因此开发具有功能性的饮料迫在眉睫,同时也具有非常广大的市场。
沙棘,又名醋柳、酸柳柳和黄酸刺等,是一种在地球上生存超过两亿年的植物,其在沙漠和高寒山区的恶劣环境中也能够生存。沙棘果实营养丰富,据测定其果实中含有多种维生素、脂肪酸、微量元素、亚油素、沙棘黄酮、超氧化物等活性物质和人体所需的各种氨基酸,约含有190多种对人体有益的生物活性成分,并且配比科学合理。其中维生素C含量极高,每100克果汁中,维生素C含量可达到825—1100毫克,是猕猴桃的2—3倍,素有维生素C之王的美称。含糖7.5%—10%,含酸3%—5%。沙棘具有很高的药用价值,可降低胆固醇,缓解心绞痛发作,还有防治冠状动脉粥样硬化性心脏病的作用;有祛痰、止咳、平喘和治疗慢性气管炎的作用;能治疗胃和十二指肠溃疡以及消化不良等,对慢性浅表性胃炎、萎缩性胃炎、结肠炎等病症疗效。
传统的沙棘饮料大多以蔗糖、葡萄糖浆作为甜味剂,由于它们在人体内吸收后被转化为葡萄糖,从而导致糖尿病患者及肥胖病人不能饮用。
发明内容
本发明的目的旨在提供一种健康保健的沙棘饮料,该饮料既能充分利用沙棘中的各种有益药效,同时又能在保证饮料口感的基础上降低饮料中的能量值,从而为中老年人、肥胖病人及糖尿病患者的饮用提供更好的药用效果。
为解决传统沙棘饮料中甜味剂转化为葡萄糖的问题,本发明采用了AK糖和阿斯巴甜两种甜味剂替换蔗糖和葡萄糖浆。AK糖又称为乙酰磺胺酸钾,是一种安全的食品添加剂,易溶于水,20℃时溶解度为27克。其主要特点是增加食品甜味,没有营养,口感好,无热量,具有在人体内不代谢、不吸收,对热和酸稳定性好等特点,是目前世界上第四代合成甜味剂。它和其它甜味剂混合使用能产生很强的协同效应,一般浓度下可增加甜度30%-50%。 阿斯巴甜又称甜味素、蛋白糖,其具有甜味高和热量低等特点,与香精混合,具有极佳的增效性,尤其是对酸性的柑桔、柠檬、柚等,能使香味持久、减少芳香剂用量。
为实现以上目的,本发明技术方案提供一种沙棘饮料,其特征在于由以下重量份原料组成500ml的沙棘饮料:沙棘原浆15-150g,白砂糖20-25g,甜味剂0.16-0.18g,酸制剂0.95-1.25g,柠檬酸钠0.1-0.2g,山梨酸钾0.1-0.2g,其余用纯净水补充。
柠檬酸钠是一种弱酸强碱盐,具有优良的缓凝性能及稳定性能,并且与柠檬酸混合形成较强的pH缓冲剂,从而在沙棘饮料中缓冲pH范围变化。
山梨酸钾作为一种防腐剂能有效地抑制霉菌,酵母菌和好氧性细菌的活性,从而有效的延长饮料保存时间。
在沙棘饮料中还可包括沙棘稳定剂1.15-1.35g,所述的沙棘稳定剂的原料为黄原胶和单甘脂,其配比为3:1。
黄原胶又称黄胶,是目前国际上集增稠、悬浮、乳化、稳定于于一体.性能最优越的生物胶,其对不溶性固体具有良好的悬浮作用,在水中能快速溶解,有很好的水溶性,具有低浓度高粘度的特性。因此黄原胶作为一种悬浮增稠剂在沙棘饮料中用于防止各原料之间的分层。
在沙棘饮料中还可包括香精0.03-0.05g,其中香精包括沙棘香精或其他香精,用于增强饮料的香味浓度。
甜味剂包括AK糖和阿斯巴甜中的一种或两种,用于增加饮料甜度,减轻人体对酸制剂的酸度感,并增强了香精的香味浓度。
酸制剂包括柠檬酸和苹果酸中的一种或两种,用于调节饮料酸度口感,增强饮料的酸甜口感。
本发明通过改善传统沙棘饮料的配方实现了一种既保证饮料药用保健效果又利于中老年人、肥胖病人及糖尿病患者饮用的饮料。长期饮用对于改善患者病情具有积极的医用疗效,考虑到现在中国广大肥胖患者和糖尿病患者的数量,该沙棘饮料具有广阔的市场前景,其推出必然带来良好的经济效益和社会效益。
具体实施方式:
以下结合实施例对本发明作进一步说明。
实施例1:500ml的沙棘饮料原料含量为沙棘原浆100g,白砂糖22g,AK糖0.17g,柠檬酸1g,柠檬酸钠0.15g,,山梨酸钾0.15g,纯净水补足;其中AK糖所为甜味剂添加到沙棘饮料中,AK糖增加了饮料的甜味,没有营养,口感好,无热量,具有在人体内不代谢、不吸收的特点;柠檬酸作为酸制剂添加到沙棘饮料中,增强饮料的酸甜口感。
实施例2:500ml的沙棘饮料原料含量为沙棘原浆100g,白砂糖22g,阿斯巴甜0.17g,苹果酸1g,柠檬酸钠0.15g,,山梨酸钾0.15g,纯净水补足;其中阿斯巴甜所为甜味剂添加到沙棘饮料中,其具有甜味高和热量低等特点,与香精混合,具有极佳的增效性;苹果酸作为酸制剂添加到沙棘饮料中,增强饮料的酸甜口感。
实施例3:500ml的沙棘饮料原料含量为沙棘原浆100g,白砂糖22g,AK糖0.085 g,阿斯巴甜0.085g,苹果酸0.4g,柠檬酸0.7g,柠檬酸钠0.15g,,山梨酸钾0.15g,纯净水补足。
实施例4:500ml的沙棘饮料原料含量为沙棘原浆100g,白砂糖22g,AK糖0.085 g,阿斯巴甜0.085g,沙棘稳定剂1.25g,苹果酸0.4g,柠檬酸0.7g,柠檬酸0.7g,柠檬酸钠0.15g,,山梨酸钾0.15g,纯净水补足其中沙棘稳定剂的原料为黄原胶和单甘脂,其配比为3:1,用于增稠悬浮防止各原料之间的分层。
实施例4:500ml的沙棘饮料原料含量为沙棘原浆100g,白砂糖22g,AK糖0.085 g,阿斯巴甜0.085g,沙棘稳定剂1.25g,苹果酸0.4g,柠檬酸0.7g,柠檬酸钠0.15g,,山梨酸钾0.15g,沙棘香精0.04g,,纯净水补足;其中沙棘香精用于增强饮料的香味浓度。
实施例5:500ml的沙棘饮料原料含量为沙棘原浆15g,白砂糖20g,AK糖0.08 g,阿斯巴甜0.08g,沙棘稳定剂1.15g,苹果酸0.35g,柠檬酸0.6g,柠檬酸钠0.1g,,山梨酸钾0.1g,沙棘香精0.03g,纯净水补足。
实施例6:500ml的沙棘饮料原料含量为沙棘原浆150g,白砂糖25g,AK糖0.09g,阿斯巴甜0.09g,沙棘稳定剂1.35g,苹果酸0.45g,柠檬酸0.8g,柠檬酸钠0.2g,,山梨酸钾0.2g,沙棘香精0.05g,纯净水补足。
显然,本发明的上述实施例仅仅是为清楚地说明本发明所作的举例,而并非是对本发明的实施方式的限定。对于所属领域的普通技术人员来说,在上述说明的基础上还可以做出其它不同形式的变化或变动。这里无需也无法对所有的实施方式予以穷举。而这些属于本发明的精神所引伸出的显而易见的变化或变动仍处于本发明的保护范围之中。
Claims (5)
1.一种沙棘饮料,其特征在于由沙棘原浆、甜味剂等原料配制而成,其中各原料含量为沙棘原浆15-150g,白砂糖20-25g,甜味剂0.16-0.18g,酸制剂0.95-1.25g,柠檬酸钠0.1-0.2g,山梨酸钾0.1-0.2g,纯净水325-465g。
2.如权利要求1所述的沙棘饮料,其特征在于所述的沙棘饮料还包括沙棘稳定剂1.15-1.35g,所述的沙棘稳定剂的原料为黄原胶和单甘脂,其配比为3:1,用于增稠悬浮作用。
3.如权利要求1或2所述的沙棘饮料,其特征在于所述的沙棘饮料还包括香精0.03-0.05g,用于增强饮料的香味浓度。
4.如权利要求1所述的沙棘饮料,其特征在于所述的甜味剂为AK糖和阿斯巴甜中的一种或两种,用于增加饮料甜度,减轻人体对酸制剂的酸度感,并增强了香精的香味浓度。
5.如权利要求1所述的沙棘饮料,其特征在于所述的酸制剂为柠檬酸和苹果酸中的一种或两种,用于调节饮料酸度口感,增强饮料的酸甜口感。
