本发明属于食用饮料的制备技术领域,特别涉及一种葛仙米粉剂固体饮品及其制备方法。
背景技术
葛仙米是蓝藻门,念珠藻科,是一种多细胞群体,其主要形状为球形,少数为纺锤形、椭圆行、哑铃形或扁平状。古名天仙菜、天仙米,俗称水木耳。葛仙米食用药用历史悠久,具有丰富的营养价值。据史料记载,葛仙米具有明目益气、解热清膈、利肠胃、久食延年、消除疲劳、收敛、治夜盲症等功效。现在的科学研究已经确认葛仙米中蛋白质含量高,且其中的氨基酸品种齐全,结构合理,基本符合FAO/WHO专家委员会于1973年推普的人体必需氨基酸模式。同时它又是一种低脂肪含量食品,粗脂肪含量仅为8.11%,可减少人体胆固醇的合成,以防治心血管疾病。此外,葛仙米还富含多糖、多种维生素,类胡萝卜素、藻胆素、微量元素等营养成分。维生素C含量接近鲜枣,比山楂高5倍多,比柑桔高5倍,维生素B1、B2高于一般菌藻类,含矿物质15种,最丰富的有磷、硫、钙、钾、铁等,较少的有铅、硅、镁、钡、锗等,微量元素有锌、铜、锰,还有淀粉和糖类,其含钙量高于一般蔬菜,是一种极好的天然富钙营养食品。目前,葛仙米已经被端上了餐桌,但更加方便快捷的食用方法却很少。因此,开发一种方便快捷的葛仙米固体饮品尤其重要。本发明专利不同于CN104323342A“一种葛仙米营养粉、制备方法与应用”,该专利的葛仙米营养粉是一种可冲泡的即食食品和一种可添加到面制品中的营养粉,葛仙米营养成分含量较少,营养成分中有大量的黄豆粉、水果粉、黄芪红枣枸杞提取粉,更侧重于营养而没有专注于葛仙米的营养。
发明内容
本发明的目的在于提供一种葛仙米粉剂固体饮品及其制备方法,改善现有营养固体饮品中维生素种类少,饮用口感差,制备方法落后,氨基酸含量低等问题,丰富葛仙米饮料品种,拓宽葛仙米的精深加工途径,更加方便的摄取葛仙米中的营养,可以在保证口感的基础上充分吸收葛仙米的营养。
为实现上述目的,本发明提供如下技术方案:一种葛仙米粉剂固体饮品,按重量份包括以下组分:葛仙米干粉15-25份,葛仙米藻胆蛋白粗提液5-10份,木糖醇粉3-6份,果糖0.1-0.3份,苹果水果粉2-3份,麦芽糊精1-3份,黄原胶0.1-0.5份,辛烯基琥珀酸淀粉钠0.02-0.05份,中链甘油三酯0.01-0.03份,蔗糖脂肪酸酯0.05-0.1份,抗坏血酸棕榈酸酯0.01-0.05份。
上述一种葛仙米粉剂固体饮品的制备方法包括以下步骤:
1).葛仙米藻胆蛋白粗提液和葛仙米干粉的制备方法:
(1)取新鲜葛仙米,粒径大于等于5mm,清洗后晾干表面水分,用浓度为0.001mol/L的磷酸盐缓冲液浸提;
(2)将步骤(1)处理过的葛仙米放置于-9--3℃的环境下冷冻处理1.5-2.5小时后,取出后于室温下放置10-15min,反复冻融处理3-5次,将冻融处理后的葛仙米在0.02-0.04Mpa的压力下进行压榨,可以获得葛仙米藻胆蛋白粗提液和滤渣;
(3)将步骤(2)所述葛仙米藻胆蛋白粗提液用浓度为0.5mol/L的硫酸铵盐析,可使其纯度得到提高,达到60%-62%;
(4)将步骤(2)所述滤渣在50-55℃下烘干,将烘干固体用低温粉碎机粉碎成100-150目的细粉,得到葛仙米干粉。
优选的,步骤(2)中的反复冻融的最佳条件是:冷冻温度为-6℃,冷冻时间为2.0小时,取出后于室温下放置12min。
优选的,步骤(4)中低温粉碎机粉碎温度控制在45℃以下。
2).称取葛仙米干粉15-25份,葛仙米藻胆蛋白粗提液5-10份,木糖醇粉3-6份,果糖0.1-0.3份,苹果水果粉2-3份,麦芽糊精1-3份,黄原胶0.1-0.5份,辛烯基琥珀酸淀粉钠0.02-0.05份,中链甘油三酯0.01-0.03份,蔗糖脂肪酸酯0.05-0.1份,抗坏血酸棕榈酸酯0.01-0.05份混合均匀,得到混合液;
3).将步骤2)得到的混合液在65℃、28Mpa的压力下均质,均质4次;
4).将步骤3)均质后的混合液冷冻12h,然后干燥,制得混合料,将混合料用低温高速粉碎法进行粉碎,得到葛仙米粉剂固体饮品;
5).将步骤4)得到的葛仙米粉剂固体饮品用食品级包装材料进行自动罐装、压盖、加热、打码、打包装箱,放入通风干燥环境中储存。
优选的,步骤4)所述冷冻温度为-18℃;所述干燥条件为装载量按15kg/m2,工作压力65Pa,解析压力35Pa,温度35-45℃;所述粉碎的粒度为160μm。
本专利技术中各种成分物质的有益效果:
葛仙米:葛仙米俗称天仙米,念珠藻科,含18种氨基酸,其中含人体必需的八种氨基酸,干物质总蛋白高达56%左右,粗脂肪8.11%,碳水化合物12.69%,灰分10.88%,叶绿素30.98mg/g,抗坏血酸5.50mg/g,维生素C含量接近鲜枣,比山楂高5倍多,比柑桔高5倍;维生素B1、B2高于一般菌藻类:含矿物质15种,最丰富的有磷、硫、钙、钾、铁等,较少的有铅、硅、镁、钡、锗等,微量元素有锌、铜、锰,还有淀粉和糖类,其含钙量高于一般蔬菜,是一种极好的天然富钙营养食品。
木糖醇粉:木糖醇粉促进肝糖元合成,供细胞以营养和能量,且不会引起血糖值升高,消除糖尿病人服用后的三多症状(多食、多饮、多尿),是最适合糖尿病患者食用的营养性的食糖代替品,对肝病患者有改善肝功能和抗脂肪肝的作用,治疗乙型迁延性肝炎,乙型慢性肝炎及肝硬化有明显疗效,是肝炎并发症病人的理想辅助药物,每克木糖醇仅含有2.4卡路里热量,比其他大多数碳水化合物的热量少40%,因而木糖醇可被应用于各种减肥食品中,作为高热量白糖的代用品,不被口腔内细菌发酵利用,能抑制细菌生长及酸的产生,可防止龋齿。
果糖:一种提炼自各种水果和谷物,全天然、甜味浓郁的新糖类,因不易导致高血糖,不易产生脂肪堆积而发胖,更不会产生龋齿,而被更多的人们所认识,果糖主要产自天然的水果和谷物之中,具有口感好、甜度高、升糖指数低以及不易导致龋齿等优点。果糖的甜度是蔗糖的1.8倍,是所有天然糖中甜度最高的糖,所以在同样的甜味标准下,果糖的摄入量仅为蔗糖的一半。
苹果水果粉:以优质的苹果为原料,最大限度的保留了原有果汁内的营养,同时保存了香味与味道。粉状,流动性好,口感佳,易溶解,易保存。
麦芽糊精:用于增加粘稠度、增强产品分散性和溶解性麦芽糊精有较好的乳化作用和增稠效果。在豆奶、速溶麦片、麦乳精中用以增稠、吸收异味、改善口感、延长保质期;在奶茶、果晶、速溶茶、固体茶、植脂奶、咖啡伴侣中,用以增加醇厚、细腻、味香浓郁的口感及降低成本;在椰奶汁、花生杏仁露、各种乳酸饮品中,增强乳化力,使产品稳定性好、不易沉淀;在各色罐头或汤羹汁类食品中,用于增稠、改善结构、外观和风味。
黄原胶:黄原胶是国际上集增稠、悬浮、乳化、稳定于一体.性能最优越的生物胶,黄原胶的分子侧链末端含有丙酮酸基团的多少,对其性能有很大影响,黄原胶具有长链高分子的一般性能,但它比一般高分子含有较多的官能团,在特定条件下会显示独特性能。
辛烯基琥珀酸淀粉钠:具有稳定性能的乳胶体,辛烯基具有疏水亲油性,用作乳浊液稳定剂,可代替阿拉伯胶。
中链甘油三酯:中链甘油三酯仅由饱和脂肪酸构成,凝固点低,室温下为液体,粘度小,与大豆油比较,完全是无臭、无色的透明液体,与普通的油脂和氢化油脂相比,中链甘油三酯不饱和脂肪酸的含量极低,氧化稳定性非常好,其碘值不超过0.5。MCT在高温和低温下特别稳定。
蔗糖脂肪酸酯:乳化剂,亦可作保鲜剂,高品质的脂肪酸蔗糖酯无臭无味无毒,是一种良好的食品乳化剂,同时因对眼睛、皮肤等无刺激,也广泛用于医药和化妆品的生产,生物降解性强,因此残留物无污染。
抗坏血酸棕榈酸酯:抗坏血酸棕榈酸酯,可作抗氧化剂,可用于含油脂食品、方便面、食用油脂和氢化植物油。
与现有技术相比,本发明的有益效果是:
1、通过上述技术方案,实现了制备最优配比的葛仙米粉剂固体饮品,能够方便人们快速获取葛仙米的营养价值,通过提取和精制,充分利用了葛仙米的成分,使葛仙米粉剂固体饮品优于单纯服用葛仙米所获得的营养,并且提升了口感,本发明用40℃以下的水冲调即饮;
2、葛仙米固体饮料采用低温粉碎机粉碎,保证了葛仙米中营养成分不会因高温而发生改变,制备过程先进,不添加对人有害的添加剂和防腐剂,丰富了葛仙米饮料的品种,拓宽了葛仙米的精深加工途径;
3、葛仙米藻胆蛋白粗提液用浓度为0.5mol/L的硫酸铵盐析,可使其纯度得到提高,达到60%-62%。

1).葛仙米藻胆蛋白粗提液和葛仙米干粉的制备方法:
(1)取新鲜葛仙米,粒径大于等于5mm,清洗后晾干表面水分,用浓度为0.001mol/L的磷酸盐缓冲液浸提;
(2)将步骤(1)处理过的葛仙米放置于-6℃的环境下冷冻处理2.0小时后,取出后于室温下放置12min,反复冻融处理3-5次,将冻融处理后的葛仙米在0.02-0.04Mpa的压力下进行压榨,可以获得葛仙米藻胆蛋白粗提液和滤渣;

(2)将步骤(1)处理过的葛仙米放置于-6℃的环境下冷冻处理2.0小时后,取出后于室温下放置12min,反复冻融处理3-5次,将冻融处理后的葛仙米在0.02-0.04Mpa的压力下进行压榨,可以获得葛仙米藻胆蛋白粗提液和滤渣;
(3)将步骤(2)所述葛仙米藻胆蛋白粗提液用浓度为0.5mol/L的硫酸铵盐析,可使其纯度得到提高,达到60%-62%;
(4)将步骤(2)所述滤渣在50-55℃下烘干,将烘干固体用低温粉碎机在温度40℃粉碎成100-150目的细粉,得到葛仙米干粉。
2).称取葛仙米干粉20份,葛仙米藻胆蛋白粗提液7.5份,木糖醇粉4份,果糖0.3份,苹果水果粉2份,麦芽糊精2份,黄原胶0.3份,辛烯基琥珀酸淀粉钠0.03份,中链甘油三酯0.01份,蔗糖脂肪酸酯0.06份,抗坏血酸棕榈酸酯0.03份混合均匀,得到混合液;
3).将步骤2)得到的混合液在65℃、28Mpa的压力下均质,均质4次;
4).将步骤3)均质后的混合液在冷冻温度为-18℃条件下,冷冻12h,然后在装载量按15kg/m2,工作压力65Pa,解析压力35Pa,温度35-45℃的条件下干燥,制得混合料,将混合料用低温高速粉碎法进行粉碎,得到葛仙米粉剂固体饮品,粉碎的粒度为160μm。
5).将步骤4)得到的葛仙米粉剂固体饮品用食品级包装材料进行自动罐装、压盖、加热、打码、打包装箱,放入通风干燥环境中储存。
实施例6:
上述一种葛仙米粉剂固体饮品的制备方法,包括以下步骤:
1).葛仙米藻胆蛋白粗提液和葛仙米干粉的制备方法:
(1)取新鲜葛仙米,粒径大于等于5mm,清洗后晾干表面水分,用浓度为0.001mol/L的磷酸盐缓冲液浸提;
(2)将步骤(1)处理过的葛仙米放置于-6℃的环境下冷冻处理2.0小时后,取出后于室温下放置12min,反复冻融处理3-5次,将冻融处理后的葛仙米在0.02-0.04Mpa的压力下进行压榨,可以获得葛仙米藻胆蛋白粗提液和滤渣;
(3)将步骤(2)所述葛仙米藻胆蛋白粗提液用浓度为0.5mol/L的硫酸铵盐析,可使其纯度得到提高,达到60%-62%%;
(4)将步骤(2)所述滤渣在50-55℃下烘干,将烘干固体用低温粉碎机在温度40℃粉碎成100-150目的细粉,得到葛仙米干粉。

Claims (10)
1.一种葛仙米粉剂固体饮品,其特征在于,按重量份包括以下组分:葛仙米干粉15-25份,葛仙米藻胆蛋白粗提液5-10份,木糖醇粉3-6份,果糖0.1-0.3份,苹果水果粉2-3份,麦芽糊精1-3份,黄原胶0.1-0.5份,辛烯基琥珀酸淀粉钠0.02-0.05份,中链甘油三酯0.01-0.03份,蔗糖脂肪酸酯0.05-0.1份,抗坏血酸棕榈酸酯0.01-0.05份。
2.根据权利要求1所述一种葛仙米粉剂固体饮品,其特征在于:葛仙米干粉20份,葛仙米藻胆蛋白粗提液7.5份,木糖醇粉4.5份,果糖0.2份,苹果水果粉2.5份,麦芽糊精2份,黄原胶0.3份,辛烯基琥珀酸淀粉钠0.03份,中链甘油三酯0.02份,蔗糖脂肪酸酯0.07份,抗坏血酸棕榈酸酯0.03份。
3.根据权利要求1或2所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,包括以下步骤:
1).葛仙米藻胆蛋白粗提液和葛仙米干粉的制备方法:
(1)取新鲜的葛仙米,清洗后晾干表面水分,用磷酸盐缓冲液浸提;
(2)将步骤(1)处理过的葛仙米反复冻融处理3-5次,将冻融处理后的葛仙米在0.02-0.04Mpa的压力下进行压榨,可以获得葛仙米藻胆蛋白粗提液和滤渣;
(3)将步骤(2)所得葛仙米藻胆蛋白粗提液用硫酸铵盐析,可使其纯度得到提高;
(4)将步骤(2)所得滤渣烘干,粉碎成细粉,得到葛仙米干粉;
2).按重量称取所述葛仙米干粉,葛仙米藻胆蛋白粗提液,木糖醇粉,果糖,苹果水果粉,麦芽糊精,黄原胶,辛烯基琥珀酸淀粉钠,中链甘油三酯,蔗糖脂肪酸酯和抗坏血酸棕榈酸酯后混合均匀,得到混合液;
3).将得到的所述混合液均质4次得到均质混合液;
4).将所述均质混合液冷冻12h,然后干燥,制得混合料,将所述混合料用低温高速粉碎法进行粉碎,得到葛仙米粉剂固体饮品。
5).将步骤4)得到的葛仙米粉剂固体饮品用食品级包装材料进行自动罐装、压盖、加热、打码、打包装箱,放入通风干燥环境中储存。
4.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述步骤(1)中新鲜的葛仙米粒径大于等于5mm,所述磷酸盐缓冲液浓度为0.001mol/L。
5.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述步骤(2)中反复冻融处理条件为于-9--3℃的环境下冷冻处理1.5-2.5小时后,取出后于室温下放置10-15min。
6.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述硫酸铵的浓度为0.5mol/L,所述纯度可提高到60%-62%。
7.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述滤渣在50-55℃烘干后低温粉碎得到葛仙米干粉,所述粉碎粒度为100-150目。
8.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述均质条件为温度为65℃,压力为28Mpa。
9.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述步骤4)中冷冻12h的温度为-18℃。
10.根据权利要求3所述的一种葛仙米粉剂固体饮品的制备方法,其特征在于,所述步骤4)中干燥条件为装载量按15kg/m2,工作压力65Pa,解析压力35Pa,温度35-45℃;所述粉碎的粒度为160μm。
