大量的研究表明,杜仲叶内含有内脂、香豆精、生物碱、多糖、还原糖、有机酸、蛋白质、氨基酸和杜仲胶等成分,其中有效成分有:松脂醇二葡萄糖甙、桃叶珊瑚甙、绿原酸、杜仲胶、筋骨草甙、杜仲甙、山奈酚、咖啡酸、酒石酸、还原糖、黄酮化合物、生物碱等。杜仲叶中主要的降血压成分松脂醇二葡萄糖甙的含量为0.12%-0.23%,抗菌利尿利胆成分绿原酸的含量为0.68%-2.14%,扩张冠状动脉血管、增加心脑血管流量的成分杜仲黄酮的含量为1.75%-2.33%,提神、醒脑的主要成分咖啡酸汁含量为11.1%-12.9%,此外桃叶珊瑚甙还具有明显的保肝、抗病毒等功能。
目前以杜仲叶为核心原料的功能性饮料较多,但是缺乏一种适合于长期从事智力活动的亚健康人群的饮品,要求这种饮品在外观、色泽、口感独特时尚,并具有相应的保健功能。

本发明提出了一种杜仲开胃保健饮品的制备方法,将杜仲和神曲、麦芽、山楂等开胃食品相结合,经过特殊工艺处理,使得饮品店外观、色泽和口味均具有类似咖啡的特征,并具有杜仲的保健功能。
本发明的主要内容为:
一种杜仲开胃保健饮品的制备方法,包括以下步骤:
[1] 选神曲、麦芽、山楂若干焙炒为焦黄色的焦神曲、焦麦芽、焦山楂备用;
[2] 将干燥杜仲叶15-20份、焦神曲10-20份、焦麦芽10-20份和焦山楂20-30份置于提取罐中,加入1000份的去离子水,加热煮沸保持5-10分钟,降温至80℃,保持恒温2-3小时,过滤残渣后得到混合提取液;
[3] 将混合提取液置于化糖锅中,加入白沙糖60份,蜂蜜10份,加热煮沸保持20-30分钟,待白沙糖、蜂蜜充分溶解,过滤残渣后泵入配料缸;
[4]配料缸中加入柠檬酸0.5-1.0份,山梨酸钾0.2-0.5份。

2、本发明的制作工艺考究,制备的饮品在色泽、外观和口感具有类似于咖啡的特点,适应了年轻人追求时尚的特点。咖啡是现代人生活的时尚品,尤其受到从事智力活动较多的年轻人的青睐,但是过多的喝咖啡会增加钙质排泄,导致骨质疏松症,此外咖啡对血脂肪、血压、心脏病与癌症的发生率也有一定的影响。本发明将神曲、麦芽、山楂等焙炒为焦黄色,并经提取和过滤,使得饮品中含有类似于咖啡的褐色细微颗粒,增加了口感,并使得色泽为咖啡色透明液体。此外由于杜仲叶自身就含有咖啡酸汁,自身具有咖啡的口感,在生产工艺中根据口感需求还增加了咖啡香精,使得产品在在外观、色泽和口味上都有类似于咖啡的饮品,并能克服咖啡的上述不足,此外还具有其他辅助保健功能,满足不同人群的保健需求。
3、本发明对杜仲叶、焦神曲、焦山楂、焦麦芽采取高、低温保持相结合的提取方式,确保了对原料的充分提取。
具体实施方式
本发明杜仲开胃饮品的制备方法如下:
一、原料制备
选用当年十月采摘的杜仲叶片,阴干或通风干燥设备烘干,杜仲叶呈深绿色,无杂质、无霉变。选取上好的神曲、麦芽、山楂若干,焙炒为焦黄色的焦神曲、焦麦芽、焦山楂备用。
二、提取
将干燥杜仲叶片15 -20份,经焙炒的焦神曲10-20份、焦麦芽10-20份和焦山楂20-30份置于提取罐中,加入1000份的去离子水,加热至100℃,煮沸,恒温5-10分钟,降温至80℃,保持恒温2-3小时,过滤残渣后得到混合提取液,置于不锈钢储罐中备用。
三、化糖
从不锈钢储罐中抽取适量的杜仲叶,焦神曲,焦麦芽、焦山楂混合提液至化糖锅,通常选择500-600份,加入白沙糖60份,蜂蜜10 份,加热至100℃,保持恒温20-30分钟,待白沙糖、蜂蜜充分溶解后,经板框过滤器泵入不锈钢配料缸内。
四、配料
将储罐中剩余的混合提取液泵入步骤三中的不锈钢配料缸内,同时加入柠檬酸0.5-1.0份,山梨酸钾0.2-0.5份,根据咖啡口感的要求,还可以在不锈钢配料缸中添加咖啡香精0.5-1份。
本发明制备的杜仲开胃保健饮品,总糖含量5.0-8.0%,PH值为3.2-4.5,色泽为咖啡色透明液体,具有杜仲叶的独特香气和淡咖啡味,依据本专利制备方法,已经研制成功了杜仲开胃露,表1为11人小组对该饮品的感官评价结果。

实验表明,经常饮用该饮品,可达到健脾开胃、增进食欲、醒脑提神、抗疲功效,非常适用于长期从事智力活动的亚健康人群。
Claims (6)
1.一种杜仲开胃保健饮品的制备方法,其特征在于,包括以下步骤:
[1]选神曲、麦芽、山楂若干焙炒为焦黄色的焦神曲、焦麦芽、焦山楂备用;
[2]将干燥杜仲叶15-20份、焦神曲10-20份、焦麦芽10-20份和焦山楂20-30份置于提取罐中,加入1000份的去离子水,加热煮沸保持5-10分钟,降温至80℃,保持恒温2-3小时,过滤残渣后得到混合提取液;
[3]将混合提取液置于化糖锅中,加入白砂糖60份,蜂蜜10份,加热煮沸保持20-30分钟,待白砂糖、蜂蜜充分溶解,过滤残渣后泵入配料缸;
[4]配料缸中加入柠檬酸0.5-1.0份,山梨酸钾0.2-0.5份。
2.根据权利要求1所述的杜仲开胃保健饮品的制备方法,其特征在于,所述的步骤[4]还包括在配料缸中添加咖啡香精0.5-1份。
3.根据权利要求1所述的杜仲开胃保健饮品的制备方法,其特征在于,制备所得饮品的总糖含量5.0-8.0%,pH值为3.2-4.5。
4.根据权利要求1所述的杜仲开胃保健饮品的制备方法,其特征在于,所述的配料缸为不锈钢材料制成。
5.根据权利要求1所述的杜仲开胃保健饮品的制备方法,其特征在于,制得的杜仲开胃保健饮品色泽为咖啡色透明液体,具有杜仲叶的独特香气和淡咖啡味。
6.根据权利要求1所述的杜仲咖啡保健饮品的制备方法,其特征在于,所述的干燥杜仲叶为当年10月采摘的深绿色,无杂质,无霉变杜仲叶。
