本发明提供了由玛咖提取液、苹果果汁和苹果果醋组成,其特征是玛咖提取液、苹果果汁和苹果果醋的质量比为30:68~75:1.5~2.5,其制作工艺为:1、鲜玛咖除去杂质、清洗干净后浸泡、蒸煮、过滤,过滤液为玛咖提取液;2、鲜苹果去除杂质、清洗干净、榨汁、酶解、过滤,过滤液为苹果果汁;3、玛咖提取液、苹果果汁和苹果果醋按质量比30:68~75:1.5~2.5进行充分混合;4、玛咖果汁饮料灭菌、灌装、缩标、包装、入库。本发明的产品包含了玛咖、苹果果汁和苹果果醋的营养成分,营养丰富,口感好,不含酒精、含糖量低,适宜人群广。本发明制作过程不加糖、不加添加剂,对人体不产生任何危害,是安全健康的饮品。

技术领域
本发明涉及一种玛咖果汁饮料及其制作方法。
背景技术
玛咖(英文名“maca”,拉丁名“Lepidium meyenii Walp.”)为一种原产南美秘鲁安第斯山海拔3500米以上的十字花科独行菜属一年生或两年生草本食药两用植物,数千年来一直作为当地居民的重要食物来源之一,并具有抗疲劳、抗氧化、增强免疫力、改善性功能、调节内分泌、提高生育力等功效。目前玛咖饮品主要制作成玛咖酒,一是适饮人群受到限制,二是营养成份单一,三是口感较差。
发明内容
本发明的目的是针对上述存在的问题,提供营养成份丰富、功效全面、适饮人群广、口感好的玛咖果汁饮料及其制作方法。
本发明是这样实现的:一种玛咖果汁饮料,由玛咖提取液、苹果果汁和苹果果醋制成,其特征是玛咖提取液、苹果果汁和苹果果醋的质量比为30:68~75:1.5~2.5,其制作步骤为:
1、制作玛咖提取液:鲜玛咖除去杂质、清洗干净后切成块片,按玛咖质量加1~1.5倍的蒸馏水浸泡15~30分钟后,玛咖和浸泡蒸馏水一起在80~90℃下蒸煮10~15分钟,蒸煮液进行过滤,过滤液为玛咖提取液;
2、制作苹果果汁:选用成熟度在8成以上的的鲜苹果去除杂质、清洗干净后,进行破碎榨汁,榨汁液送到振动过滤机中进行过滤,将果汁滤液加热到75~85℃进行灭菌,灭菌后冷却至45~50℃后放入到酶解罐,每吨果汁中加入30~55克果胶酶,搅拌30~40分钟后,静置20~30分钟,将沉淀物从酶解罐的底部排除,果汁液体先通过硅澡土过滤,再进行中空过滤,过滤液为苹果果汁;
3、配料:将步骤1制得的玛咖提取液、步骤2制得的苹果果汁和苹果果醋按质量比30:68~75:1.5~2.5进行充分混合;苹果果醋按常规技术制作或市场购买。
4、杀菌和包装:将步骤3得到的玛咖果汁饮料在80~90℃下进行巴氏灭菌,冷却后进行灌装,灌装后的产品再进行喷淋灭菌,风干后进行缩标、包装、入库。
本发明的产品只有由玛咖提取液、苹果果汁和苹果果醋,具有抗疲劳、抗氧化、增强免疫力、改善性功能、调节内分泌、提高生育力等功效,苹果果汁中含有维生素、矿物质、糖分和膳食纤维等营养成分,具有调理肠胃、促进肾机能、预防高血压的功效,苹果果醋中含有十种以上的有机酸、人体所需的多种氨基酸和微量元素,能促进新陈代谢、调节酸碱平衡和消除疲劳。本发明的产品包含了玛咖、苹果果汁和苹果果醋的营养成分,营养更丰富,功效更全面,并且口感好,本发明的产品不含酒精、含糖量低,适宜人群广。本发明制作过程不加糖、不加添加剂,对人体不产生任何危害,是安全健康的饮品。
具体实施方式
下面结合实施例对本发明作具体说明。
一种玛咖果汁饮料,由玛咖提取液、苹果果汁和苹果果醋组成,其特征是玛咖提取液、苹果果汁和苹果果醋的质量比为30:68~75:1.5~2.5,其制作工艺为:
1、玛咖提取液的制作
(1)清洗:选用无病无虫、无异味、无农残和无有害金属超标的鲜玛咖,去除杂质后清洗干净;
(2)浸泡:将清洗干净的玛咖切成块片后,用蒸馏水浸泡15~30分钟,玛咖与蒸馏水的质量比为1:1~1.5;
(3)提取:将步骤(2)的玛咖和蒸馏水放到夹层锅中,在80~90℃下蒸煮10~15分钟;
(4)过滤:将步骤(3)的蒸煮液先通过硅澡土过滤,再进行中空过滤,过滤液为玛咖提取液;
2、苹果果汁的制作
(1)选料和清洗:选用成熟度在8成以上的无病无虫、无异味、无农残和无有害金属超标的鲜苹果,去除杂质后清洗干净;
(2)榨汁和过滤:选好并清洗过的水果,送到鼠笼式破碎机破碎,再用带式压榨机进行榨汁,榨汁液送到振动过滤机中进行过滤;
(3)灭菌和酶解:将步骤(2)的果汁滤液加热到75~85℃进行灭菌,灭菌后冷却至45~50℃后放入到酶解罐,每吨果汁中加入30~55克果胶酶,搅拌30~40分钟后,静置20~30分钟,将沉淀物从酶解罐的底部排除;
(4)过滤:将步骤(3)中上部的果汁液体先通过硅澡土过滤,再进行中空过滤;
3、配料:将步骤1制得的玛咖提取液、步骤2制得的苹果果汁和苹果果醋按质量比30:68~75:1.5~2.5进行充分混合;
4、杀菌和包装:将步骤3得到的玛咖果汁饮料在80~90℃下进行巴氏灭菌,冷却后进行灌装,灌装后的产品再进行喷淋灭菌,风干后进行缩标、包装、入库。
Claims (1)
1.一种玛咖果汁饮料,其特征是由玛咖提取液、苹果果汁和苹果果醋制成,按质量比玛咖提取液、苹果果汁和苹果果醋的比例为30:68~75:1.5~2.5,其制作步骤为:
(1)制作玛咖提取液:鲜玛咖除去杂质、清洗干净后切成块片,按玛咖质量加1~1.5倍的蒸馏水浸泡15~30分钟后,玛咖和浸泡蒸馏水一起在80~90℃下蒸煮10~15分钟,蒸煮液进行过滤,过滤液为玛咖提取液;
