本发明的目的在于提供一种玫瑰花紫薯饼干,该玫瑰花紫薯饼干由以下原料制得,各原料及重量百分比为:紫薯35-50%、小麦粉10-17%、奶粉5-8%、鸡蛋8-10%、玫瑰花瓣0.5-2%、植物油5-8%、硬脂酰乳酸钙2-4%、木糖醇4-6%、蜂蜜5-8%、黄腐酸2-4%、芝麻3-5%,上述所有重量百分比均以原料的总重量为基准。
由于上述饼干的制备过程需要加入水,再进行烘干,最后饼干的含水量的重量百分比应小于4%。
本发明所述玫瑰花紫薯饼干的制备方法如下:
(1)将采集到的新鲜玫瑰花瓣洗净晾干,再用粉碎机粉碎为80-120目,备用;
(2)将紫薯去皮煮熟后用粉碎机制作成紫薯泥,备用;
(3)取步骤(2)中所得紫薯泥、步骤(1)中所得玫瑰花瓣、小麦粉、奶粉、鸡蛋、花生油、硬脂酰乳酸钙、木糖醇、蜂蜜、黄腐酸、芝麻加入水混合均匀后制成面团,然后在20-35℃放置0.5-3h。
(4)将调好的面团置入特制的模具中进行挤压成型,然后在140-160℃条件下烘烤10-20分钟,冷却后封装得到成品。
本发明方法中的黄腐酸为药用级黄腐酸或者参照专利申请200810233669.X“褐煤氧化降解生产腐植酸及其盐的方法”中方法制得的黄腐酸(用无污染的过氧化氢作为氧化剂,并经过纯化,制得黄腐酸),市购的精制黄腐酸经重金属检测不超标后,也可以使用。
本发明的有益效果:
(1)本发明所述玫瑰花紫薯饼干,以紫薯为主要原料,既有紫薯的营养保健功能,又有饼干易保存、食用方便的特点;
(2)本发明所述玫瑰花紫薯饼干香味浓郁、口感脆爽、营养丰富、颜色鲜亮,药食两用,不仅具有紫薯的减肥、健美和防癌作用,也有玫瑰花美容养颜作用,更有黄腐酸增强肌体免疫力、调节肠胃蠕动、改善血液循环之功效,此外加入黄腐酸还可以延长饼干的保质期;
(3)本发明所述玫瑰花紫薯饼干,制作工艺简单,技术成熟,适合于规模化生产,采用木糖醇做甜味剂,具有热量低,缓解糖尿病,防止肥胖和预防龋牙等功能,是肥胖者和糖尿病患者的理想保健食品。
具体实施方式
下面结合实施例对本发明作进一步详细描述,但本发明的保护范围不局限于所述内容。
实施例1
本实施例的玫瑰花紫薯饼干由以下原料制得,各原料及重量百分比为:紫薯50%、小麦粉10%、奶粉5%、鸡蛋10%、玫瑰花瓣0.5%、花生油5%、硬脂酰乳酸钙2.5%、木糖醇4%、蜂蜜5%、黄腐酸3%、芝麻5%。
本实施例所述玫瑰花紫薯饼干的制备方法如下:
(1)将采集到的新鲜玫瑰花瓣洗净晾干,再用粉碎机粉碎为80目,备用;
(2)将紫薯去皮煮熟后用粉碎机制作成紫薯泥,备用;
(3)取500g步骤(2)中所得紫薯泥、5g步骤(1)中所得玫瑰花瓣、100g小麦粉、50g奶粉、100g鸡蛋、50g花生油、25g硬脂酰乳酸钙、40g木糖醇、50g蜂蜜、30g黄腐酸、50g芝麻加入水混合均匀后制成面团,然后在20℃下放置3h;
(4)将调好的面团置入特制的模具中进行挤压成型,然后在150℃条件下烘烤15分钟,冷却后封装得到成品,所得成品香味浓郁、口感脆爽、营养丰富。
实施例2
本实施例的玫瑰花紫薯饼干组分及重量百分比为:紫薯35%、小麦粉17%、奶粉8%、鸡蛋9%、玫瑰花瓣2%、菜籽油7%、硬脂酰乳酸钙2%、木糖醇6%、蜂蜜7%、黄腐酸4%、芝麻3%。
本实施例所述玫瑰花紫薯饼干的制备方法如下:
(1)将采集到的新鲜玫瑰花瓣洗净晾干,再用粉碎机粉碎为100目,备用;
(2)将紫薯去皮煮熟后用粉碎机制作成紫薯泥,备用;
(3)取350g步骤(2)中所得紫薯泥、20g步骤(1)中所得玫瑰花瓣、170g小麦粉、80g奶粉、90g鸡蛋、70g菜籽油、20g硬脂酰乳酸钙、60g木糖醇、70g蜂蜜、40g黄腐酸、30g芝麻加入水混合均匀后制成面团,然后在35℃下放置0.5h;
(4)将调好的面团置入特制的模具中进行挤压成型,然后在160℃条件下烘烤10分钟,冷却后封装得到成品,所得成品香味浓郁、口感脆爽、营养丰富。
实施例3
本实施例的玫瑰花紫薯饼干组分及重量百分比为:紫薯39%、小麦粉15%、奶粉6%、鸡蛋8%、玫瑰花瓣1%、大豆油8%、硬脂酰乳酸钙4%、木糖醇5%、蜂蜜8%、黄腐酸2%、芝麻4%。
本实施例所述玫瑰花紫薯饼干的制备方法如下:
(1)将采集到的新鲜玫瑰花瓣洗净晾干,再用粉碎机粉碎为120目,备用;
(2)将紫薯去皮煮熟后用粉碎机制作成紫薯泥,备用;
(3)取390g步骤(2)中所得紫薯泥、10g步骤(1)中所得玫瑰花瓣、150g小麦粉、60g奶粉、80g鸡蛋、80g大豆油、40g硬脂酰乳酸钙、50g木糖醇、80g蜂蜜、20g黄腐酸、40g芝麻加入水混合均匀后制成面团,然后在25℃下放置1h;
(4)将调好的面团置入特制的模具中进行挤压成型,然后在140℃条件下烘烤20分钟,冷却后封装得到成品,所得成品香味浓郁、口感脆爽、营养丰富。

1.一种玫瑰花紫薯饼干,其特征在于该玫瑰花紫薯饼干由以下原料制得,各原料及重量百分比为:紫薯35-50%、小麦粉10-17%、奶粉5-8%、鸡蛋8-10%、玫瑰花瓣0.5-2%、植物油5-8%、硬脂酰乳酸钙2-4%、木糖醇4-6%、蜂蜜5-8%、黄腐酸2-4%、芝麻3-5%。
