Abstract

Description
本发明涉及用于掩蔽消费产品中钾盐、特别是氯化钾自身的苦味或完全或部分地作为普通食盐替代物的钾盐、特别是氯化钾的苦味的制品。钾盐不仅仅可用于减少钠消耗,而且目前平均消费者消耗的钾量低于健康促进机构推荐的量。此外,本发明涉及其他盐例如钙、镁和铵盐的异常特征的掩蔽。
众所周知普通食盐(氯化钠)消耗对健康具有有害影响。它牵涉到高血压、心脏病和所有形式的其他有害病症中的致病因素。
近年来存在减少或消除来自食品中的氯化钠的强烈趋势。
氯化钾是称作普通食盐替代物的实例,目的是为了补偿包含低或不添加食盐的产品中缺乏的咸味。食品中使用氯化钾的一个缺陷在于与其应用相关的苦余味。
已经提出使用糖醇类与氯化钾的组合以减轻这种苦余味。JP未审公开申请S62-32855中已经提出糖醇类例如甘露糖醇或山梨醇(sorbitol)在减轻与使用氯化钾相关的苦余味中的应用。
然而,提出使用相对大量的糖醇,特别是与所用氯化钾的量相比要3-50倍过量。因为这些糖醇类自身也可能发挥器官感觉作用,所以期望尽可能低的降低这些材料的水平,而仍然发挥期望的苦味掩蔽作用。同时,申请人已经观察到,糖醇类的应用还可以轻微地减少氯化钾的咸味感觉。
对提供改进的掩蔽苦味的组合物仍然存在需求,这些组合物可以掩蔽与消费产品中使用氯化钾或另一种钾盐自身或完全或部分作为普通食盐替代物的氯化钾或另一种钾盐相关的苦余味,这种掩蔽苦味的组合物可以使用极低水平的糖醇类。
申请人目前已经发现,能够降低或消除与使用氯化钾或另一种钾盐自身或完全或部分作为普通食盐替代物的氯化钾或另一种钾盐相关的苦味,同时保留或基本上保留其使用具有低浓度糖醇的组合物的咸味味道。
本发明在第一个方面中提供了掩蔽与消费产品中使用氯化钾或另一种钾盐自身或完全或部分作为普通食盐替代物的氯化钾或另一种钾盐相关的苦味的方法,该方法包括向所述产品中添加掩蔽苦味的组合物的步骤,该组合物包含糖醇;与式(I)的化合物:
CH2OH-(CHOH)4-CO-NH-CH2-CH2-X;或
式(II)的化合物:
R1-CR2(OR3)-CO-Y;或
式(III)的风味调节物质
R1-CR2(OR3)-CO-NR4-Y'-X';
或其混合物,
其中取代基X、Y、R1、R2和R3和R1、R2、R3、R4、X'和Y'的意义如下文所述。
在本发明的一个具体的实施方案中,掩蔽苦味的组合物包含糖醇和式(I)的化合物;式(II)的化合物或其混合物。然而,可以理解本发明关注任意形式和任意量的化合物(I)、(II)和风味调节物质(III)与糖醇的组合物,以提供期望的掩蔽苦味作用。
在所述掩蔽苦味的组合物中使用的糖醇类的量占所述掩蔽苦味的组合物总重的55%重量或以上;更具体地80%或以上;仍然更具体地55%-99.8%;仍然更具体地80%-99.8%重量。
可以添加到消费产品中的掩蔽苦味的组合物的量应是相对于钾盐足以确保有效掩蔽与使用所述钾盐相关的苦味的量。所用的掩蔽苦味的组合物的量使得糖醇与钾盐的重量比为1:20-2:1,更具体地1:5-1:1。
在所述掩蔽苦味的组合物中使用的式(I)的化合物的量占所述掩蔽苦味的组合物总重的0.2-5%重量。
在所述掩蔽苦味的组合物中使用的式(I)的化合物的量确保它在消费产品中的存在量为5-250ppm。
在所述掩蔽苦味的组合物中使用的式(II)的化合物的量占所述掩蔽苦味的组合物总重的5-25%重量。
在所述掩蔽苦味的组合物中使用的式(II)的化合物的量确保它在消费产品中的存在量为10-2500ppm,更具体地100-2500ppm,仍然更具体地10-1000ppm。
在所述掩蔽苦味的组合物中使用的风味调节物质(III)且特别是N-乳酰基酪胺的量占所述掩蔽苦味的组合物总重的1-15%重量。
在所述掩蔽苦味的组合物中使用的风味调节物质(III)且特别是N-乳酰基酪胺的量确保它在消费产品中的存在量为10-100ppm。
典型地自身或完全或部分作为普通食盐替代物用于消费产品中的氯化钾或其他适合的钾盐的量在一定程度上将取决于消费产品的性质。然而,钾离子的量可以在宽限内改变,例如100-30,000ppm。钾盐可以用于完全替代普通食盐或它们可以用于替代消费产品中使用的食盐的1-60%。
申请人令人意外地发现,在掩蔽苦味的组合物中使用式(I)的化合物和/或式(II)的化合物和或风味调节物质(III)能够增强糖醇的作用,使得能够大幅减少用于消费组合物的糖醇的量。
因此,本发明在其另一个方面中提供了式(I)的化合物和/或式(II)的化合物和/或风味调节物质(III)、更具体地是N-乳酰基酪胺与糖醇结合以掩蔽消费产品中氯化钾或其他钾盐自身的苦味或完全或部分作为普通食盐替代物的氯化钾或其他钾盐的苦味的用途。
本发明在又一个方面中提供了增强包含氯化钾或其他钾盐自身或完全或部分作为普通食盐替代物的氯化钾或其他钾盐的消费产品中糖醇类的苦味掩蔽作用的方法,该方法包括向所述消费产品中添加式(I)的化合物和/或式(II)的化合物和/或风味调节物质(III)、更具体地是N-乳酰基酪胺的步骤。
除这种增强作用外,申请人还令人意外地发现,在糖醇类可以轻微地减少钾盐的咸味感觉的同时,当式(I)和/或式(II)的化合物和/或风味调节物质(III)、更具体地是N-乳酰基酪胺与糖醇一起使用时,咸味感觉未减少或基本上未减少。
此外,当使用糖醇类作为钾盐的苦味掩蔽剂时,在掩蔽作用实现前,当能够感觉到苦味时,可能会有初始时间滞后。类似地,在品尝结束时,当糖醇的作用弱化时,可能会感觉到突破性的苦味。发现添加式(I)和/或式(II)的化合物和/或风味调节物质(III)、更具体地是N-乳酰基酪胺有助于苦味从最初的品尝开始到品尝结束时得到更完全地掩蔽。
因此,本发明在又一个方面中提供了式(I)的化合物和/或式(II)的化合物和/或风味调节物质(III)、更具体地是N-乳酰基酪胺与糖醇结合以掩蔽消费产品中氯化钾或其他钾盐自身的苦味或完全或部分作为普通食盐替代物的氯化钾或其他钾盐的苦味、同时保留或基本上保留钾盐的咸味感觉的用途。
用于本发明的糖醇类可以选自乙二醇、甘油、赤藓醇、苏糖醇、核糖醇、阿糖醇、木糖醇、来苏糖醇(Lyxitol)、蒜糖醇、阿卓糖醇、葡糖醇(Glucitol)(=山梨醇(sorbitol))、甘露糖醇、山梨糖醇(Gulitol)、艾杜糖醇、半乳糖醇(=卫矛醇)、塔罗糖醇、拉克替醇、麦芽糖醇、纤维二糖醇(Cellobiitol)、棉子糖醇(Raffinitol)或结构与糖醇类相关的化合物,例如肌醇、四羟基环丁烷、五羟基环戊烷、七羟基环庚烷或已经进行NaBH4还原步骤的部分水解的多糖类,及其衍生物。
在本发明的一个特别优选的实施方案中,所述糖醇是卫矛醇。
尽管通过本发明能够大幅减少达到掩蔽苦味作用所需的糖醇的量且这显示了本发明的相当的优势,但是对一些应用而言,例如应用于高度调味的消费产品或在其中糖醇类的令人愉悦的效果可耐受乃至可接受的消费产品的情况中,能够以高于上文特别涉及的量使用它们,例如10%。
就上文涉及的式(I)的化合物而言,X表示-OH、-O(CO)R、-OPO3H2、-PO3H2、-OSO3H或-SO3H,R表示包含至少一个羧酸基团的C2-C10基团;及其可食用盐。
优选X表示羟基、磷酸酯基、膦酸酯基、硫酸酯基或磺酸酯基。甚至更优选X表示羟基、磷酸酯基或膦酸酯基。最优选X表示羟基或磷酸酯基。
在式(I)中,CH2OH-(CHOH)4-CO-部分优选表示选自阿洛糖酸、阿卓糖酸、葡糖酸、甘露糖酸、古洛糖酸、艾杜糖酸、半乳糖酸和塔龙酸的醛糖酸残基。甚至更优选所述部分表示葡糖酸或甘露糖酸的残基。
特别关注的式(I)的化合物是这样的化合物,其中X表示-O(CO)R、-OPO3H2、-PO3H2、-OSO3H或-SO3H,R表示包含至少一个羧酸基团的C2-C10基团,更优选包含一个羧酸基团的C2-C7基团;及其可食用盐。
所关注的其他式(I)的化合物是这样的化合物,其中X表示羟基,CH2OH-(CHOH)4-CO-部分表示选自阿洛糖酸、阿卓糖酸、甘露糖酸、古洛糖酸、艾杜糖酸、半乳糖酸和塔龙酸的醛糖酸残基。
另一种有意义的式(I)的化合物是这样的化合物,其中X表示磷酸酯基、膦酸酯基、硫酸酯基或磺酸酯基,CH2OH-(CHOH)4-CO-部分优选表示选自葡糖酸和甘露糖酸的醛糖酸残基。
在一个特别优选的实施方案中,式(I)的物质是乙醇胺的葡糖酸衍生物(常称作N-葡萄糖基乙醇胺)或其可食用盐。
式(I)的化合物是本领域中已知的且可以通过已知合成方法生产,所述的已知合成方法例如参见WO2006009425,将该文献引入本文参考。
就上文涉及的式(II)的化合物而言,R1表示氢;C1-C8烷基、C2-C8烯基、C3-C8环烷基或C3-C8环烯基,其任选地被1-8个选自羟基、C1-C3烷基、C2-C3烯基和C1-C3羧基的取代基取代;

上述的单糖单元优选被一个或多个磷酸酯基团酯化,所述磷酸酯基选自一磷酸酯、二磷酸酯和三磷酸酯。甚至更优选单糖单元被一种这样的磷酸酯基团酯化,最优选一磷酸酯。

特别优选的式(II)的化合物包括N-乳酰基GMP、N-乳酰基AMP、N-乳酰基CMP、N-乳酰基IMP、N-葡萄糖基GMP、N-葡萄糖基AMP、N-葡萄糖基CMP和N-葡萄糖基IMP;特别优选N-乳酰基GMP和N-葡萄糖基GMP。

适合的药物可以包括口腔护理剂、咽喉护理剂、过敏反应缓解剂和一般的医疗护理剂。一般医疗化疗剂可以包括抗组胺药、减充血剂(拟效感神经药)、镇咳药(咳嗽抑制剂)、抗炎药、顺势治疗剂、祛痰药、麻醉药、缓和剂、止痛药、抗胆碱药、咽喉润滑剂、抗菌剂、抗病毒药、抗真菌药、抗酸药、止恶心药、化疗剂、利尿药、精神治疗药物、心血管药物、各种生物碱、轻泻剂、食欲抑制剂、ACE-抑制剂、止喘药、抗胆甾醇血药、抗抑郁药、抗腹泻制剂、抗高血压药、抗脂质剂、痤疮药物、氨基酸制剂、抗尿酸药、合成代谢制剂、食欲刺激药、骨代谢调节剂、避孕药、子宫内膜异位症处置剂、酶、勃起功能障碍疗法例如枸橼酸西地那非、致育药、胃肠病用药、顺势治疗药、激素、晕动病治疗剂、肌肉松弛药、骨质疏松症制剂、催产药、抗副交感神经药、拟副交感神经药、前列腺素类、呼吸药、镇静药、戒烟助剂例如溴隐亭或烟碱、颤动制剂、泌尿道药、抗溃疡病药、止吐药、升-和降糖药、甲状腺剂和抗甲状腺制剂、三部分组成的(terine)松弛药、红细胞生成药、粘液溶解药、DNA和遗传修饰药和营养补剂包括营养制品、微量营养物、维生素和辅酶类。除非另有指定,否则还包括药物的药学可接受的盐和前体药物。一些这些药物可以作为一种以上目的使用。可以使用上述类型的任选药物的组合。可以将对相同或不同症状具有活性的两种或多种药物一起组合使用。
其他适合和期望的添加剂描述在标准教科书中,例如“Handbook of IndustrialChemical Additives”,ed.M.和I.Ash,第2版,(Synapse2000)。

制备三种溶液:
A1600ppm KCl和800ppm NaCl水溶液
B包含5000ppm甘露糖醇的1600ppm KCl和800ppm NaCl水溶液
C包含5000ppm卫矛醇的1600ppm KCl和800ppm NaCl水溶液
由一组专业尝味者比较所述溶液。他们同意甘露糖醇和卫矛醇都能充分地掩蔽KCl的异常特征。然而,卫矛醇的掩蔽效果明显更好且得到了更积极的描述为“圆和的”感觉。
实施例2:
淡人造黄油获自当地超市。在一个盒子中,将0.4%KCl充分混合(样品A),在另一个盒子中,将0.4%KCl与0.5%甘露糖醇、30ppm N-2-羟乙基葡糖酰胺和500ppm包含式(II)的化合物的香料即如WO2005/096844中制备的作为风味制剂组成部分的Lac GMP充分混合(样品B)。一小组专业品尝者比较两种样品并且全部同意样品B的苦味明显轻于样品A。
实施例3:
淡人造黄油获自当地超市。制备三种样品:
A包含0.4%KCl的人造黄油
B包含0.4%KCl和0.5%甘露糖醇的人造黄油
C包含0.4%KCl、0.5%甘露糖醇和30ppm N-2-羟乙基葡糖酰胺和500ppm包含式(II)的化合物的香料即如WO2005/096844中制备的作为风味制剂组成部分的Lac GMP的人造黄油。
一小组专业品尝者比较三种样品并且一致的意见认为在样品C中,KCld异味优于样品B。
实施例4:
如下制备具有低盐水平的色拉调味料:
将水(28.92)、糖(20.25)、Colemans芥茉粉(1.16)、盐(2.00)、蛋黄粉(0.58)、ColFlo67(0.31)、瓜尔胶(0.23)、黄原胶(0.04)、核黄素(0.002)和麦芽糖糊精(0.22)在Termomix中60C以高混合速度混合3分钟并且在90C混合1分钟。然后以最大混合速度缓慢地加入植物油(32.40)。最终缓慢地混合醋8%(13.88)。
制备两种样品用于品尝:
A具有2%KCl的色拉调味料
B具有2%KCl和0.5%卫矛醇、30ppm N-2-羟乙基葡糖酰胺和500ppm包含式(II)的化合物的香料即如WO2005/096844中制备的作为风味制剂组成部分的Lac GMP的色拉调味料。
由一个专业小组比较两种样品。该小组同意样品A中品尝到的典型的KCl苦味在样品B中几乎被完全掩蔽。
实施例5:
如下制备素食汤(5%盐):
在干燥掺合机中混合盐(15.5)、一水合葡萄糖(木薯淀粉)(15.7)、芹菜含油树脂(0.02)、姜黄根含油树脂Vegex(0.03)、胡荽子含油树脂(0.02)、麦芽糖糊精5-8DE(44.48)、大豆精制植物油(4)、标准稀酵母(3)、洋葱粉(0.4)、大蒜粉(0.4)、白胡椒(0.05)和马铃薯淀粉(16.4)。用量为每升水32G汤粉。
制备两种样品用于品尝:
A具有0.4%KCl的汤
B具有0.4%KCl和0.5%卫矛醇、30ppm N-2-羟乙基葡糖酰胺和500ppm包含式(II)的化合物的香料即如WO2005/096844中制备的作为风味制剂组成部分的Lac GMP的汤。
由一个专业小组比较两种样品。该小组同意样品B没有存在于中样品A的异常特征。
实施例6:
通过混合1250g小麦粉、250g白色小麦粉、60g酵母制备面包。添加三种盐混合物以分离面粉掺合物:
A30g NaCl
B18g NaCl和15g KCl
C18g NaCl、15g KCl和12g卫矛醇
通过混合所述成分和添加900g水制备生面团。使生面团在室温发酵胀起2小时,在220C烘焙45分钟。
一个专业小组的品尝者比较面包。优选参比样品A。不喜欢样品B。样品C接近参比面包,但一些异常特征明显。
实施例7:
淡人造黄油获自当地超市。在一个包含人造黄油的盒子中充分混入0.4%KCl,得到样品A。在另一个盒子中,将0.4%KCl与卫矛醇(0.5%)、N-2-羟乙基葡糖酰胺(30ppm)、N-乳酰基酪胺(90ppm)和500ppm包含乳酰基GMP且根据WO2005/096844的教导制备的风味制剂组成部分的Lac GMP充分混合,得到样品B。一小组专业品尝者比较两种样品并且全部同意样品B的苦味明显轻于样品A且比样品A更具有体感(body)和口感。
Claims (8)
1.掩蔽与用于消费产品中的氯化钾或其他钾盐自身或完全或部分作为普通食盐替代物的氯化钾或其他钾盐相关的苦味的方法,该方法包括向所述产品中添加掩蔽苦味的组合物的步骤,所述组合物包含糖醇类与式(I)的化合物:
CH2OH-(CHOH)4-CO-NH-CH2-CH2-X;和
式(II)的化合物:
R1-CR2(OR3)-CO-Y;和任选的
式(III)的风味调节物质
R1-CR2(OR3)-CO-NR4-Y'-X';
其中:
X表示-OH或-OPO3H2;
Y表示:鸟苷一磷酸(GMP)、腺苷一磷酸(AMP)、胞苷一磷酸(CMP)或肌苷一磷酸(IMP);
R1表示氢;或C1-C8烷基,其任选地被1-8个羟基基团取代;
R2表示氢;或Cl-C8烷基,其任选地被1-8个羟基基团取代;
R3表示氢;或C1-C3酰基,其任选地被1-3个羟基基团取代;且其中
Y'表示C1-C5亚烷基;
X'表示苯基,其被一个或多个羟基基团取代;
R1表示氢;或C1-C8烷基,其任选地被1-8个羟基基团取代;
R2表示氢;或C1-C8烷基,其任选地被1-8个羟基基团取代;
R3表示氢;或C1-C3酰基,其任选地被1-3个羟基基团取代;且
R4表示氢;或C1-C6烷基,其任选地被1-6个羟基基团取代,
其中在所述掩蔽苦味的组合物中,基于所述掩蔽苦味的组合物总重,使用的糖醇的量为55%重量或以上,使用的式(I)的化合物的量为0.2-5%重量,使用的式(II)的化合物的量为5-25%重量,使用的风味调节物质(III)的量为1-15%重量,并且其中糖醇与钾盐的重量比为1:20-2:1;
其中所述糖醇类选自赤藓醇、苏糖醇、核糖醇、阿糖醇、木糖醇、来苏糖醇、蒜糖醇、阿卓糖醇、葡糖醇(=山梨醇)、甘露糖醇、山梨糖醇、艾杜糖醇、半乳糖醇(=卫矛醇)、塔罗糖醇、拉克替醇、麦芽糖醇、纤维二糖醇、棉子糖醇、或选自肌醇、四羟基环丁烷、五羟基环戊烷或七羟基环庚烷的结构与糖醇相关的化合物;
其中在式(I)中,CH2OH-(CHOH)4-CO-部分表示选自阿洛糖酸、阿卓糖酸、葡糖酸、甘露糖酸、古洛糖酸、艾杜糖酸、半乳糖酸和塔龙酸的醛糖酸残基;
其中式(II)的化合物选自N-乳酰基GMP、N-乳酰基AMP、N-乳酰基CMP、N-乳酰基IMP、N-葡萄糖基GMP、N-葡萄糖基AMP、N-葡萄糖基CMP和N-葡萄糖基IMP;并且
其中式(III)的风味调节物质选自N-乳酰基酪胺、N-葡萄糖基-酪胺、N-乳酰基-4-羟基苄胺、N-乳酰基香草胺、N-乳酰基多巴胺、其可食用盐及其混合物。
2.权利要求1的方法,其中糖醇与钾盐的重量比为1:5-1:1。
3.权利要求1-2任一项的方法,其中式(I)的化合物是N-葡萄糖基乙醇胺或其可食用盐。
4.权利要求1的方法,其中式(II)的化合物是纯的形式或形成美拉德风味组合物的组成部分。
5.权利要求1-2任一项的方法,其中所述风味调节物质(III)是N-乳酰基酪胺。
6.权利要求1-2任一项的方法,其中所述糖醇是甘露糖醇。
7.权利要求1-2任一项的方法,其中所述掩蔽苦味的组合物包含甘露糖醇、N-2-羟乙基葡糖酰胺、N-乳酰基GMP和N-乳酰基酪胺。
8.如权利要求1中所定义的组合物掩蔽消费产品中氯化钾或其他钾盐自身的苦味或完全或部分作为普通食盐替代物的氯化钾或其他钾盐的苦味的用途。
