糖水莴笋罐头属于一种青菜类罐头食品,这种糖水莴笋罐头,选用了新鲜的茎类莴笋作为原材料,采用传统的水果罐头行业的生产技术标准生产。本发明选用上等优质新鲜的茎类莴笋,用刀将其外部坚硬的表皮削去切成1厘米的正方体,然后用清水洗净放到20%浓度的糖水中预煮3-5分钟,之后捞出在放到清、凉水中漂洗,这时就可以装罐再加入35%-40%浓度的糖水进入下面工序:高温灭菌—旋盖真空—冷却—食用或储存(储存30天以上再食用味道更甜脆可口)。现代科学研究发现:莴笋含钾量较高,有利于促进排尿,减少对心房的压力,对高血压和心脏病患者极为有益;莴笋含有少量的碘元素,它对人的基础代谢、心智和体格发育甚至情绪调节都有重大影响;因此莴笋具有镇静作用,经常食用有助于消除紧张,帮助睡眠;不同于一般蔬菜的是它含有非常丰富的氟元素,可参与牙和骨的生长;能刺激消化液的分泌,促进食欲,有助于抵御风湿性疾病和痛风等功能。综上所述,本发明具有较好的实用和推广简直。

 本发明涉及一种青菜类罐头食品加工的改进,尤其是茎类莴笋(又名莴苣、生笋、白笋、千金菜等),属家庭或餐饮、酒店常用的一种青菜,莴笋色泽淡绿,如同碧玉一般,制作菜肴可荤可素,可凉可热,口感爽脆,也可腌制酱菜咸、酸口味类罐头等。
 
背景技术
目前在人们日常生活中,传统的罐装类茎类莴笋大都属于酱油、食醋腌制的咸、酸口味食品,其具有味道浓郁,营养丰富、储存期长等特点。但是,这种酱、醋腌制的莴笋罐装食品不同程度的破坏莴笋的自身组织,大都存在着口味不原味、口感不清淡、外观不美观等不足。
 
发明内容
本发明的目的是针对上述不足,提供一种糖水莴笋罐头。
实现本发明目的的技术方案是:

具体实施方式
下面给出实施例,对本发明作进一步描述。
本发明人按实施例一瓶净重380g/瓶糖水莴笋罐头,原料:莴笋230g(预煮后的重量);辅助原料:浓度35%-40%的糖水150g。
具体步骤:
1、                            优质新鲜的茎类莴笋,用刀将其外部坚硬的表皮削去切成1厘米的正方体。
2、                            用清水洗净放到沸腾的20%浓度的糖水中预煮3-5分钟。
3、                            捞出放到清、凉水中漂洗。
4、                            称量230g莴笋装罐后加入浓度35%-40%的糖水150g。
5、                            进行高温灭菌,灭菌公式5′-10′-5′/100℃。
6、                            旋盖真空、冷却后储存。
