麦芽苏打甘露,属于饮料加工技术领域。是由预先制得的麦芽汁、苏打水按照一定比例进行混合,再按照一定配方加入添加剂进行调配,然后经过臭氧消毒、粗滤、精滤后压入二氧化碳制得的麦芽苏打碳酸饮料。本发明通过选用具有一定保健功效的麦芽和苏打水为原料,经过精心调配并改进现代工艺而生产的新型碳酸饮料,为消费者提供了一种既具有麦芽清香,又具有一定保健功能的新型碳酸饮料。本发明解决了麦芽汁饮料和苏打水饮料各自的缺点,利用麦芽汁的清香口感来弥补苏打水的口感不足问题,并加入相关添加剂使各味调和、清香爽口,而且还充分发挥苏打水的弱碱性米平衡人体酸性体质的作用,同时也发挥了麦芽的消食功效。附图说明:图1详细介绍了生产本麦芽甘露水的工艺步骤。

本发明涉及饮料加工技术领域。特别涉及的是麦芽苏打碳酸饮料的制备技术。
背景技术
随着经济发展人们的生活水平不断提高,对饮料的要求已不仅仅局限于解渴,更多的是注重口感、营养、健康等功能,因此琳琅满目的饮料层出不穷。其中以麦芽、竹叶、小苏打(碳酸氢钠)等原料制作饮料在当今也成为可能,并以其一定的保健功能而受到消费者的欢迎。
现有的麦芽饮料一般都为固体饮料,苏打水饮料也是单纯的碳酸氢钠水溶液配以添加剂而成的饮料。其中有公开的中国专利一种果味苏打水,它主要由以下物质组成,按重量份,碳酸氢钠0.5-0.8份,氯化钙0.0008-0.001份,硫酸镁0.0008-0.001份,硫酸钠0.0008-0.001份,食用香精0.5-0.8份,其余为溶解有二氧化碳的纯净水,其中食用香精为青苹果香精或咖啡香精或柠檬香精或玫瑰香精或桔子香精或香蕉香精或荔枝香精或菠萝香精中一种或多种组合,而制得的苏打水碳酸饮料;在2000年第2期《冷饮与速冻食品工业》中有一篇“麦芽饮料”,它是以焙炒后的麦芽为主要原料,经浸泡、煎煮得麦芽汁,并加入甘草和党参提取液进行调配,并用柠檬酸、糖浆进行口味改良,制成一种风味独特,并具有消食、养胃、健脾供能的保健饮料;在1999年第3期《食品科学》中有一篇“麦芽低聚糖运动饮料的研制”,其主要成分是含淀粉58%-60%、蔗糖3%-5%、还原糖3%-4%、可溶性胶2%-4%、纤维素5%、半纤维素6%-8%,是用6%左右的麦芽低聚糖,配以维生素、氨基酸等制成的运动饮料。
根据现有相关麦芽饮料和苏打水饮料的加工技术资料可以看出一般都是以麦芽或者小苏打(碳酸氢钠)为主要原料制造饮料,虽然各自都具有一定保健功效,但也有各自的不足之处,像麦芽汁饮料的工艺技术落后不能实现工业化生产、苏打水饮料口感较为单调等缺点。
发明内容
本发明的目的是利用具有一定保健功效的麦芽和苏打水(碳酸氢钠水溶液)为主要原料,配以各种添加剂,并通过改进现代工艺而制造一种新型的麦芽苏打碳酸饮料。它是对传统麦芽饮料、苏打水饮料的加工技术进行的改进,它保留了麦芽和苏打水的保健功效并解决苏打水口感单调、麦芽汁不易生产液体饮料的缺点,并从工艺、配方、口感、保健功效、工业化生产等方面进行技术革新,提供一种即具有麦芽清香口感,又有苏打水的弱碱性保健功能,而且还适合工业化生产的混合碳酸饮料。它含有维生素C、维生素B、粗纤维、磷脂、糊精、麦芽糖、葡糖糖、多种微量元素和矿物质,具有平衡人体酸性体质、促进消化的保健功效,同时具有口感清香、饮用方便的优点。
本麦芽苏打甘露,其制备步骤包括:制备麦芽汁—制备苏打水—调配缸调配—臭氧消毒—精密过滤—压入二氧化碳—灌装封盖—检验—喷码—装箱—入库,其特征在于如下。
1、所述的制备麦芽汁是由以下步骤和组分构成:
精选优质新鲜麦芽,先将麦芽进行粉碎,使麦芽各部分均匀分布,然后进行轻微压榨,完成压榨后送入蒸煮缸,然后以100KG麦芽加入900KG水的比例进行蒸煮,控制温度在96℃-98℃之间,搅拌器不断进行搅拌,麦芽蒸煮时间为15分钟至18分钟。在蒸煮缸中麦芽和水经过加热沸腾后蛋白质转换成为可溶性的麦芽提取物,并保持了麦芽本身的维生素和矿物质。最后将得到的麦芽汁经过初步过滤、精密过滤和反渗透过滤后得到麦芽汁待用。
2、所述的制备苏打水是由以下步骤和组份构成:
将原水经过机械过滤—活性炭过滤—反渗透过滤—加入碳酸氢钠调配—臭氧消毒等几个步骤后得到苏打水(碳酸氢钠水溶液)。其中的碳酸氢钠加入量为0.8mg-1mg/L(即每升水加入0.8mg-1mg碳酸氢钠),得到消毒后的苏打水待用。

将以上液体再次经过臭氧消毒和精密过滤后待用。
4、所述的压入二氧化碳为:
向碳酸化缸内通入二氧化碳气体,保持压力在3.8MPa-4MPa之间,然后将3所述待用的液体按照5T-6T/h的流量向压力缸内喷洒,使二氧化碳与液体充分生成碳酸水,就初步得到了本发明所指的麦芽苏打甘露。
将上述麦芽苏打甘露再经过灌装封盖、检验、喷码、装箱、入库后就得到了本发明所指的麦芽苏打甘露成品。它含有维生素C、维生素B、粗纤维、磷脂、糊精、麦芽糖、葡糖糖、多种微量元素和矿物质,具有平衡人体酸性体质、促进消化的保健功效,同时具有口感清香、饮用方便的优点。

具体实施方式
实施例:
参见图1,本麦芽甘露水的制备步骤包括:制备麦芽汁—制备苏打水—调配缸调配—臭氧消毒—精密过滤—压入二氧化碳—灌装封盖—检验—喷码—装箱—入库。
1、制备麦芽汁。
精选优质新鲜麦芽100KG,先将麦芽进行粉碎,使麦芽各部分均匀分布,然后进行轻微压榨,完成压榨后送入蒸煮缸,然后加入900KG水进行蒸煮,控制温度在96℃-98℃之间,搅拌器不断进行搅拌,麦芽蒸煮时间为15分钟至18分钟。在蒸煮缸中麦芽和水经过加热沸腾后蛋白质转换成为可溶性的麦芽提取物,并保持了麦芽本身的维生素和矿物质。最后将得到的麦芽汁经过初步过滤、精密过滤和反渗透过滤后得到约930KG-950KG麦芽汁待用。
2、制备苏打水。
将999KG原水经过机械过滤—活性炭过滤—反渗透过滤—加入碳酸氢钠1KG 调配—臭氧消毒等几个步骤后得到苏打水(碳酸氢钠水溶液)。在本例中碳酸氢钠与水的比例为1∶1000(重量比),得到约1000KG苏打水待用。
3、调配缸调配。
先放入600KG苏打水在调配缸内,然后再放入400KG的麦芽汁进入调配缸并进行充分搅拌,让麦芽汁和苏打水混合均匀,当搅拌均匀后按照以下重量加入添加剂:
维生素C:0.5KG
氯化钙:0.06KG
阿斯巴甜:0.03KG
赤藓糖醇:10KG
将以上液体再次经过臭氧消毒和精密过滤后待用。
4、压入二氧化碳。
向碳酸化缸内通入二氧化碳气体,保持压力在3.8MPa-4MPa之间,然后将3所述待用的液体按照5T-6T/h的流量向压力缸内喷洒,使二氧化碳与液体充分融合生成碳酸水,就得初步得到了本发明所指的麦芽苏打甘露。
将上述麦芽苏打甘露再经过灌装封盖、检验、喷码、装箱、入库后就得到了本发明所指的麦芽苏打甘露成品。
Claims (1)
1.麦芽苏打甘露,其制备步骤包括:制备麦芽汁—制备苏打水—调配罐调配—臭氧消毒—精密过滤—压入二氧化碳—灌装封盖—检验—喷码—装箱—入库,其特征在于:
①所述的制备麦芽汁是由以下步骤和组分构成。
精选优质新鲜麦芽,先将麦芽进行粉碎,使麦芽各部分均匀分布,然后进行轻微压榨,完成压榨后送入蒸煮缸,然后以100KG麦芽加入900KG水的比例进行蒸煮,控制温度在96℃-98℃之间,搅拌器不断进行搅拌,麦芽蒸煮时间为15分钟至18分钟。在蒸煮缸中麦芽和水经过加热沸腾后蛋白质转换成为可溶性的麦芽提取物,并保持了麦芽本身的维生素和矿物质。最后将得到的麦芽汁经过初步过滤、精密过滤和反渗透过滤后得到麦芽汁待用。
②所述的制备苏打水是由以下步骤和组份构成。
将原水经过机械过滤—活性炭过滤—反渗透过滤—加入碳酸氢钠调配—臭氧消毒等几个步骤后得到苏打水(碳酸氢钠水溶液)。其中的碳酸氢钠加入量为0.8mg-1mg/L(即每升水加入0.8mg-1mg碳酸氢钠),得到消毒后的苏打水待用。
③所述的调配缸调配是由以下步骤和组份构成。
放入60%-65%的苏打水进调配缸,然后放入35%-40%的麦芽汁进入调配缸,进行充分搅拌,搅拌均匀后按照调配缸内混合液重量加入添加剂,比例为:
