本发明涉及一种米醋,具体地说是一种板栗水果米醋。
背景技术
米醋是一种调味品,现在在人们的日常生活中必不可少。但是,随着人们生活水平的提高,对调味品的要求也日益提高,不仅要求其具备普通的调味作用,对其营养成分也越来越注重,即使市面上出现过含铁等有机物的米醋,但是,其营养成分单一,并且含有化学物质。迁西板栗富含多种氨基酸、维生素等有益于人体的营养成分,但是截至今日,还尚未有过用板栗制备成米醋的报道出现,也从未有过将板栗和水果共同制备成米醋的报道。
发明内容
本发明的目的旨在针对现有米醋富含营养的匮乏,提供一种营养丰富,制作简单的板栗水果米醋。
采用以下技术方案实现上述发明目的:该板栗水果米醋的原料组成和其重量份数为:板栗35-45份,苹果5-10份,安梨10-25份,大米5-10份,玉米5-10份,小麦5-10份,豌豆5-10份。
这种板栗水果米醋,用河北迁西县特产的优质板栗作为原料,米醋含有板栗自身的氨基酸、维生素和其他有机物等多种对人体有益的营养物质,营养富含全面;该米醋中还添加多种水果,使得米醋的口感醇厚,既可作为调味品食用,也可作为醋饮饮用,酸甜可口,促进吸收。
具体实施方式
下面结合实施例详述本发明。
以原料总重为100千克为例,按照以下成分及其重量选取原料:
实施例1:板栗45千克,苹果10千克,安梨10千克,大米10千克,玉米8千克,小麦10千克,豌豆7千克;
实施例2:其最佳重量份数为,板栗40千克,苹果10千克,安梨10千克,大米10千克,玉米10千克,小麦10千克,豌豆10千克;
另外还要准备一定量的酒曲和食盐。
原料准备完毕后,经过下述传统酿醋工序:浸泡→蒸煮→酒曲→酒发酵→醋发酵→加盐→陈酿→淋醋→煎醋→成品进行深加工后,即可得到口味独特,营养含量丰富的板栗水果米醋。这种板栗水果米醋既有板栗自身的清香,又有水果的果香;不仅含有板栗自身的多种营养成分,还含有水果特有的各种维生素,有益于人体健康。

1.一种板栗水果米醋,其特征在于,该板栗水果米醋的原料组成和其重量份数为:板栗35-45份,苹果5-10份,安梨10-25份,大米5-10份,玉米5-10份,小麦5-10份,豌豆5-10份;原料准备完毕后,经过下述酿醋工序:浸泡→蒸煮→酒曲→酒发酵→醋发酵→加盐→陈酿→淋醋→煎醋→成品进行深加工后,即可得到板栗水果米醋。
