本发明提供了一种复配大豆浓缩蛋白,由以下成分组成:各组分份数按重量份计:大豆分离蛋白46~56份、豆粉35~45份、蔗糖脂肪酸酯1.0~2.5份、分子蒸馏单甘酯0.5~1.5份、卡拉胶1.0~2.5份、魔芋粉0.5~1.5份、瓜尔豆胶2.0~6.0份、食品级氯化钾0.1~0.5份。本发明提供的功能性复配大豆浓缩蛋白适用于各种乳化类的香肠制品,能显著改善产品的品质;可以以干法、湿法、干湿混合法等各种方式在香肠中添加,具有极为优良的保水、保油效果,可提高产品出品率,显著增强产品的硬度和弹性,改善产品的质构,并赋予产品细腻润滑的口感,具有功能性好、成本低等优点。

一种复配大豆浓缩蛋白
技术领域
本发明涉及一种复配大豆浓缩蛋白,具体地说是一种专门用于提高香肠类肉制品质的复配大豆浓缩蛋白。
背景技术
香肠类肉制品以其良好的口味、口感和食用方便等优点而深受各类人群的喜爱。大豆蛋白(分离蛋白、浓缩蛋白和组织蛋白等)是香肠类肉制品中经常使用的主要食品添加剂,在不同类型的香肠中发挥着不同的品质改良作用,如保水、保油、乳化、增强凝胶性、改善粘度、提高分散性等。
迄今为止,国内外在肉制品品质改良方面进行了大量的研究,发现了许多能够提高肉制品品质的食品添加物,如大豆蛋白、磷酸盐和卡拉胶等。大豆分离蛋白以其良好的功能性得到了广泛的应用,而传统的醇法加工的大豆浓缩蛋白由于蛋白质过度变性,使得这种蛋白质几乎没有凝胶性、乳化性、粘弹性等功能,应用于香肠类肉制品时不能起到良好的保水、保油、增加产品粘弹性、改善产品口感等效果,这严重限制了其在食品工业中的应用。但是与分离蛋白相比,浓缩蛋白在成本上具有明显的优势,因此,选择适宜的原料配制功能性优良且成本低的浓缩蛋白是改善肉制品品质并降低生产成本的有效方法之一,目前国内外对于功能性浓缩蛋白的复配鲜见报道。
发明内容
针对上述现有技术的不足,本发明提供了一种功能性优良、成本低的复配大豆浓缩蛋白。
一种复配大豆浓缩蛋白,由以下成分组成:各组分份数按重量计:大豆分离蛋白46~56份、豆粉35~45份、蔗糖脂肪酸酯1.0~2.5份、分子蒸馏单甘酯0.5~1.5份、卡拉胶1.0~2.5份、魔芋粉0.5~1.5份、瓜尔豆胶2.0~6.0份、食品级氯化钾0.1~0.5份。分子蒸馏单甘酯、蔗糖脂肪酸酯可提高产品的乳化性,增强保水保油效果;卡拉胶、魔芋粉、瓜尔豆胶和食品级氯化钾可提高产品的粘弹性和保水保油性,提高出品率并改善口感。
本发明提供的复配大豆浓缩蛋白为乳白色或淡黄色粉末,适用于各种乳化类的香肠制品,能显著改善产品的品质,可以以干法、湿法、干湿混合法等各种方式在香肠中添加。与其他蛋白相比,醇法生产的浓缩蛋白几乎不具有功能性,保水、保油效果差,分离蛋白保水、保油效果一般为1∶4∶4,即一份蛋白可保4份水和4份油,而本发明所提供的复配大豆浓缩蛋白的保水保油效果最高可达1∶5∶7,即一份蛋白可保5份水和7份油,这大大提高了产品的出品率;具有极为优良的保水、保油效果;还可显著增强产品的硬度和弹性,改善产品的质构,并赋予产品细腻润滑的口感。
用本发明提供的复配大豆浓缩蛋白为原料制得的香肠类肉制品具有结构细腻有光泽、不粘肠衣、口感润滑、硬度大、弹性好、无渗水渗油现象,出品率高等优点。
具体实施方式
实施例1:称取46份大豆分离蛋白、43份豆粉、1.0份蔗糖脂肪酸酯、1.0份分子蒸馏单甘酯、2.5份卡拉胶、0.5份魔芋粉、5.5份瓜尔豆胶和0.5份食品级氯化钾,充分混合均匀制成复配大豆浓缩蛋白,按比例添加到香肠中,制得香肠。制得的产品硬度比使用分离蛋白制作的产品增加12.3%,弹性增加8.1%,出品率高14.3%,具有细腻有光泽、不粘肠衣、口感润滑、硬度大、弹性好、无渗水渗油现象,出品率高等优点。
实施例2:准确称取51份大豆分离蛋白、39份豆粉、1.5份蔗糖脂肪酸酯、0.7份分子蒸馏单甘酯、2.0份卡拉胶、1.2份魔芋粉、4.3份瓜尔豆胶和0.3份食品级氯化钾,充分混合均匀制成复配大豆浓缩蛋白,按比例添加到香肠中,制得香肠。制得的产品硬度比使用分离蛋白制作的产品增加10.6%,弹性增加7.7%,出品率高13.8%,具有细腻有光泽、不粘肠衣、口感润滑、硬度大、弹性好、无渗水渗油现象,出品率高等优点。
实施例3:准确称取56份大豆分离蛋白、36份豆粉、0.7份蔗糖脂肪酸酯、1.5份分子蒸馏单甘酯、0.8份卡拉胶、1.5份魔芋粉、3.4份瓜尔豆胶和0.1份食品级氯化钾,充分混合均匀制成浓缩蛋白,按比例添加到香肠中,制得香肠。制得的产品硬度比使用分离蛋白制作的产品增加11.9%,弹性增加7.0%,出品率高14.1%。具有细腻有光泽、不粘肠衣、口感润滑、硬度大、弹性好、无渗水渗油现象,出品率高等优点。
