Abstract

La presente invención provee una composición que se obtiene de una planta del género Theobroma y al uso de la composición como ingrediente en un producto de chocolate. Se provee un proceso para producir un material derivado de un sustrato a base de cacao que comprende las etapas de: tratar un sustrato a base de cacao con al menos una enzima, y tratar la pulpa de cacao con al menos una enzima, en donde el sustrato a base de cacao se selecciona de polvo de cacao y/o masa de cacao.
