Abstract

La presente invención proporciona una nueva composición que puede obtenerse de una planta del género Theobroma y el uso de esa composición como un ingrediente en un producto de chocolate. La presente invención proporciona un proceso para producir un material derivado de un sustrato a base de cacao que comprende las etapas de: i tratar un sustrato a base de cacao con al menos una enzima y ii. Tratar la pulpa de cacao con al menos una enzima, en donde el sustrato a base de cacao se selecciona de polvo de cacao y/o masa de cacao.
