Abstract
Настоящее изобретение относится к способу получения пищевого продукта, содержащего рожь, который включает стадии получения первичной пищевой смеси; добавление к указанной первичной пищевой смеси композиции, содержащей по меньшей мере один фермент семейства 10 (GH10) гликозидгидролаз; и обработку указанной первичной пищевой смеси с получением указанного пищевого продукта, содержащего рожь. В настоящем изобретении дополнительно предусмотрены ферменты GH10, композиции, содержащие указанные ферменты, и применение указанных ферментов и указанной композиции для получения пищевых продуктов.
