Abstract
Bei einem Verfahren zur Herstellung eines Nahrungsprodukts wird ein Volumen (10) von stichfestem Joghurt mit einem Fettgehalt von mindestens 5% bereitgestellt. Das Volumen (10) wird auf eine perforierte Oberfläche (110) aufgebracht, sodass das Volumen (10) zumindest mit einem Teil seines Gewichts auf der perforierten Oberfläche (110) aufliegt. Unterhalb der perforierten Oberfläche (110) ist ein Aufnahmeraum angeordnet. Das Volumen (10) wird dann auf der perforierten Oberfläche (110) belassen, bis eine teilweise Entwässerung des Volumens (10) mit einer Masseabnahme von mindestens 5% der ursprünglichen Masse des Volumens stattgefunden hat. Eine zur Durchführung des Verfahrens geeignete Vorrichtung umfasst ein Behältnis zur Aufnahme eines Volumens (10) von stichfestem Joghurt und ein Element (110) mit einer perforierten Oberfläche mit mehreren beabstandeten Öffnungen (111), wobei die perforierte Oberfläche einen Innenraum des Behältnisses begrenzt. Die mehreren beabstandeten Öffnungen (111) sind zumindest teilweise durch scharfe Kanten begrenzt, und eine maximale Dimension der Öffnungen (111) übersteigt nicht 15 mm. Das Verfahren und die Vorrichtung ermöglichen die Herstellung eines Nahrungsprodukts, welches gegenüber üblichem Joghurt mit entsprechendem Fettgehalt deutlich cremiger ist und einen deutlich weniger sauren Geschmack aufweist.A method of making a food product provides a volume (10) of firm yogurt with a fat content of at least 5%. The method and the device enable the production of a food product which is significantly creamier than conventional yoghurt with a corresponding fat content and has a significantly less acid taste.
