Der Grad der Krautpressung- ist natürlich von besonderer Bedeutung, und es ist Sache der praktischen Erfahrung, die zur Verwendung gelangenden Preß.einrichtungen so auszubilden, daß das nach der Pressung unter Salzzusatz in die Gärbottiche gefüllte Kraut in richtiger Weise zur Gärung gelangt.
