Walzenpressen, Schneckenpressen, Stempelpressen u. @dgl., worauf das so vorbereitete Kraut in die Gärbottiche gelangt, in welchen nach dem notwendigen Zusatz von Salz und der üblichen Beschwerung mit Gewichten die Saftbildung vor sich geht und der Gärvorgang eingeleitet wird. Der Grad der Krautpressung- ist natürlich von besonderer Bedeutung, und es ist Sache der praktischen Erfahrung, die zur Verwendung gelangenden Preß.einrichtungen so auszubilden, daß das nach der Pressung unter Salzzusatz in die Gärbottiche gefüllte Kraut in richtiger Weise zur Gärung gelangt.
