Abstract
"MéTODO PARA CONGELAMENTO DE PRODUTO ALIMENTìCIO DE CONSISTêNCIA FLUIDA E MOLHO CONGELADO". Método para a produção de partes discretas de produtos alimentícios congelados de consistência fluida, o qual compreende as etapas de borrifar água ou uma solução salina aquosa sobre uma superfície de resfriamento para formar uma camada de gelo fina e uniforme sobre a tal superfície; depositar um produto alimentício fluido sobre a camada de gelo; congelar o produto e opcionalmente dividir o produto congelado obtido em partes discretas por meio de uma fase de corte.
