Abstract

OCESSOS PARA PRODUçãO DO MESMO"<D>. São apresentados leites fermentados enriquecidos com ferro, que foram obtidos pela adição de uma composição de pirofosfato de ferro revestido de emulsificador ao leite acidificado sujeito à fermentação de ácido lático, e um processo para produzir os leites fermentados enriquecidos de ferro; e leites fermentados enriquecidos com ferro, que foram obtidos, além disos enriquecidos de ferro, de tal forma que a seguinte fórmula seja satisfeita: XY <243> 50 onde X: conteúdo (mg) de ferro em dita composição de pirofosfato de ferro revestido de emulsificador por 100 g de produto, e Y: contéudo (mg) de Vitamina C por 100 g do produto, e um processo para produzir os leites fermentados enriquecidos com ferro e vitamina C.
