Description
[1]水不溶性鉄塩と乳化剤を含有してなる鉄強化用組成物と、アントシアニン類と、クエン酸塩、リンゴ酸塩、コハク酸塩、酒石酸塩、グルコン酸塩、メタリン酸塩、ピロリン酸塩、及びポリリン酸塩からなる群より選ばれる1種又は2種以上のキレート剤とを含有する鉄強化飲食品;
[2]水不溶性鉄塩が乳化剤により被覆されていることを特徴とする、[1]記載の鉄強化飲食品;
[3]乳化剤が、ポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、レシチン、およびリゾレシチンからなる群より選ばれる1種又は2種以上であることを特徴とする[1]または[2]記載の鉄強化飲食品に関する。
ピロリン酸第二鉄90g、リゾレシチン(サンソフトA−1:太陽化学(株)製リゾレシチン含量33%、HLB18.0)13.5gをイオン交換水796.5gに混合し、ホモミキサーにて充分に攪拌、分散し、10%ピロリン酸第二鉄組成物懸濁液(生成物I)900gを得た。
ピロリン酸第二鉄90g、ポリグリセリン脂肪酸エステル(サンソフトA−14E:太陽化学(株)製、HLB13.0)27g、リゾレシチン(サンソフトA−1:太陽化学(株)製リゾレシチン含量33%、HLB18.0)13.5gをイオン交換水769.5gに混合し、ホモミキサーにて充分に攪拌、分散し、10%ピロリン酸第二鉄組成物懸濁液(生成物II)900gを得た。
ピロリン酸第二鉄90g、ショ糖脂肪酸エステル(サンソフトSE−16:太陽化学(株)製、HLB16.0)54g、リゾレシチン(サンソフトA−1:太陽化学(株)製リゾレシチン含量33%、HLB18.0)13.5gをイオン交換水742.5gに混合し、ホモミキサーにて充分に攪拌、分散し、10%ピロリン酸第二鉄組成物懸濁液(生成物III)900gを得た。
ピロリン酸第二鉄90gをイオン交換水810gに混合し、ホモミキサーにて充分に攪拌、分散し、10%ピロリン酸第二鉄組成物懸濁液(対照品IV)900gを得た。
塩化第二鉄90gをイオン交換水810gに混合し、ホモミキサーにて充分に攪拌、溶解し、10%塩化第二鉄組成物懸濁液(対照品V)900gを得た。
硫酸第一鉄90gをイオン交換水810gに混合し、ホモミキサーにて充分に攪拌、溶解し、10%硫酸第一鉄組成物懸濁液(対照品VI)900gを得た。
実施例1〜3で得られた生成物I〜IIIを、イチゴ組成物(フレッシュストロベリーNS200:太陽化学(株)製、イチゴ73%含有、その他少量の砂糖、クエン酸を含有、アントシアニン類20mg/100g含有)100gに、それぞれ最終の鉄含量を10mg/100gになるように添加して、鉄強化飲食品I〜IIIを調製した。同様に比較例1〜3で得られた対照品IV〜VIを、イチゴ組成物(フレッシュストロベリーNS200)100gに、それぞれ最終の鉄含量を10mg/100gになるように添加して鉄強化飲食品IV〜VIを調製した。
次に、上記の鉄組成物I〜VIをポリフェノール類含有飲食品と混合する際に、キレート剤をさらに添加してその効果を試験した。
試験例2の試験におけるキレート剤をクエン酸ナトリウムに変えて同様の試験を行い、評価した。黒色変化度の結果を表3に示す。
次に、比較例1〜3で得られた対照品IV〜VIに対して、キレート剤(メタリン酸ナトリウム)の量を10倍量となる3000mgに増加する以外は試験例2と同様にして、鉄強化飲食品XIX〜XXIを調製した。鉄強化飲食品XIX〜XXIに対して試験例2と同様の試験を行い評価した。黒色変化度の結果を表4に示す。
試験例2で得られた鉄強化飲食品VII〜IX及び試験例4で得られた鉄強化飲食品XIX〜XXIについてそれぞれ調製直後のものの官能試験を行なった。10人のパネラーにより、鉄強化飲食品の風味評価を、風味が良いを1、風味が悪いを10として、10段階評価を行った。
実施例2で得られた10%ピロリン酸第二鉄組成物懸濁液(生成物II)を、スプレードライヤーで粉末化を行い、70%ピロリン酸第二鉄強化用組成物粉末(生成物VII)を得た。
ぶどう果汁飲料1Lに実施例1で得られた生成物I(鉄として約3.0重量%含有)1.0gを添加し、加熱殺菌して、鉄強化ぶどう果汁飲料を得た(鉄量3.0mg/100ml、ポリフェノール類5mg/100ml含有)。
いちご果実入りドリンクヨーグルト1kgに、実施例1で得られた生成物I(鉄として約3.0重量%含有)1.0gを添加し、加熱殺菌して、鉄強化いちご果実入りドリンクヨーグルトを得た(鉄量3.0mg/100g、ポリフェノール類5mg/100g含有)。
いちごジャム1kgに、実施例1で得られた生成物I(鉄として約3.0重量%含有)1.0gを添加し、さらにメタリン酸ナトリウム600mgを添加、混合して、加熱殺菌して、鉄強化イチゴジャムを得た(鉄量3.0mg/100g、ポリフェノール類10mg/100g含有)。
ココア飲料1Lに、実施例1で得られた生成物I(鉄として約3.0重量%含有)1.0gを添加し、さらにクエン酸ナトリウム600mgを添加、混合して、加熱殺菌して、鉄強化ココア飲料を得た(鉄量3.0mg/100ml、ポリフェノール類40mg/100ml含有)。
乳糖10gに、緑茶抽出ポリフェノール0.5g、さらに実施例4で得られた生成物VII(鉄として約21.0重量%含有)0.1gを添加して、打錠を行い、鉄強化タブレットを得た(鉄量2.1mg/1g、ポリフェノール類50mg/1g含有)。
Claims (3)
- 水不溶性鉄塩と乳化剤を含有してなる鉄強化用組成物と、アントシアニン類と、クエン酸塩、リンゴ酸塩、コハク酸塩、酒石酸塩、グルコン酸塩、メタリン酸塩、ピロリン酸塩、及びポリリン酸塩からなる群より選ばれる1種又は2種以上のキレート剤とを含有する鉄強化飲食品。
- 水不溶性鉄塩が乳化剤により被覆されていることを特徴とする、請求項1記載の鉄強化飲食品。
- 乳化剤が、ポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、レシチン、およびリゾレシチンからなる群より選ばれる1種又は2種以上であることを特徴とする請求項1または2記載の鉄強化飲食品。
