Abstract

a presente invenção se refere a um método melhorado para desintoxicar proteínas de glúten provenientes de grãos de cereais, o que torna possível obter farinhas desintoxicadas com uma redução da antigenicidade dos epítopos tóxicos das proteínas de glúten até uma faixa entre 0 e 20 ppm e de tal modo que as mesmas possam ser vantajosamente usadas para a preparação de produtos alimentares (por exemplo, produtos de confeitaria, produtos de massa ou lácteos) que têm um manifesto preventivo e/ou efeito terapêutico para disbiose intestinal causada por agentes infecciosos bacterianos ou virais ou por patologias com um forte componente inflamatório ou autoimune, tais como doença celíaca, colite ulcerosa, doença de crohn e síndrome do intestino irritável.
