Abstract

<p>La presente invención se relaciona con un método mejorado para destoxificar proteínas del gluten provenientes de granos de cereal lo cual hace posible obtener harinas destoxificadas con una reducción de Ia antigenicidad de los epítopes tóxicos de las proteínas del gluten en hasta una variación entre 0 y 20 ppm y de tal forma que se puedan utilizar ventajosamente para Ia preparación de productos alimenticios (por ejemplo, productos de pastelería, pasta o productos lácteos) que tengan un efecto preventivo y/o terapéutico manifiesto para Ia disbiosis intestinal provocada por agentes infecciosos bacterianos o virales o por patologías con un fuerte componente inflamatorio o autoinmune tal como una enfermedad celiaca, colitis ulcerativa, enfermedad de Crohn y el síndrome del intestino irritable.<br />  </p>
