Abstract
redução de açúcar intrínseco de sucos e produtos prontos para beber. a presente invenção refere-se a um método de redução do teor de açúcar intrínseco em um produto alimentício tal como um suco ou um produto baseado em açúcar pronto para beber, pelo contato do produto alimentício com quantidades suficientes de pelo menos uma transglicosidase sob condições suficientes para converter enzimaticamente açúcares intrínsecos no produto alimentício a carboidratos não digeríveis e oligossacarídeos não digeríveis, tal como fruto-oligossacarídeos e glico-oligossacarídeos para formar dessa forma um produto mais nutritivo. a invenção também se refere a produtos alimentícios nutritivos produzidos pelos métodos da invenção.
