Abstract
La invención se refiere a un método para reducir el contenido de azúcar intrínseco en un producto alimenticio tal como un jugo o un producto a base de azúcar listo para beber, al poner en contacto el producto alimenticio con cantidades suficientes de al menos una transglicosidasa bajo condiciones suficientes para convertir enzimáticamente azúcares intrínsecos en el producto alimenticio en carbohidratos no digeribles y oligosacáridos no digeribles, tales como fructo-oligosacáridos y gluco-oligosacáridos para de esta manera formar un producto más nutricional. La invención se refiere también a productos alimenticios nutricionales producidos mediante los métodos de la invención.
