Abstract

Un método de fabricación de un producto alimenticio que comprende impregnar total o parcialmente un sustrato con una composición estabilizadora donde el sustrato comprende piezas de carne, ave, pescado, vegetales, fruta o alimentos lácteos; donde la composición estabilizadora comprende los siguientes ingredientes: 5% en peso a 30% en peso de una o más gomas seleccionadas del grupo que consiste en una o más gomas carrageninas y opcionalmente una o más de: goma garrofin; goma guar; goma xantana, goma gellan, goma arábiga y agar agar, calculada por peso de materia seca; sal seleccionada de cloruro de sodio, cloruro de potasio y combinaciones de las mismas en una concentración de 0% en peso a 50% en peso, calculada por peso de materia seca; uno o más componentes de poliglucosa seleccionados del grupo que consiste en maltodextrina; polidextrosa; almidón y combinaciones de los mismos en una concentración de 20% en peso a 60% en peso, calculada por peso de materia seca; un componente de fosfato en una concentración de 0% en peso a 7,4% en peso, calculada por peso de materia seca; e ingredientes comestibles adicionales opcionales en una concentración de 0% en peso a 40% en peso, calculada por peso de materia seca; donde los rangos de concentración dados suman un total de 100% en peso.
