Abstract

El concentrado salado comprende: a) al menos 30% en peso, en peso del concentrado, de una fase de aceite que comprende aceite líquido; b) 3 a 30% en peso, en peso del concentrado, de una sal comestible; c) 1 a 50% en peso, en peso del concentrado, de ingredientes que brindan un sabor salado; d) hasta 10% en peso, en peso del concentrado, de agua; y e) partículas de almidón gelatinizadas expandidas; en donde las partículas de almidón gelatinizadas expandidas están dispersadas en la fase de aceite en una concentración de 0,5 a 35% en peso, en peso del peso combinado del aceite líquido y las partículas de almidón gelatinizadas.
