Abstract

La presente proporciona un concentrado salado caracterizado porque comprende: a) por lo menos un 30% en peso, en peso del concentrado, de una fase oleosa que comprende aceite líquido; b) 3 - 30% en peso, en peso del concentrado, de sal comestible seleccionada de cloruro de sodio, cloruro de potasio y combinaciones de los anteriores; c) 1 - 50% en peso, en peso del concentrado, de ingredientes que brindan gusto salado seleccionados de glutamato, 5’-ribonucleótidos, sacarosa, glucosa, fructosa, ácido láctico, ácido cítrico y combinaciones de los anteriores; d) hasta 10% en peso, en peso del concentrado, de agua; y e) material de la pared celular no desfibrilado anhidro en partículas de tejido vegetal seleccionado entre tejido vegetal parenquimal, tejido del tallo de plantas monocotiledóneas y combinaciones de los anteriores, donde dicho material de la pared celular no desfibrilado anhidro en partículas tiene un tamaño de partículas de entre 25 mm y 500 mm; donde el material de la pared celular no desfibrilado anhidro en partículas está disperso en la fase oleosa en una concentración de 0,05 a 15% en peso, en peso del aceite líquido. El material de la pared celular no desfibrilado anhidro en partículas del tejido vegetal parenquimal y/o del tejido del tallo de plantas monocotiledoneas es capaz de formar una matriz que retiene aceite dentro del aceite líquido y por lo tanto minimizar la exudación de aceite.
