Abstract

Un aspecto de la presente se refiere a un procedimiento para preparar un producto alimenticio que comprende 1 a 100% en peso de una emulsión de aceite en agua termoestable, dicho procedimiento comprende calentar el producto alimenticio a una temperatura superior a 90ºC durante por lo menos 5 minutos, en donde la emulsión termoestable contiene: 3 a 85% en peso de aceite; 12 a 92% en peso de agua; 0,1 a 1,0% en peso de lecitina de yema de huevo; 0,1 a 5,0% en peso de fibra celulósica insoluble en agua; y 0 a 20% en peso de uno o más de otros ingredientes comestibles. Otro aspecto de la presente se refiere a una emulsión de aceite en agua esterilizada o pasteurizada, dicha emulsión de aceite en agua tiene un pH de 3,0 a 4,5 y comprende: 3 a 85% en peso de aceite; 12 a 92% en peso de agua; 0,1 a 1,0% en peso de lecitina de yema de huevo; 0,1 a 5,0% en peso de fibra celulósica insoluble en agua; 0 a 20% en peso de uno o más de otros ingredientes comestibles; en donde la emulsión no contiene un espesante polisacárido soluble en agua.
