Abstract

La presente invención proporciona un método para preparar una suspensión de fibra en agua que contiene fibras insolubles, en donde el método comprende los pasos de (al) preparar la suspensión de fibra en agua que contiene las fibras insolubles, (a2) congelar la suspensión; y (a3) moler la suspensión congelada. La presente invención también proporciona un método para preparar una emulsión comestible que comprende aceite, agua y fibras insolubles, el método comprende los pasos de (a) elevar la temperatura de la suspensión de fibra en agua obtenida en el paso anterior (a3) hasta que la mezcla esté en el estado líquido; (b) agregar cualquier ingrediente adicional de la emulsión comestible; y (c) homogeneizar la mezcla así obtenida. Se encontró que aplicando este método una emulsión comestible con poco aceite puede ser preparada, la emulsión tiene contenido de fibra insoluble reducido pero textura y propiedades favorables.
