Abstract

La presente se refiere a un proceso para la preparacion de una bebida ácida con contenido de proteína de soja que muestra buena estabilidad física después de la conservacion térmica. El proceso comprende el paso que consiste en proveer una composicion acuosa que tiene un pH que oscila entre 3,0 y 5,5, que comprende desde el 0,2 hasta el 5% en peso de proteína de soja y, al menos, el 0,1% en peso de polisacárido de soja soluble en agua como estabilizador, en donde la relacion en peso de la proteína de soja con respecto al polisacárido de soja soluble en agua, oscila entre 7:1 y 1:2, seguido por el calentamiento de la composicion acuosa a una temperatura superior a 100°C durante, al menos, 4 segundos. Además de esto, se refiere a una bebida obtenida mediante este proceso.
