Abstract

【課題】 アルギニンとタンパク質を含む組成物、特に飲料において、苦みや加熱処理による焦げを抑えながら、より多くのアルギニンを配合可能にした組成物を提供する。 【解決手段】 本発明の組成物は、アルギニンとナトリウムカゼイネートやカリウムカゼイネートなどのミセル非形成性タンパク質を含む加熱処理されたpHが6.0~7.3である流動性栄養組成物であって、リン酸カルシウムなどの不溶性カルシウム化合物の配合により、焦げが抑制され、かつ、風味が良好である流動性栄養組成物である。
