Abstract
Se describen métodos para fortificar una bebida con uno o más fitoquímicos de cítricos a la vez que se disimula el gusto amargo de estos compuestos en la bebida. Estos métodos comprenden microencapsular los fitoquímicos de cítricos y agregar los fitoquímicos de cítricos microencapsulados a las bebidas. También se describen bebidas fortificadas con uno o más fitoquímicos de cítricos microencapsulados, aunque los mismos no tienen las características del gusto amargo de estos compuestos. Reivindicacion 1: Una bebida que comprende: jugo cítrico; al menos una composicion de fitoquímico de cítrico microencapsulado que comprende un fitoquímico de cítrico el cual contribuye al menos con el 60% en peso de la cantidad total de fitoquímico de cítrico en la composicion del fitoquímico de cítrico microencapsulado; hesperidina no encapsulada en el rango que oscila entre 0 y 90 mg por porcion de 8 onzas de la bebida; naringina no encapsulada en el rango que oscila entre 0 y 150 mg por porcion de 8 onzas de la bebida y limonina no encapsulada en el rango que escila entre 0 y 0,9 mg por porcion de 8 onzas de la bebida.
