Abstract

Se describen métodos para fortificar una bebida con uno o más fitoquímicos de cítricos a la vez que se disimula el gusto amargo de estos compuestos en la bebida. Estos métodos comprenden microencapsular los fitoquímicos de cítricos y agregar los fitoquímicos de cítricos microencapsulados a las bebidas. Reivindicacion 1: Una bebida que comprende: jugo cítrico; al menos un fitoquímico de cítrico microencapsulado que comprende un limonoide de cítrico; hesperidina no encapsulada comprendida en el rango que fluctua desde 0 hasta 90 mg por porcion de 8 onzas de la bebida; naringina no encapsulada dentro del, rango que varía desde 0 hasta 150 mg por porcion de 8 onzas de la bebida y limonina no encapsulada en el rango que oscila desde 0 hasta 0,9 mg por porcion de 8 onzas de la bebida.
