Abstract

Un método para la preparacion de un jarabe e azucares con alto contenido de fluctuosa, que se pone en práctica con al menos una fruta que contiene del sorbitol, particularmente manzanas, peras, ciruelas pasas, duraznos, mandarinas, albaricoques, uvas de la cual se extrae un primer jugo. Se trata este primer jugo con el fin de obtener un jugo azucarado clarificado y desmineralizado de color inferior a 45 ICUMSA, y que tiene un contenido de ceniza conductimétrica inferior a 0,4%. Luego se trata dicho jugo azucarado clarificado y desmineralizado con el fin de hidrolizar la sacarosa en fructosa y en glucosa. Se realiza una isomerizacion de la glucosa en fructosa. Se elimina el sorbitol naturalmente presente en la materia prima.
