Abstract

Un aspecto del presente concierne a una composicion que contiene: (A) al menos 10 micro g preferiblemente 50 micro g de pirroles particulares sustituidos por kg de material seco; y (B) al menos 100 mg por kg de material seco de una piranona seleccionada del grupo que consiste de maltol, 2,3-dihidro-3,5-dihidroxi-6-metilo-4H-piran-4-ona y combinaciones de estos; cuya composicion, cuando se disuelve en agua en un contenido de solidos secos de 0,1 wt%, exhibe: i. Una absorcion de 280 nm (A280) que excede 0,01, preferiblemente excede 0,05; y ii. Un coeficiente de absorcion A280/560 de al menos 100, preferiblemente de al menos 200. La presente composicion se puede utilizar ventajosamente como un aditivo en bebidas y productos comestibles para prevenir o reducir los cambios de sabor inducidos por la luz. El invento también abarca un proceso para la manufactura de la composicion mencionada anteriormente.
