Abstract

Aparato para el cortado o tajado electrónico de alto volumen y a elevada velocidad, que comprende una cuchilla que tiene bordes cortantes primera y segunda, suspendida de un cabezal que tiene un movimiento alternativo, en voladizo sobre una transportadora que soporta y hace avanzar el producto alimenticio, incluyendo la cuchilla bordes cortantes primero y segundo en respectivos lados opuestos de la misma a efectos de cortar el producto alimenticio transversalmente. Es preferible que el cabezal tenga una operación automatizada controlada por un controlador electrónico que le haga describir un movimiento alternativo con una velocidad y frecuencia seleccionadas dentro de intervalos predeterminados sobre el producto alimenticio que avanza sobre la transportadora. Es preferible que la cuchilla oscile ultrasónicamente, y es preferible que lo haga con una frecuencia de aproximadamente 20.000 Hz. Los bordes cortantes primero y segundo son preferentemente convergentes hacia abajo y definen un ángulo incluido mayor de aproximadamente 60 grados e inferior a 90 grados. En una forma de realización particular, el ángulo interior es de 70 grados. En otra forma de realización, el ángulo es de aproximadamente 60 grados. La cuchilla puede tener un movimiento lineal de traslación de 63 a 89 cm. (25 a 35 pulgadas) por segundo, y más específicamente puede tener una velocidad transversal de aproximadamente 72 cm. (30 pulgadas) por segundo. El aparato puede utilizarse en operaciones comerciales de producción de alimentos de alto volumen y elevada velocidad, para el cortado automático de productos de quesería y otros productos alimenticios a partir de grandes trozos, rebanadas gruesas y similares, en forma de productos más pequenos, y también puede utilizarse en otras aplicaciones.
