Abstract

In a particular embodiment, the interior angle is 70 degrees. In another embodiment, the angle is approximately 60 degrees. The blade can have a linear translation movement of 63 to 89 cm. (25 to 35 inches) per second, and more specifically it can have a transverse velocity of approximately 72 cm. (30 inches) per second. The apparatus can be used in commercial operations of high-volume and high-speed food production, for automatic cutting of cheese products and other food products from large pieces, thick slices and the like, in the form of smaller products, and also Can be used in other applications.
