Abstract
Postupak za tretiranje isitnjenog zrna kakaoa ili likvora u kome se isitnjeno zrno kakaoa ili likvor dobijeno iz kakao zrna fermentisanih 1 do 15 dana, meša sa bar jednom tehničkom proteazom u vodenoj sredini na pH 3-8 i smeša se inkubira tokom vremena i na temperaturi dovoljnim za dobijanje bar 10 ...mola hidrofobnih amino kiselina po gramu suve materije i bar 1,4 puta više proizvoda hidrolize u poredjenju sa onima početno prisutnim u kakao zrnima. Preparat obuhvata isitnjeno zrno kakaoa ili likvor dobijene iz kakao zrna fermentisanih 1 do 15 dana i tehničku proteazu i/ili tehničku invertazu. Kakao dobijen pečenjem preparata prema pronalasku.
